2 tablespoons olive oil
1 leek, white and green parts thinly sliced (about 1 cup)
10 ounces sliced mushrooms (about 3 1/2 cups)
2 garlic cloves, minced (about 2 tsp)
1 teaspoon chopped fresh thyme
1 1/2 cups wild rice
1/4 cup madeira wine
1 tablespoon low sodium soy sauce
3 cups low sodium vegetable broth
1/2 cup frozen peas
1/4 cup pine nuts

Steps:

  • Preheat oven to 375 degrees.
  • Heat oil in a large dutch oven over medium heat. Add leeks and cook for 5 minutes or unil soft, stirring often.
  • Raise heat to medium, add mushrooms and cook for 7 minutes, or until liquid has evaporated and mushrooms begin to brown.
  • Srir in garlic and thyme, and cook 1 minute or until fragrant.
  • Stir in rice. Add wine and soy sauce, simmer 2 minutes or until almost all of the liquid has been absorbed. Add broth and 1 cup of water and return to a simmer.
  • Place lid on Dutch oven and bake 45 minutes. Remove lid, and bake 30 minutes more or until most of the liquid has been absorbed.
  • Remove from oven, cover and let stand 5 minutes.
  • Fold in peas and pine nuts. Season with salt and pepper and serve.

2 Tbsp unsalted butter
1/4 c sliced almonds
1 small yellow onion, peeled and chopped
1 clove garlic, minced
2/3 c wild rice, uncooked
1/3 c pearl barley, uncooked
2 c chicken or beef broth
1/2 c dry white wine
1/4 tsp dried basil
1/4 tsp dried oregano
1/4 tsp salt
1/4 c fresh chopped parsley
pepper, to taste

Steps:

  • 1. Preheat oven to 350F. Coat a 2 1/2 quart casserole with a lid with nonstick cooking spray.
  • 2. Melt butter in a medium skillet over medium heat. Add almonds and stir until lightly browned, about 2 minutes. Add onion and garlic and sauté until tender, about 5 minutes.
  • 3. Stir in wild rice and barley. Add stock, wine and seasonings. Stir and bring to a boil.
  • 4. Transfer to prepared casserole. Cover and bake until rice and barley are tender and liquid is absorbed, about 1 hour and 15 minutes.
  • 5. Stir and serve.

1cup1 cup raw wild rice
3cups3 cups water

Steps:

  • Preheat oven to 350°F. Wash the rice thoroughly. Pick through it and remove any foreign objects and discolored grains. Put the rice in a casserole dish and add the 3 cups of water. Cover the casserole dish and place on the center rack in the oven. Bake for one hour. Check the rice and add water if the rice is nearly dry but still uncooked. Fluff with a fork. Replace the cover and bake for another 1/2 hour. Check the rice. It should be tender but not mushy. The grains should be splitting open but not so soft that they are beginning to disintegrate. Remove the dish from the oven. Drain if necessary and fluff the wild rice with a fork before serving. Wild rice is not uniform from one bag to the next. Water amounts and cooking time will vary, so watch your wild rice carefully as it bakes.

2 cups UNCLE BEN'S® Natural Whole Grain Brown Rice
1 cup diced onion
¼ teaspoon black pepper
¼ teaspoon turmeric
4 cups vegetable broth
1 small eggplant
1 cup plain yogurt
1 large tomato, chopped
1 (15 ounce) can navy beans
1 (15 ounce) can garbanzo beans
1 tablespoon olive oil
2 teaspoons minced garlic
½ teaspoon salt

Steps:

  • In a saucepan, saute the onion in the oil until it has lightly browned. Add the garlic, salt, pepper and turmeric. Add rice and broth, bring to a boil, reduce to a simmer, cover and cook for 30 minutes.
  • While the rice is cooking, peel and cut the eggplant into 1/4-inch slices. Sprinkle with salt and set aside for about 10 minutes. Rinse and pat dry.
  • Lightly salt the eggplant and spray with oil. Brown both sides in a hot skillet, set aside.
  • Once the rice is cooked, mix in yogurt and transfer mixture to a large shallow casserole dish. Spread the navy and garbanzo beans over the rice and then top with layer of eggplant and chopped tomatoes.
  • Bake uncovered in a preheated 350 F oven for about 20 minutes.

This is a recipe I have made for ages...I got it out of a recipe book from the old Hudsons Department Store Recipe Book called "With Warmest Regards". A wonderful recipe to serve a lot of people for a special occasion.

1 (10 3/4 ounce) can condensed French onion soup
1 (14 ounce) can beef broth
1 (7 ounce) can mushroom stems and pieces, drained
1 (6 ounce) can diced water chestnuts
1 cup brown rice
1/2 cup wild rice, rinsed
garlic salt

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. In a large mixing bowl, combine all ingredients.
  • Transfer mixture to a 2 Quart casserole dish.
  • Cover and bake for about 1 hour, until all liquid has been absorbed and rice is tender. Very easty to double as I do it all the time.

2 cups wild rice
6 cups water

Steps:

  • You want to fix this the night before you need it.
  • Preheat oven to 450 degrees.
  • Using a heavy kettle (with a lid), bring the water to a boil.
  • When the water comes to a rolling boil, turn the heat off and add the rice.
  • Stir so the wild rice is evenly distributed.
  • Put the lid on the kettle and put into the oven.
  • TURN OFF OVEN.
  • Do not open the oven until morning.
  • If there is any liquid left in pan, drain off.
  • Then add to your salads, soups or casseroles.

2 1/2 cups organic basmati rice (a combination of brown and white is nice)
A handful organic oat groats
A handful organic wild rice
Sea salt
A dash nigella seeds (can be skipped if unavailable)
6 cups water

Steps:

  • Heat a well-seasoned cast-iron Dutch oven over a good campfire or stove burner (medium high heat, if controllable). Toast grains, salt, and nigella seeds until grains begin to brown. Add water, stir, and turn heat down to low (or move to lower part of fire). Place lid on and don't even peek for about 20 minutes. Grain is done when all water is absorbed and fluffs well with a fork.
