2 pounds bulk Italian sausage
2 cups water
2 cups chicken broth
1/2 teaspoon salt
1-1/4 cups quick-cooking grits
1 pound sharp cheddar cheese, shredded
1 cup 2% milk
1-1/2 teaspoons garlic powder
1 teaspoon rubbed sage
6 large eggs, beaten
Paprika, optional

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain., In a large saucepan, bring the water, broth and salt to a boil. Slowly stir in grits. Reduce heat; cook and stir for 5-7 minutes or until thickened. Remove from the heat. Add the cheese, milk, garlic powder and sage, stirring until cheese is melted. Stir in sausage and eggs. Transfer to a greased 13x9-in. baking dish; sprinkle with paprika if desired., Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before serving.

If you're from the South you will definitely love this recipe, which includes grits, eggs, sausage, and cheese. When I cook it, I place it in the slow cooker to stay warm. There is nothing worse than cold grits.

6 cups water
2 cups uncooked grits
½ cup butter, divided
3 cups shredded Cheddar cheese, divided
1 pound ground pork sausage
12 eggs
½ cup milk
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking dish.
  • Bring water to a boil in a large saucepan, and stir in grits. Reduce heat, cover, and simmer about 5 minutes, until liquid has been absorbed. Mix in 1/2 the butter and 2 cups cheese until melted.
  • In a skillet over medium-high heat, cook the sausage until evenly browned. Drain, and mix into the grits. Beat together the eggs and milk in a bowl, and pour into the skillet. Lightly scramble, then mix into the grits.
  • Pour the grits mixture into the prepared baking dish. Dot with remaining butter, and top with remaining cheese. Season with salt and pepper.
  • Bake 30 minutes in the preheated oven, until lightly browned.

1 pound bulk pork sausage, cooked and crumbled
3 large eggs

  • Mix grits, cheese and sausage. Beat eggs and milk; stir into grits. Add butter and garlic powder. Transfer to a greased 13x9-in. baking dish. 4 eggs, beaten
1 (6 ounce) package cornbread mix
1/2 cup butter, melted
1/2 lb cheese, grated
1 cup grits, cooked and crumbled
1 1/2 cups milk, heated
3/4 teaspoon salt

Steps:

  • grease a 9x13 baking dish. layer sausage and 1/2 of cheese in casserole dish. mix eggs and next 5 ingredients together. pour over sausage and top with remaining cheese.
  • refridgerate overnight.
  • bring to room temperature.
  • bake at 350 for 45-60 minutes.
  • check for doneness with toothpick inserted to come out clean.

I love this recipe because it is really easy to fix the night before when you are having company the next morning or maybe taking it to work or something. This recipe came from the Telephone Pioneers Cookbook "Calling all Cooks."

6 slices bread, dried or toasted and cubed
1 lb sausage
1 1/2 cups shredded sharp cheddar cheese
6 eggs
2 cups milk
1 teaspoon dry mustard
salt and pepper

Steps:

  • Sprinkle bread cubes into greased 7X12 inch baking dish.
  • Cook sausage and sprinkle along with cheese over the bread cubes.
  • Beat eggs in mixer bowl.
  • Add milk, dry mustard, salt and pepper; mix well.
