I created this recipe by accident. After already starting dinner one night I realized I didn't have enough potatoes on hand to make mashed, so I improvised and came up with these baked potato slices. It's quick and easy and they are delicious. Just line your cookie sheet with nonstick foil and clean up is a snap! Enjoy!

4 medium baking potatoes, sliced 1/8-inch thick
⅛ teaspoon garlic powder
⅛ teaspoon ground black pepper
⅛ teaspoon celery seed
⅛ teaspoon paprika
1 pinch cayenne pepper
1 dash salt
4 tablespoons olive oil, or more as needed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place potatoes, garlic powder, black pepper, celery seed, paprika, cayenne pepper, and salt into a zip-top bag. Shake to coat evenly.
  • Pour entire contents of bag onto a large baking sheet and spread evenly. Drizzle with olive oil.
  • Bake in the preheated oven until potatoes reach desired crispness, turning frequently to brown evenly, 40 to 45 minutes.
  • Remove from the oven. Let cool slightly and pour into a serving dish.

  • Preheat oven to 450 degrees F (230 degrees C).
  • Arrange potato wedges on a baking sheet. Drizzle olive oil over the wedges; season with thyme, pepper, and salt. Turn wedges with a spatula to coat with oil and seasonings.
  • Roast potato wedges for 15 minutes, turn, and continue roasting until soft in the center, about 15 minutes more. Transfer wedges to a platter and sprinkle cheese over them.

A tasty, healthier take on traditional french fries... Yum! These oven-baked fries are simple to make and full of flavor. They get crisp in the oven. The spices and oil almost form a crust. Parmesan and garlic really give these fries a kick of flavor. Perfect as a snack or side dish.

2 large baking potatoes cut into strips about like the size of regular fries.
after the potatoes are peeled and sliced, place them in a bowl of water with about two cups of ice cubes. soak for 30 minutes then pat dry with paper towels.
it is important not to skip this step!
place only dry ingredients in a plastic bag:
1 Tbsp grated Parmesan cheese from shaker
1/4 tsp salt
1/4 tsp garlic powder
1/4 tsp paprika
1/4 tsp black pepper
1 Tbsp olive oil

Steps:

  • 1. OVEN: Heat oven to 450 degrees. Baking time is 35 minutes. No need to turn the fries! MAKING OVEN FRIES: Spray a foil-lined baking sheet with cooking spray if you are using a regular cookie sheet. I use an Aire Gourmet baking sheet, and if you like these fries, it is worth the investment of buying one. Because olive oil does not smoke at high temperatures when using this baking sheet, and the fries are a gorgeous golden brown. (I prefer to use parchment paper, which I don't grease, and it makes the removal of the fries a snap to prepare from oven to serving bowl.)
  • 2. Soak the cut potatoes in ice water for at least 30 minutes. Don't skip this step as it makes them crisp.
  • 3. Blot cut potatoes on a clean tea towel to remove moisture.
  • 4. Combine all dry ingredients in a plastic bag.
  • 5. Add potatoes tossing and kneading lightly to coat.
  • 6. Drizzle with one tablespoon of olive oil. Tossing and kneading again to coat.
  • 7. Arrange potatoes in a single layer on the baking sheet.
  • 8. Bake for 35 minutes or until golden brown. No need to turn potatoes during cooking. Be sure to check them often to see how they are doing. Remove any potatoes into a paper towel-lined bowl that get done early so they don't get overdone. I also like to use parchment paper for easy cleanup! Enjoy!
  • 9. Here is how they look!
  • 10. MAKING POTATO WEDGES: Prepare your potatoes as you would for oven fries, except cut your potatoes into wedges and, follow the rest of the steps in the recipe. When it comes time to bake the wedges, put them on parchment paper to bake and allow a few minutes extra to make sure they are done. No need to turn during baking. Enjoy!
  • 11. Cook's Tip: Don't throw out the leftover fries, or wedges! Wrap them in tinfoil and refrigerate. Leftover fries and wedges make great tasting eggs! Here is how I make mine. Chop up the leftover fries or wedges and lightly brown them in a little olive oil, turn them over and grate a little cheese over the hot potatoes. I use about 1 tablespoon sharp cheddar. Push the potatoes to the side of the skillet and add two eggs, scramble them and gently fold into the potatoes, cook a minute and flip them over, cook one minute more and turn out onto a plate. Add salt and pepper if desired. Good eating! Enjoy!
  • 12. Update! Newest Version: When I am in a hurry, and we need potatoes really fast for a meal, I zap a large potato with peeling on in the microwave until almost done, then I cut it into chunks. I use a cast iron skillet and put olive oil in it, not much, put in the taters and season them with the same seasonings as the fries (except the Parmesan cheese because it scorches). As soon as they are nicely browned, I remove them to a stainless steel bowl (it keeps them hot) and toss them with the Parmesan cheese. Voila! You have delicious "roasted" potatoes with your meal. Great with bacon and eggs, too!

1 teaspoon olive oil
2 cloves garlic, minced
1/2 small onion, cut into 1/4-inch dice
1/2 red bell pepper, cut into 1/4-inch dice
1 celery stalk, peeled to remove strings, cut into 1/4-inch dice
2 tablespoons homemade or low-sodium canned chicken stock, skimmed of fat
1/4 cup skim milk
2 tablespoons roughly chopped fresh thyme, plus sprigs for garnish
1 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper
2 large egg whites
3/4 cup plain bread crumbs, toasted
2 tablespoons vegetable oil
Sweet Red-Pepper Sauce

Steps:

  • Place potatoes in small stockpot, cover with water, and bring to a boil. Reduce heat to medium high; gently boil until tender, 40 to 45 minutes. Drain in a colander. Using a towel to hold potatoes, peel while still hot. Pass potatoes through a potato ricer or a food mill into a large bowl.
  • Heat oven to 450 degrees. Meanwhile, heat olive oil in skillet over medium-low heat. Add garlic, onions, red peppers, and celery; saute until vegetables are translucent, about 5 minutes. Add stock; saute 1 minute more. Add vegetable mixture to potatoes along with milk, thyme, salt, and black and cayenne peppers. Form 1/3 cup mixture into 3-inch round cake; transfer to platter. Repeat, making cakes with remaining mixture.
  • In a shallow dish, whisk egg whites until foamy. Place bread crumbs in a shallow dish. Coat cakes in egg whites, then in bread crumbs; transfer to a baking sheet.
  • Pour 1 tablespoon canola oil in a medium nonstick skillet; place over medium-high heat. Add half the cakes; cook until golden brown, 2 to 3 minutes on each side. Return to baking sheet; set aside. Repeat process with remaining tablespoon canola oil and cakes, wiping skillet with paper towel between batches.
  • Place cakes in oven; cook until deeply golden, about 20 minutes. Serve with Sweet Red-Pepper Sauce.

3 tablespoons buttermilk

Dash of hot sauce
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 450 degrees F.
  • Put the sweet potatoes in a large bowl. Add the olive oil and toss to coat. Stir together the cornstarch, paprika, garlic powder, cayenne, 3/4 teaspoon salt and a few grinds of black pepper in a small bowl. Sprinkle the spice mixture over the sweet potatoes and toss to coat.
  • Arrange the sweet potatoes on a baking sheet in a single layer, leaving as much space between the fries as possible. Bake, turning once about three-quarters of the way through, until the edges are browned and crispy, 20 to 25 minutes. Cool 5 minutes before serving.
  • Serve the warm fries with the Ranch Dressing.

  • Preheat the oven to 425°.
  • Scrub the potatoes, cut them in half lengthwise, then cut each half in thirds lengthwise.
  • You'll have 6 long wedges from each potato.
  • Place the potatoes on a sheet pan with the olive oil, salt, pepper, and thyme.

1 egg
1 cup(s) all-purpose flour
2 tablespoon(s) seasoned salt
1 teaspoon(s) ground black pepper
1/2 teaspoon(s) paprika

5 large idaho or russet potatoes
canola oil for frying

Steps:

  • In a shallow bowl, whisk together the milk and egg.
  • On a large plate, mix the flour, seasoned salt, black pepper, paprika, garlic powder, and garlic salt together.
  • Cut the unpeeled potatoes into wedges; approx. 1/2 inch each.
  • Heat about an inch or two of canola oil in a deep pot until it reaches about 375 degrees F.
  • Toss some of the potato wedges into the egg/milk mixture and then dredge in the flour mixture. Fry them in the oil until golden brown - approx. 4-5 minutes - flipping to get them browned on all sides. *You'll need to do this in batches so the potatoes aren't crowded.

  • Heat oven to 200°F with two racks.
  • Line two baking pans with parchment paper, and set aside.
  • Slice potato crosswise, as thin as possible.
  • Arrange the slices on the prepared sheets, and keep them from touching as much as possible.
  • Sprinkle lightly with salt and pepper.
  • Cook for 50 minutes.
  • Slices will dehydrate and shrink; turn chips over, and rotate baking sheets if needed for even cooking.

  • Cook for 50 minutes. Slices will be dehydrating and shrinking; turn chips over, and rotate baking sheets if needed for even cooking. 2 sprigs fresh thyme, bruised*
2 sprigs fresh oregano, bruised*
1 medium russet potato
1 small sweet potato
1/4 teaspoon coarse sea salt or table salt

Steps:

  • In a small saucepan, heat oil, garlic, thyme, and oregano over medium-low heat for 15 minutes. If garlic starts to bubble, turn heat to low. Remove from heat. Let stand at room temperature until cool. Remove garlic and herb sprigs from the oil. Set aside 2 tablespoons of the oil. (Store the remaining oil in an airtight container in the refrigerator for up to 1 week and use in place of olive oil in recipes.) 2. Preheat oven to 425 degrees F. Line two large baking sheets with parchment paper; brush paper with some of the 2 tablespoons herb-infused oil. Scrub potatoes. Use a mandoline to slice potatoes 1/8 inch thick. Arrange russet potato slices in a single layer on one of the prepared baking sheets; arrange sweet potato slices in a single layer on the other prepared sheet. Brush tops of potato slices with the remainder of the 2 tablespoons herb-infused oil. 3. Bake potatoes, one sheet at a time, for 24 to 26 minutes or until potatoes are golden brown, turning potato slices once halfway through baking. 4 red potatoes
3/4 cup breadcrumbs
1 teaspoon basil
1 teaspoon parsley
1 teaspoon seasoning salt
1 teaspoon chili powder
1/2 teaspoon ground coriander
1/2 teaspoon pepper
1/2 teaspoon paprika
1/2 teaspoon oregano
2 tablespoons parmesan cheese
2 eggs
3 teaspoons powdered milk

Steps:

  • Slice potatoes in half lengthwise and then cut each half into 5 wedges
  • Combine breadcrumbs and seasonings in a bowl
  • In a separate bowl, combine eggs and milk powder and mix well
  • Dip each wedge into egg mixture and then into breadcrumb mixture
  • Place breaded wedges on a lightly greased baking sheet or baking stone
  • Bake at 325 degrees for 20 minutes, flip wedges, and bake for 20 minutes more
  • Serve hot from the oven

4 large baking potatoes
3 tablespoons butter or 3 tablespoons margarine
1 cup grated cheddar cheese
1/2 cup black olives, chopped
1/2 cup green onion, chopped
1/2 cup crumbled cooked bacon
1/2 cup green pepper, chopped
1 cup salsa
1 cup sour cream

Steps:

  • leaving potato skin on, wash and scrub thoroughly.
  • cut each potato into 8-9 wedges.
  • melt margarine.
  • using a basting brush, put a thin coat of margarine on a cookie sheet (to avoid sticking).
  • place wedges on cookie sheet.
  • baste with some of the margarine.
  • baste a few times while cooking.
  • bake at 400f for approximately 40 minutes till golden brown and crisp on the outside.
  • remove pan from oven.
  • evenly spread cheddar cheese over potatoes.
  • sprinkle green peppers over cheese.
  • place back in oven until cheese is melted, about 5 minutes.
  • remove from oven and place on platter.
  • top with olives, onions, and bacon.
  • serve with salsa and sour cream.

I made this side last night from a Rachael Ray recipe. I've tweaked it a little based on my initial experience. It's super fast and easy. Any other ideas on how to tweak more would be great!

4 large idaho baking potatoes, scrubbed
3 tablespoons olive oil
5 sprigs fresh rosemary, finely chopped
1 teaspoon crushed red pepper flakes
3 garlic cloves, cracked
salt and pepper, to taste

Steps:

  • Heat oven to 550 degrees (or as high as your oven goes).
  • Halve each potato, then cut each half in 5 slices lengthwise. Place on a baking sheet and drizzle the olive oil over them, work the potatoes around in the oil until evenly coated.
  • Season with the rosemary, salt, pepper and red pepper. (I recommend LOTS of salt and I'm not big on super salty foods.) Throw the garlic cloves on the sheet with the potatoes.
  • Roast 25 minutes. Make sure to turn them all once at the halfway point or they will end up sticking to the baking sheet.

Oven-baked sweet potato fajitas image

Vegetarians needn't miss out on the joy of tortilla wraps- we use peppers, onions and sweet potato topped with feta and soured cream

2 large sweet potatoes
1 onion
2 red onions
1 large red pepper , deseeded
1 tbsp vegetable oil
2 tbsp cider or white wine vinegar
30g sachet fajita seasoning
8 small tortilla wraps
½ small pack coriander , chopped
½ small pot low-fat soured cream
small iceberg lettuce , shredded
100g reduced-fat feta cheese , crumbled

Steps:

  • Heat oven to 200C/180C fan/gas 6. Chop the veg into chunky wedges and toss in a large bowl with the oil, vinegar and fajita seasoning. Arrange in a single layer on a large baking tray and cook for 40 mins, turning halfway through.
  • Meanwhile, warm the wraps following pack instructions. Once the veg is cooked, sprinkle with coriander, then roll up in the wraps with a dollop of soured cream, some lettuce and crumbled feta on top.
