1/2 stick butter or margarine
1 teaspoon salt
1 teaspoon black pepper
4 green tomatoes, sliced
1 cup self-rising flour

Steps:

  • Preheat oven to 400 degrees. Melt the butter in a baking pan. Stir in the salt and pepper. Coat the sliced tomatoes with flour and place them in the pan. Bake on the lower rack of the oven for 8 minutes. Then turn the oven up to broil in order to brown the tomato slices.

I got this recipe from my a neighbor who grows his own tomatoes and okra and he said his wife just came up with this one day when she got tired of eating plain okra. The ingredients can be modified to accommodate your tomatoes and okra.

1 cup green tomato, chopped small
1 cup okra, sliced into 1cm rounds
2 -3 tablespoons yellow cornmeal
1/2 teaspoon salt (to taste)
1/2 teaspoon fresh ground black pepper (to taste)
3 tablespoons olive oil

Steps:

  • Preheat oven to 400°F.
  • Pour about 1 Tablespoon of olive oil in the bottom of a caste iron skillet,enough to cover the bottom, may need more depending on the size of your skillet. Place the skillet in the oven while it is preheating.
  • Mix the first five ingredients together and add to the skillet once the oven has preheated.
  • Sprinkle with a little more oil and stir to coat all pieces.
  • Place skillet back in the hot oven.
  • Allow to cook 30-40 minutes, stirring occasionally and adding oil as needed.
  • When the okra and tomatoes have reached your desired crispness remove from the oven and place in serving dish. Skillet will stay hot and continue to cook if you do not remove food.
  • Enjoy!

1/2 cup cornmeal
1 egg
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon cayenne pepper
1 tablespoon water
3 medium green tomatoes, cut in 1/4-inch slices
cooking spray

Steps:

  • Combine cormeal, salt, pepper, and cayenne pepper. Set aside.
  • Combine egg and water.
  • Beat well.
  • Dip tomatoes in egg mixture, then in cornmeal mixture, coating well.
  • Lightly spray a 15x10x1-inch baking pan with cooking spray.
  • Place tomatoes in a single layer in pan.
  • Bake at 450 degrees for 30-40 minutes or until golden brown, turning once.

8.5 oz. box jiffy corn muffin mix
1 pkg of shake'n bake parmesan crusted flavor seasoning
1/2 tsp salt and pepper
2 eggs, beaten

Steps:

  • 1. Preheat oven to 400. Spray a cookie sheet with cooking spary
  • 2. In a medium bowl add the muffin mix and the shake'n bake; stir to combine.
  • 3. Stir in the salt and pepper.
  • 4. In another bowl add the eggs and beat them.
  • 5. Dip each tomato slice in egg, then muffin mixture.
  • 6. Lay tomatoes on cookie sheet and bake 15 minutes pre side.

1 egg
2 tablespoons nonfat milk
1/2 cup cornmeal
1/4 cup all-purpose flour
1 teaspoon poppy seed
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Preheat oven to 450 degrees.
  • Cut tomatoes into 1/4" slices.
  • In small bowl combine egg and milk.
  • In another small bowl, combine cornmeal, flour, poppy seeds, salt, and pepper Spray a baking sheet with vegetable oil spray.
  • Dip tomato slices in egg mixture, letting excess drip off.
  • Coat both sides of tomatoes with cornmeal mixture.
  • Place in single layer on baking sheet.

This is a compilation of several recipes and old fashioned Georgia shortcuts. Yields a light cornmeal coating that does not fall off. No need for buttermilk and egg batter! Much less hassle than frying in a skillet and healthier too! For the oil, you can certainly use non-stick spray but I like to use coconut oil when I can.

2 medium green tomatoes
1/2 teaspoon kosher salt
1/4 cup cornmeal
1/4 teaspoon cayenne pepper
1 tablespoon coconut oil or 1 tablespoon other oil

Steps:

  • preheat oven to 450°
  • slice tomatoes 1/4 inch thick. Sprinkle both sides lightly with salt, and let drain in a colander for 15-20 minutes.
  • line a baking sheet with parchment paper and lightly smear with half the oil.
  • dip the tomato slices directly into the cornmeal-cayenne mixture. No additional salt is needed.
  • place on parchment lined baking sheet. Bake 20 minutes. Dot the tops with the remaining oil and turn to "fry" the other side another 20 minutes. Total baking time 40 minutes, or until golden brown.
  • If you like a darker finished product, you can add a little paprika to the cornmeal mixture.

1/2 cup water
1 1/2 teaspoon ground flax seed
1/2 cup cornmeal
1/4 cup quinoa flour (or other flour)
1 teaspoon cornstarch (or other starch)
1/2 teaspoon black pepper freshly ground
1/2 teaspoon salt
4 large green tomatoes

Steps:

  • Preheat oven to 425. Spray a baking sheet lightly with canola oil or non-stick spray. Combine the water and ground flax seeds in a blender and blend at high speed for 30 seconds. Pour into a wide bowl and allow to sit for a few minutes to thicken slightly. In another wide bowl, combine remaining ingredients (except tomatoes). Cut tomatoes into slices about 1/4 to 1/2-inch thick. Submerge a tomato slice in the flax-water, allow excess to drip off, and place slice into cornmeal mixture. Press lightly to assure that bottom of slice is covered with cornmeal and turn to coat other side. Place on prepared baking sheet. When all tomato slices are coated, bake for 15 minutes, or until bottoms are golden brown. Turn and bake another 15 minutes to brown other side. Remove from oven and serve immediately.
