This roasted butternut squash is a simple and comforting side dish made extra special with the addition of a bright lime vinaigrette and a sprinkle of crunchy nuts for great texture.

3 tbsp extra virgin olive oil
1 Butternut squash (2 lbs.), (peeled, halved, and seeded)
1/4 tsp Kosher salt, ((or fine sea salt))
2 tbsp fresh lime juice
1/2 tsp finely grated lime zest
1 garlic clove, (minced)
Crushed red pepper flakes, (a pinch)
1/4 cup chopped toasted hazelnuts, ((or walnuts or pecans) )
3 oil-packed anchovy fillets, (minced)
2 scallions (whites and green parts), (thinly sliced )

Steps:

  • Heat the oven to 425 degrees F.
  • Oil a rimmed baking sheet and arrange the squash slices on it in a single layer. (If it doesn't all fit, oil another sheet and use that as well.) Brush the top of the squash slices with more extra virgin olive oil and sprinkle them with the salt and black pepper to taste.
  • Roast in the heated oven until the squash is golden brown on the top, 20 minutes. Then flip the slices over and roast until they are very tender, about 10 minutes longer. (I ended up putting mine under the broiler for a couple more minutes for a little more color).
  • Meanwhile, make the vinaigrette. In a small bowl, combine the lime juice, zest, garlic, red pepper flakes, and a pinch of salt. Let the ingredients sit for a minute, then whisk in the anchovies and 3 tablespoons extra virgin olive oil until emulsified. Taste and add more salt and/or lime juice as needed.
  • Serve the squash covered with the vinaigrette and sprinkled with the hazelnuts and scallions.

We'll show you the best way achieve perfectly seasoned, tender and golden nuggets of this naturally sweet veggie. All you need are a hot oven, olive oil, salt and pepper. Use visual cues for doneness, since the cooking time depends on the size of your dice.

One large butternut squash (about 3 pounds)
1/4 cup olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Trim both ends off the squash and remove the skin with a vegetable peeler. Cut the squash in half lengthwise with a large, sharp knife. Scoop out the seeds with a spoon. Cut the squash halves crosswise into 1-inch thick half-moons, then dice into 1-inch pieces. (A 3-pound squash will yield about 7 cups.)
  • Place the diced squash, olive oil, 1 teaspoon salt and 1/2 teaspoon black pepper in a large bowl. Toss to coat evenly. Spread the squash in a single layer on a rimmed baking sheet. Roast for 35 to 40 minutes, until the squash is lightly browned and tender, turning once with a metal spatula.

2 tablespoons brown sugar
1 teaspoon Himalayan sea salt
½ teaspoon ground cinnamon
1 pinch cayenne pepper
¼ cup coarsely chopped candied pecans

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a large baking sheet with aluminum foil.

3 lbs butternut squash, peeled and cut into 3/4-inch dice
3 medium onions, coarsely chopped
1 tablespoon finely chopped thyme
1/2 teaspoon freshly grated nutmeg
salt & freshly ground black pepper
1 cup dry marsala
3 tablespoons finely chopped flat leaf parsley

Steps:

  • Preheat the oven to 425°. Spread the oil in a large metal baking dish.
  • Add the squash, onions, thyme, nutmeg and a generous pinch each of salt and pepper and toss to coat.
  • Roast for 20 to 25 minutes, or until the squash and onions are tender and lightly browned. Transfer the vegetables to a serving bowl and set the pan over high heat.
