2 large tart apples, peeled and sliced
3 tablespoons sugar
1/4 to 1/2 teaspoon ground cinnamon
1/4 teaspoon vanilla extract

Steps:

  • Place apples in a greased 1-qt. baking dish. In a small bowl, combine the sugar, cinnamon and vanilla. Sprinkle over apples. , Cover and bake at 350° for 40-45 minutes or until apples are tender. Uncover and mash with a fork. Serve warm.

Zest and juice of 2 large oranges
Zest and juice of 1 lemon
3 pounds Granny Smith apples (6 to 8 apples)
3 pounds sweet red apples, such as Macoun (6 to 8 apples)
1/2 cup light brown sugar, lightly packed
4 tablespoons (1/2 stick) unsalted butter
2 teaspoons ground cinnamon
12 ounces fresh raspberries (2 packages)
Vanilla ice cream, such as Haagen-Dazs, for serving
Orange zest, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the zest and juice of the oranges and lemon in a large (11-inch) ovenproof pot or Dutch oven, such as Le Creuset. Peel, quarter, and core the apples and add them to the pot, tossing them with the juices as you go.
  • Add the brown sugar, butter, cinnamon, and raspberries, cover, and bake for 1 to 1 1/4 hours, until the apples are very soft. Stir vigorously with a wire whisk. The applesauce will be smooth but still have a lot of texture. Serve warm with a scoop of ice cream and a dusting of orange zest.

2 large navel oranges, zested and juiced
1 lemon, zested and juiced
3 pounds Granny Smith apples (about 6 to 8 apples)
3 pounds sweet red apples, such as Macoun, McIntosh, or Winesap (about 6 to 8 apples)
1/2 cup light brown sugar, packed
4 tablespoons unsalted butter
2 teaspoons ground cinnamon
1/2 teaspoon ground allspice

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the zest and juice of the oranges and lemon in a large bowl. Peel, quarter, and core the apples (reserving the peel of 2 of the red apples) and toss them in the juice. Pour the apples, reserved apple peel, and juice into a nonreactive Dutch oven or enameled iron pot. Add the brown sugar, butter, cinnamon, and allspice and cover the pot. Bake for 1 1/2 hours, or until all the apples are soft. Remove and discard the red apple peel. Mix with a whisk until smooth, and serve warm or at room temperature.

1/4 cup brandy or cider
1/2 teaspoon ground cinnamon
Pinch of ground cloves
1 teaspoon freshly squeezed lemon juice, plus zest of 1 lemon
1/4 cup plus 2 tablespoons packed dark brown sugar
2 tablespoons unsalted butter
3 Granny Smith apples, peeled, cored, and cut into eighths
3 McIntosh apples, peeled, cored, and cut into eighths
Pinch of salt

Steps:

  • Heat oven to 375 degrees. In a 12-by-14-inch roasting pan, or an 11-by-17-inch baking pan, combine the brandy, cinnamon, cloves, lemon juice and zest, brown sugar, and butter. Add all the apples, and toss.
  • Roast until the apples are very soft and golden brown, about 30 minutes. Transfer apples to the bowl of a food processor; pulse until smooth. Stir in the salt, and serve warm.

Pinch of coarse salt

3 golden delicious apples, peeled, cored and chopped into chunks

2 cinnamon sticks, whole

  • Preheat oven to 400°F.
  • Spray baking dish w/ non-stick spray.

¼ cup chopped onion
1 apple - peeled, cored, and sliced
2 (1/2-inch thick) pork chops
¾ cup applesauce
2 tablespoons brown sugar
½ teaspoon ground mustard
⅛ teaspoon ground cinnamon
½ teaspoon salt
ground black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt butter in a large skillet over medium heat; cook and stir onion and apple slices in the melted butter until tender, about 5 minutes. Transfer onion and apple to a bowl.
  • Place pork chops in the same skillet; cook over medium heat until pork chops are browned on both sides, about 5 minutes per side.
  • Mix applesauce, brown sugar, mustard, and cinnamon into onion and apple mixture.
  • Place pork chops in a 9x9-inch baking dish; season with salt and black pepper. Spoon applesauce mixture over pork chops; cover dish.

1 boneless pork loin roast (3 pounds)
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons vegetable oil
1 cup applesauce
3 tablespoons Dijon mustard
1 tablespoon honey
3 fresh rosemary sprigs

Steps:

  • Sprinkle roast with salt and pepper. In a large skillet, brown roast on all sides in oil. Place on a rack in a shallow roasting pan. Combine the applesauce, mustard and honey; spread over roast. Top with rosemary. , Bake, uncovered, at 350° for 1 to 1-1/4 hours or until a thermometer reads 145°. Let stand for 10 minutes before slicing.

1/4 cup water
juice of half a lemon
2 tablespoons white sugar
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt

Steps:

  • Preheat oven to 375°F Spread butter all over the interior of a 9x13 inch baking dish.
  • Peel and core apples. Cut into chunks.
  • Add the apple chunks to the baking dish, along with the remaining ingredients. Toss to combine.
  • Cover with aluminum foil and bake for 40-45 minutes, or until apples are tender.
  • Uncover and mash with a potato masher while still warm.
