- Preheat oven to 375 degrees F.
- Line baking pan with foil and then paced a wire cooling rack on pan; spray rack with Pam.
- In three pie dishes, place 1/2 cup flour in the first one, in the second the egg whites and in the third place the cornflakes crumbs (I just crushed my own cornflakes with a rolling pin -- so they were probably not as fine crumbs as the packaged crumbs).
- Put chicken in a large bowl, sprinkled with salt and cayenne. Ad buttermilk, turn to coat.
- Dip chicken into the flour, then the egg whites and finally into the cornflakes; pressing to adhere. Repeat for all the chicken.
- Place chicken on rack and spray wiht Pam. Bake until golden (45 -60 minutes).
- Meanwhile make gravy (this is what I skipped and deducted one point from serving). by melting butter in saucepan over medium high heat. Whisk in remaining 2 tablespoons flour; cook , whisking for 1 minute. Whisk in chicken broth, cook, until gravy comes to a boil and thickens, (2-5 minutes). Stir in sage and pepper.

- Preheat oven to 425°F.
- Line roasting pan with foil, spray with nonstick cooking spray.
- Combine buttermilk and hot pepper sauce in 9x13-inch baking dish.
- Place chicken in buttermilk mixture, turning to coat, set aside.
- Combine the bread crumbs, almonds, salt, pepper on a shallow plate.
- Dip the chicken into the crumb mixture, turning to coat all sides.
- Discard excess buttermilk mixture and bread crumb mixture.
- Place chicken on rack and lightly spray with nonstick spray.
- Bake 20 minutes, then lightly spray chicken again with nonstick spray.
- Bake until chicken is golden and thermometer reads 180°F when inserted in thigh, about 25 minutes longer.

I make this chicken at least every 2 weeks..It's nice and crunchy, and so easy, plus weight watcher friendly. only 4 points per serving..it's my families favorite chicken

- 1. preheat oven to 350..
- 2. I use a large freezer bag, mix all ingredients in bag...if chicken is thick, pound it out with a meat mallet, so all are about the same thickness.
- 3. Make sure the chicken is moist..if you have to run it under the tap..I pour the crumbs onto a plate, then press the breasts one at a time on both sides, as so the crumbs stick, as there is no dipping in milk or egg..
- 4. spray a baking rack with cooking spray, and lay the breasts side by side..there is no need to turn the chicken if using a rack, it will brown well, and evenly on both sides..
- 5. I set the rack on a cookie sheet, bake for 30-40 min..depends I guess on the oven..they will be nice and crunchy on the outside, yet moist inside..but, the best part for me is low fat, but tastes like fried..enjoy

- Lightly coat an 8 X 8 X 2-inch baking dish with nonstick cooking spray; set aside.
- Combine flour, salt and cayenne pepper together in a medium-size bowl.
- Place buttermilk and corn flakes crumbs in 2 separate shallow bowls.
- Roll chicken breast halves in flour mixture and evenly coat each side.
- Next dip chicken into buttermilk and then corn flakes crumbs.

I got this recipe from Weight Watchers magazine. It is one of Jennifer Hudson's, WW spokesperson, favorite recipes. After trying it, I can see why. The cornflake crumbs really give it that wonderful crunch. I made mine without the gravy and it was still delicious! I also used all chicken breasts. So good, you won't believe it is good for you. Points Plus Value is 8.

- Preheat oven to 375 degrees; line large shallow baking pan with foil; place a wire rack in pan; spray rack with nonstick spray.
- Place 1/2 cup flour in shallow dish.
- Place egg whites in second dish and cornflake crumbs in a third.
- Put chicken in large bowl; sprinkle with salt and cayenne.
- Add buttermilk and turn to coat.
- Dip chicken, one piece at a time into flour, then egg whites, then into cornflake crumbs, pressing to adhere.
- Place chicken on rack.
- Spray top of the chicken lightly with nonstick spray.
- Bake until golden brown and cooked through, about 45 minutes.
- Meanwhile, to make gravy, melt butter in small saucepan over medium-high heat.
- Whisk in remaining 2 T flour; cook, whisking constantly, 1 minute.
- Gradually whisk in chicken broth.
- Cook, whisking constantaly, until gravy comes to a boil and thickens, about 2 minutes.
- Stir in sage and black pepper.
- Divide chicken among 4 plates and serve with gravy.
