9 large eggs
½ cup sour cream
½ cup milk
1 teaspoon salt
2 green onions, chopped
¼ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish with butter.
  • Beat eggs, sour cream, milk, and salt in a bowl until blended. Stir in green onions. Pour mixture in the prepared baking dish.
  • Bake in the preheated oven until set, 25 to 30 minutes. Sprinkle Cheddar cheese over eggs and continue baking until cheese is melted, 2 to 3 minutes more.

3 green onions, sliced
1/2 cup chopped sweet red pepper
1 tablespoon canola oil
6 large eggs, lightly beaten
1 cup shredded Swiss cheese
6 ounces cubed fully cooked ham
1/3 cup water

Steps:

  • In a 10-in. ovenproof skillet, saute the onions and red pepper in oil for 5 minutes. In a large bowl, combine the eggs, cheese, ham and water. Pour over vegetable mixture. Bake, uncovered, at 375° for 15-20 minutes or until set.

2 -3 tablespoons butter
2 cups sliced fresh white button mushrooms
4 -5 green onions, finely chopped
1/3 cup full-fat milk
6 large eggs
2 tablespoons flour
1/2 teaspoon salt (or to taste, I use 1 teaspoon seasoned salt)
black pepper (lots black pepper!)
1 1/2 cups grated cheddar cheese, divided
6 -7 slices bacon (cooked and finely crumbled)
1/4 cup grated parmesan cheese (optional)

Steps:

  • Heat oven to 350 degrees (set oven rack to second-lowest position).
  • Butter an 8-inch square baking dish.
  • Melt butter in a skillet; add in mushroom slices and cook over medium heat until mushrooms are tender (about 6-8 minutes, adding in the chopped green onions the last 2 minutes of cooking) set aside.
  • In a bowl whisk together milk with eggs, flour, salt and black pepper until frothy, then stir in 1 cup grated cheddar cheese, cooked bacon and mushrooms/onion mixture.
  • Pour into buttered baking dish, then sprinkle with grated parmesan cheese (if using).
  • Bake uncovered for about 20 minutes or until the eggs are set in the center.
  • Remove sprinkle with the remaining 1/2 cup cheddar cheese and return to oven for another couple of minutes until cheese is melted.

Whenever I make an omelet, it flops when it should flip. Baking it in the oven removes that obstacle. You can add any sort of filling to this versatile recipe, and it can be used to feed a crowd.

8 eggs
1 cup milk
1/2 cup all-purpose flour
1/2 teaspoon salt
1 pinch ground pepper (optional)
1 cup shredded cheese or 1 cup cheese slice

Steps:

  • Preheat the oven to 450°F.
  • Mix eggs, milk, flour, salt and pepper until smooth.
  • Pour half of the egg mixture into a greased 9x13-inch pan.
  • Place cheese on top of egg (you can also add any other filling that you want). Pour the rest of the egg mixture over the filling.
  • Bake for 15-20 minutes or until eggs begin to turn golden brown around the edges. Use a knife to loosen the omelet from the pan before slicing.
  • If you want, sprinkle some additional cheese on top.
  • Slice and serve.
  • To save a step, combine most of the cheese with the egg mixture before pouring rather than putting them in the pan separately.

Great recipe from Sept 2003 issue of Southern Living. Have made it several times for Sunday school breakfasts and it has always been a hit. I especially appeciate the use of fresh herbs and tomatoes, and the presentation in the cast iron skillet.

1/2 cup sour cream
2 tablespoons chopped fresh thyme
1 teaspoon salt
3/4 teaspoon ground black pepper
1/4 teaspoon baking powder
2 tablespoons butter or 2 tablespoons margarine
2 small plum tomatoes, seeded and chopped
8 ounces shredded monterey jack cheese
1/2 cup chopped fresh basil
fresh basil (to garnish)

Steps:

  • Beat together eggs, sour cream, thyme, salt, pepper, and baking powder with electric mixer at medium speed 2-3 minutes or until well blended.
  • Melt butter in a 12-inch oven-proof (cast iron) skillet; add egg mixture.
  • Bake at 350F for 15 minutes; remove from over and sprinkle with chopped tomato, shredded cheese, and fresh basil.
  • Return to oven and bake 15-20 minutes longer or until set. Garnish with fresh basil, if desired.

Steps:

  • Beat first six ingrediants at medium speed with an electric mixer 2 or 3 minutes or until well blended Melt butter in 12 inch over proof skillet; add egg mixture Bake at 350 degrees for 15 minutes. Remove from oven; sprinkle with tomotoes, cheese, and basil Return to oven and bake 15-20 more minutes, or until set garnish, if desired; serve immediately.

This is a super easy brunch dish that doesn't require a lot of cooking. It's versatile and you can use various vegetables and herbs you have. For example, instead of the vegetables I used, you can also use white mushrooms, green peas, green onions, green peppers, red peppers, broccoli, spinach, asparagus, sweet potatoes/yams, pumpkin, summer squash, seaweed, beans, tofu, shrimp, scallops, salmon, tuna, chicken (if you eat these animal products), etc. I made roasted pepper sauce to accompany this dish, but if you don't want to take the extra steps to make the sauce, thousand island or ranch dressing or ketchup would also work. 1/2 large onion, chopped
2 cups shiitake mushrooms, chopped
1/3 cup shelled edamame, cooked
1 small carrot, chopped

Steps:

  • Preheat the over to 375°F/180°C.
  • Heat a frying pan with a Tbsp of olive oil. Gradually add vegetables (in the order from the ones that require a longer cooking time to those that require a little cooking time) and sauté.
  • When all the vegetables are soft, season with herbs, salt and pepper. Remove from heat.
  • In a bowl, beat eggs. Add milk, salt and pepper and mix. Add the cooked vegetables and mix.
  • Pour the egg mixture into an 8 x 8 pan coated with olive oil.
  • Bake for 25 minutes. Remove from the oven and leave for 5 minutes. Cut the omelet into 9 pieces.
  • To make the roasted pepper sauce, in a food processor or blender, add all the ingredients and blend.
  • Placing the omelet on a top of a green salad is optional. Infuse love and serve the omelet with the sauce (Topping with sliced green onion is optional).
