These donuts are lighter than regular donuts, baked not fried, and so easy to make. They will disappear before your eyes!

Number Of Ingredients 9

1 cup butter or 1 cup margarine, softened
1 1/2 cups sugar
2 eggs
3 cups flour
4 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 cup milk
1/2 teaspoon cinnamon

Steps:

  • Blend 1/2 cup plus 2 tablespoons butter with 1 cup of sugar.
  • Add the eggs and mix well.
  • Sift together flour, baking powder, salt and nutmeg.
  • Add to the butter and sugar mixture.
  • Blend in the milk and mix together thoroughly.
  • Fill greased muffin tins 2/3 full.
  • Bake at 350 degrees for 15 to 20 minutes, or until doughnuts are golden.
  • Combine remaining 1/2 cup of sugar with the cinnamon.
  • Melt remaining 6 tablespoons of butter.
  • While doughnuts are still warm, roll them in melted butter; then in cinnamon sugar.

I'm not keen on frying things so this recipe is great and really hard to tell they were not fried.....give it ago you won't be disappointed!

Number Of Ingredients 7

1 cup reduced-fat milk
50 g unsalted butter, melted
1 1/2 cups plain flour
1 cup plain whole meal flour
1 1/2 teaspoons instant dried yeast
3/4 cup caster sugar
1 1/2 teaspoons ground cinnamon

Steps:

  • Place milk in a heatproof, microwave-safe jug. Microwave on medium-high (75%) for 30 to 40 seconds or until heated through (do not allow to boil). Stir in 1 tablespoon butter.
  • Sift flour into a bowl. Stir in yeast, 1/4 cup sugar and 1/2 teaspoon cinnamon.
  • Make a well in the centre.
  • Add milk mixture.
  • Mix to form a soft dough.
  • Turn out onto a lightly floured surface. Knead for 10 minutes or until smooth and elastic.
  • Place dough in a lightly oiled bowl. Cover with plastic wrap. Set aside in a warm place for 1 hour or until doubled in size.
  • Line a baking tray with baking paper.
  • Using your fist, punch dough down. Turn out onto a lightly floured surface. Knead until smooth.
  • Press dough out until 2.5cm thick. Using a 6.5cm cutter, cut 12 rounds from dough. Using a 2.5cm cutter, cut circles from the centre of each round. Place doughnuts, 5cm apart, on prepared tray. Cover with lightly greased plastic wrap. Set aside in a warm place for 30 minutes or until doubled in size.
  • Meanwhile, preheat oven to 200°C/ 180°C fan-forced. Cook doughnuts for 10 to 12 minutes or until golden brown and cooked through.
  • Combine remaining sugar and cinnamon in a bowl.
  • Brush doughnuts with remaining butter.
  • Dip in sugar mixture, shaking off excess.
  • Place on plates. Serve.

While cake donuts are traditionally fried, they're just as delicious baked in the oven, with far less cleanup. Toss in powdered sugar or finish with a simple glaze and sprinkles or toasted coconut -- you can't go wrong!

1/2 cup (1 stick) unsalted butter, room temperature, plus more for pans
2 1/2 cups unbleached all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/8 teaspoon freshly grated nutmeg
3/4 teaspoon kosher salt
1/2 cup granulated sugar
1/4 cup light brown sugar
2 eggs, room temperature
1 teaspoon pure vanilla extract
1 cup whole milk, room temperature

Steps:

  • Preheat oven to 425 degrees. Lightly brush two standard donut pans with butter. In a medium bowl, whisk flour, baking powder, baking soda, nutmeg, and salt; set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with a hand mixer, beat butter and sugars on high speed until light and fluffy, about 3 minutes. Reduce mixer speed to medium; add eggs and vanilla, beating until combined, scraping down the sides of the bowl as needed. Reduce speed to low. Add flour mixture in two batches, alternating with milk, and beat just until combined.
  • Transfer batter to a piping bag or a resealable plastic bag, and snip a 1/2-inch hole in one corner of bag. Divide mixture evenly between prepared pans. Bang pans several times on counter to release air bubbles.
  • Bake until tops of donuts spring back when lightly pressed, 12 to 14 minutes. Let cool 10 minutes, then transfer to a wire rack to cool. To decorate, see Variations below.

1 teaspoon ground nutmeg
½ teaspoon ground cloves
2 teaspoons ground cinnamon
3 cups all-purpose flour
1 cup buttermilk
3 eggs
1 tablespoon honey
½ cup butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet, or donut baking pan.
  • In a medium bowl, mix sugar, baking powder, baking soda, nutmeg, cloves, cinnamon and flour. Mix buttermilk, eggs, honey and butter in a separate medium bowl, and stir into the dry ingredients. Spoon the mixture onto the prepared pan in doughnut shapes.
  • Bake 12 minutes in the preheated oven, until golden brown.
