OVEN-BAKED SESAME CHICKEN
Chicken is one of my family's favorite meat and I prepare it several different ways. This melt-in-your mouth baked chicken is a much-requested entree for Sunday dinner.

- Place chicken in a large resealable plastic bag; add buttermilk. Seal bag and refrigerate for at least 4 hours. In a shallow bowl, combine butter, lemon juice and garlic. , In another bowl, combine bread crumbs, sesame seeds, Parmesan cheese, salt and pepper. Drain chicken, discarding buttermilk; dry on paper towels. Dip chicken in butter mixture, then coat with crumb mixture. , Place in an ungreased 11x7-in. baking dish. Drizzle with remaining butter mixture. Bake, uncovered, at 450° for 10 minutes. Reduce heat to 350° and bake an additional 20 minutes or until juices run clear.

Did I mention I LOVE wings!!??? Probably as I have posted several of my huge collection of wing recipes. This is very good and not as fattening as some of my others although I bake my wings... never deep fry.

- 1. Separate wings into 3 if desired...discard tips. Combine all ingredients except butter. Dip wings in melted butter ; roll in bread crumb mixture. Coat completely. Arrange meaty side down on a a well greased cookie sheet in a single layer. Bake at 375 for 20 minutes, turn and bake 20 - 25 minutes or until golden.
- 2. Serve with tomato salsa or sour cream. I really like the 3 cheese Ranch dressing with ALL my wings!!! NOTE: You can substitute 1/2 cup of buttermilk for the butter for fewer calories
OVEN-BAKED HONEY SESAME CHICKEN
This oven-baked sesame chicken comes together quick and is always a big hit! Serve it up on top of rice with some garlic-almond green beans on the side, and you've got yourself a better (and healthier!!) than take-out meal! This pairs perfectly with a dry Riesling from Washington state.

- 1. Preheat oven to 375 degrees.
- 2. Lightly salt and pepper the cubed chicken. Put the cornstarch into a gallon zip top bag. Dump chicken in with the cornstarch. Seal the bag and shake vigorously to ensure that the chicken is well coated. Dump chicken and cornstarch into a colander over garbage can, shake excess cornstarch off the chicken.
- 3. Heat 1 TB of the oil over medium heat in a large skillet. Working in batches so as not to overcrowd the pan, cook the chicken until browned on all sides. Place cooked chicken on a large, rectangular, parchment paper-lined baking pan.
- 4. In a small/medium bowl, whisk all ingredients for sauce together until well blended. Pour sauce over chicken and stir to make sure every piece is coated.
- 5. Bake for 15 minutes or until the sauce has thickened and the chicken is completely cooked. While chicken is in the oven, stir it every 5-10 minutes to make sure chicken is completely coated with sauce.
- 6. Serve chicken over jasmine rice and garnish with sesame seeds.

- Combine soy sauce and garlic in a bowl.
- Combine sesame seeds and flour in a flat dish.
- Dip chicken pieces in soy mix and then in sesame seeds, coating evenly.
- Place in ovenproof dish and drizzle with melted butter.

This makes a very flavorful chicken. This recipe was originally used for chicken wing drumettes, which are addictive, but has become quite popular with chicken legs, thighs, and breasts. I hope you enjoy this recipe as much as we do!

- Whisk together the soy sauce, sherry, garlic, brown sugar, and ginger in a bowl; pour into a large resealable plastic bag. Add the chicken pieces, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 2 hours.
- Preheat an oven to 350 degrees F (175 degrees C). Spray a baking rack with cooking spray, and place on a baking sheet.
- Remove the chicken from the marinade, and shake off excess. Discard the remaining marinade.
- Mix the wheat germ, bread crumbs, sesame seeds, parsley, black pepper, and paprika together in a separate large resealable plastic bag. Add the chicken to the bag and shake to coat the pieces with the bread crumb mixture; transfer the coated chicken pieces to the prepared baking rack.
- Bake in the preheated oven until no longer pink at the bone and the juices run clear, about 1 hour. An instant-read thermometer inserted into the thickest part of of a thigh, not touching bone, should read at least 160 degrees F (70 degrees C).
