EASY OVEN ROASTED POTATOES RECIPE
Easy Oven Roasted Potatoes with garlic are the perfect side dish! We par-boil our roasted potatoes for the perfect crunchy outside and soft inside.

Steps:
- Preheat oven to 400°F. Grease a rimmed baking sheet with oil.
- Place sliced potatoes in a 2 Qt saucepan. Fill with water and cover. Place over medium-high heat and bring to a boil. Boil for two minutes; drain.
- Place par-boiled potatoes in a large bowl. Toss with olive oil, garlic, and spices. Spread on prepared pan.
- Bake 15-30 minutes, or until browned and cooked through. (Baking time with depend on the size and thickness of your potato wedges.)

OVEN 'BOILED' POTATOES - SO EASY!
I recently discovered this way of 'boiling potatoes'. It is easy as can be, and saves you the trouble of frequently checking your stove top boiled potatoes. Just start them a bit earlier than you usually do, and forget about them until time to check. They are not as easily over cooked as regular boiling, so if you go over they won't become mushy. Their texture appears to be the same as conventionally boiled. I like to cook several potatoes for use in the upcoming days, and this is an easy way to do it. I will be 'boiling' my potatoes in this way from now on!

- Place amount of potatoes desired in a casserole dish with a lid, and add 1 cup water. Cover with lid. Place in cold oven, then bake at 300 degrees for 1 to 3 hours. *Just a few times will let you know more precisely how long to leave the potatoes in the oven. It depends on the amount and size of the potatoes. You are really trying to find out the soonest they will be done, as you can go over quite a bit and they will still be fine. Last night I cooked 4 medium potatoes this way, and they were done after an hour.
BASIC BOILED POTATOES
Cook a big pot of red potatoes, and you'll not only have a fuss-free side dish, but a head start on other meals. Add butter and parsley to the portion of boiled potatoes you're serving immediately, then refrigerate the rest.

- Place potatoes in a Dutch oven or stockpot and cover with water. Cover and bring to a boil over medium-high heat; cook for 15-30 minutes or until tender. Drain well. Serve eight potatoes with butter and parsley if desired. Refrigerate remaining potatoes.
