2 cups fresh or frozen cranberries
1 cup packed brown sugar
1/4 teaspoon ground cloves

Steps:

  • Place cranberries in a 1-qt. baking dish. Sprinkle with brown sugar and cloves. Cover and bake at 350° for 30-35 minutes. Stir after 15 minutes.

3 tablespoons butter or margarine (softened)
1 cup granulated sugar
1 egg
1 cup milk
2 cups all purpose flour
1 teaspoon salt
1 teaspoon baking powder
2 cups fresh or frozen cranberries (I used frozen)
½ cup butter
1 cup packed brown sugar
¾ cup milk or heavy cream (I used milk, the original used heavy cream)

Steps:

  • Preheat the oven to 350 degrees F and lightly grease a 9" square pan.
  • In a medium bowl, beat together the butter and sugar until crumbly. Add in egg and milk and beat until combined.
  • Add in flour, salt, and baking powder and beat until just combined. Stir in cranberries.
  • Spread batter in prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
  • While cake is baking, prepare caramel sauce. In a small pot, melt butter. Add brown sugar and milk or cream and bring to a boil over medium-high heat, stirring constantly. Cook over a low boil for 2-3 minutes, stirring constantly. Serve warm over warm cake.

1 (12- ounce) bag cranberries, fresh or frozen
1 1/4 cups sugar
1/4 teaspoon ground cinnamon
Pinch nutmeg
1/4 cup bourbon, or more

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the cranberries, sugar, cinnamon, and nutmeg in a small baking dish and cover. Bake for about 55 minutes. Remove the cover and stir to melt any un-dissolved sugar. Return the dish to the oven and bake for about 5 to 10 more minutes, or until the cranberries are soft and surrounded by a syrupy sauce. Remove the dish from the oven and immediately stir in the bourbon, to taste. Let the dish cool to room temperature, then chill for at least hour before serving. The sauce will keep for several weeks in the refrigerator.

6 cups water
12 cups fresh cranberries

Steps:

  • Combine sugar and the water in a 8 quart kettle.
  • Stir till sugar is dissolved.
  • Heat mixture to boiling. Boil 5 minutes.
  • Add the 12 cups of cranberries.
  • Cook until skins pop, about 5 minutes.
  • Remove from heat.
  • Pack into hot jars leaving a 1/2 inch head space.
  • Adjust the lids.
  • Process in water bath for 5 minutes.

This is a delicious and easy cranberry sauce, requiring no time standing at the stove! I found it in a local newpaper article from a woman who got it from a magazine many years ago. It can be made ahead and stored in the refrigerator.

4 cups fresh cranberries (you could use fresh-frozen from last year, do not thaw first)
2 cups sugar
1/2 teaspoon ground cinnamon
1 (13 ounce) jar orange marmalade
3 tablespoons fresh lemon juice
1 cup coarsely chopped toasted walnuts (optional)

Steps:

  • Preheat oven to 350 degrees. Wash and drain cranberries and place in a large bowl. In a separate bowl, combine sugar and cinnamon and then add to cranberries. Mix well. Spoon into a 9-inch square baking dish and cover with foil. Bake for 45 minutes. Remove from oven and stir in marmalade, lemon juice and walnuts (if using). Store in refrigerator.

2 (12 ounce) bags cranberries, whole (fresh or frozen)
1 cup sugar
1 cup frozen raspberries, thawed
1/2 cup sugar (additional)
2 tablespoons Grand Marnier, see note (orange liqueur)

Steps:

  • Preheat oven to 350.
  • Spread cranberries in a 13x9 GLASS baking pan; sprinkle with one cup sugar and stir to coat all the berries.
  • Bake until mixture is hot and bubbly (berries will pop)--about 40 minutes. STIR TWICE DURING BAKING TIME!
  • Gently stir in the raspberries; sprinkle with remaining sugar and liqueur, stir again.

1 tablespoon vegetable oil
2 tablespoons butter
salt and black pepper
1 onion, chopped
1 -2 tablespoon minced fresh garlic (or to taste)
1 large celery rib, finely diced
1 pinch cayenne pepper (optional)
1 (16 ounce) can ocean spray whole berry cranberry sauce
1 cup favorite barbecue sauce

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch baking dish.
  • Heat butter with oil in a large skillet over medium-high heat.
  • Season the chicken with salt and pepper, then add to the skillet; cook on both side until lightly browned, then place the chicken skin-side up into the baking dish (leave the drippings in the pan).
  • Add in the onion, celery, garlic and cayenne pepper (if using) adding in a little more oil if needed; sate for about 3 minutes; stir in the cranberry sauce and BBQ sauce; bring to a light simmer, stirring until completey combined, then pour over the chicken.
  • Bake uncovered for about 50 minutes or until chicken is tender and cooked through, basting with the sauce a couple times during baking.

1 cup light brown sugar
4 tablespoons unsalted butter, cut into small cubes
1/2 cup heavy cream

Steps:

  • Preheat oven to 375°F.
  • Lightly grease a square enamel baking dish with nonstick spray.
  • Scatter the brown sugar to the baking dish, spreading evenly.
  • Top the sugar with the butter cubes, spreading evenly. Then pour over the heavy cream.
