Roasted Tillapia and Broccoli Dinner is an easy, yet flavorful, weeknight dinner to prepare because it's prepped quickly and is ready in 30 min! Low-carb, Keto approved and gluten-free!

5 fresh Tilapia fillets
5 cups of fresh broccoli florets
1 cup of grape tomatoes
2 tbs extra virgin olive oil (divided)
1 tsp dried tarragon
1/4 tsp garlic powder
salt and pepper to taste
juice of half of a lemon
Pam cooking spray

Steps:

  • Preheat oven to 425F.
  • Using Pam cooking spray, spray a large sheet pan with cooking spray.
  • In a small cup, mix 1 tbs of olive oil, tarragon, and lemon juice
  • Arrange Tilapia fillets on sheet pan in a way that they are not overlapping.
  • Sprinkle garlic powder, salt and pepper on top of Tilapia fillets.
  • Drizzle oil mixture on Tilapia fillets.
  • Drizzle remaining 1 tbs of olive oil on broccoli.
  • Put sheet pan in 425F degree oven for 20 min.
  • Salt again to taste if needed.

This is an easy and delicious tilapia recipe with Old Bay® that only takes about 20 to 25 minutes!

1 tablespoon salted butter
6 frozen tilapia fillets, thawed
1 tablespoon seafood seasoning (such as Old Bay®)
½ tablespoon garlic salt, or more to taste
2 tablespoons lemon juice
1 (10 ounce) package frozen broccoli

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a shallow baking dish.
  • Place tilapia fillets in the prepared baking dish. Cut butter into 6 pieces and place 1 on top of each fillet. Season fillets with seafood seasoning and garlic salt and squirt a little lemon juice over each one. Arrange broccoli around the fillets.
  • Bake in the preheated oven until fish is flaky and white all the way through and broccoli is blanched but still a little crunchy, about 20 minutes.

1 1/4 pounds new potatoes, cut into 1/2-inch pieces
2 tablespoons extra-virgin olive oil
3 teaspoons chopped fresh thyme
Kosher salt and freshly ground pepper
Cooking spray
2 cups cherry tomatoes
1/4 cup pitted kalamata olives
2 tablespoons capers, drained
3 cloves garlic, smashed
1/4 cup white balsamic vinegar or white wine vinegar
4 6-ounce tilapia fillets

Steps:

  • Preheat the oven to 400 degrees F. Toss the potatoes with 1 tablespoon olive oil, 1 teaspoon thyme, 1/4 teaspoon salt, and pepper to taste in a bowl. Coat a rimmed baking sheet with cooking spray; add the potatoes and spread in an even layer. Roast until browned and crisp, tossing halfway through, about 35 minutes.
  • Meanwhile, toss the tomatoes, olives, capers and garlic with 1 teaspoon olive oil, 2 tablespoons vinegar and 1 teaspoon thyme in a bowl. Coat another baking sheet with cooking spray; add the tomato mixture and spread in an even layer. Roast until softened, 15 minutes.
  • Mix the remaining 2 teaspoons olive oil and 1 teaspoon thyme, 2 tablespoons vinegar, 1/4 teaspoon salt, and pepper to taste in a bowl; brush on the fish. Place the fish on top of the roasted tomato mixture and return to the oven until just cooked through, about 10 minutes. Divide among plates and serve with the potatoes.

This meal could be made with any mild tasting white fish. Broccoli is my choice, or any "hard vegetable" could be used. Cooking is a Creative Sport. This will make a nice meal for one person served with rice.

4 ounces tilapia fillets
1 cup broccoli floret
1/2 cup sliced onion
1/2 fresh lemon, sliced thinly
1/2 cup white wine
1/2 teaspoon dill weed
1/2 teaspoon black pepper or 1/2 teaspoon white pepper
1/2 teaspoon salt

Steps:

  • Place the sliced onions in the bottom of an oven proof dish.
  • Add the fish on top of the onions, and then the Dill, Pepper, and Salt.
  • Add the lemon on top of the fish, followed by the broccoli.
  • Pour in the white wine, cover.
  • Bake in a pre-heated 400 degree oven for 20 minutes, or until the internal temperature of the fish is 135 degrees.
  • Remove from the dish with a slotted spoon, discard the lemons, and serve.

4 (4 ounce) fillets tilapia
¼ cup fresh lemon juice
2 ½ teaspoons ground coriander
1 ½ teaspoons dried parsley
1 roma (plum) tomato, diced

Steps:

  • Place the tilapia, lemon juice, coriander, and parsley in a bowl; toss until fillets are evenly coated. Refrigerate at least 2 hours.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish.
  • Arrange the fillets in the bottom of the prepared baking dish; top each with tomato. Drizzle remaining marinade over the fillets. Cover with aluminum foil.
  • Bake in preheated oven 15 minutes. Remove foil and bake uncovered another 5 minutes.
