KALBI (KOREAN BBQ SHORT RIBS)
This is the staple of Korean fine dining, but too expensive in the restaurants. It is also simple to make at home, and will leave your guests asking for more. Total time includes marinating time. Traditionally, should be served sliced, rolled in romaine lettuce leaves, along with white rice, lightly browned garlic slices, and gochujang (Korean red pepper paste).

Steps:
- In a bowl, stir together the soy sauce, brown sugar, water, garlic, green onions, and sesame oil until the sugar has dissolved.
- Place the ribs in a large plastic zipper bag. Pour the marinade over the ribs, squeeze out all the air, and refrigerate the bag for 3 hours to overnight.
- Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Remove the ribs from the bag, shake off the excess marinade, and discard the marinade. Grill the ribs on the preheated grill until the meat is still pink but not bloody nearest the bone, 5 to 7 minutes per side.

KICK'N KOREAN OVEN BBQ RIBS
These Korean-style ribs are a family favorite in the wintertime since we rarely grill. You'll have the whole house saying "mmmm."

Steps:
- Preheat the oven to 250 degrees F (120 degrees C). Line a baking sheet with aluminum foil.
- Mix brown sugar, barbecue seasoning, paprika, sea salt, pepper, and garlic powder together in a bowl.
- Coat both sides of ribs liberally with mustard and then with seasoning mixture. Place ribs onto the prepared baking sheet and cover with additional foil.
- Bake in the preheated oven until meat pulls away easily from the bone, about 2 hours. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Remove from the oven, discard foil, and cover ribs in barbecue sauce. Bake, uncovered, until barbecue sauce begins to caramelize, about 15 minutes. Let rest for 10 minutes before serving.

OVEN BAKED KOREAN BBQ BEEF RIBS
You can use other types of ribs (baby back ribs) but these tend to have more meat on then.

Steps:
- 1. Mix all ingredients except ribs to make marinade.
- 2. Pour the marinade over the meat and make sure it's reaching all parts of the meat. Cover the meat and transfer it to the fridge. Marinate the meat for at least 4 hrs (but ideally for 24 hrs for optimal results).
- 3. Preheat the oven on 100 C/212 F (on fan forced setting) for 20 minutes.
- 4. Lay down some waxed baking paper (or aluminum foil) on a baking sheet (or roasting pan). Then place the marinated rack of ribs. Splash some marinade around the ribs but discard most of sauce.
- 5. Cook it for 8 hrs.
- 6. Take the meat out and carve. Serve.
