This is my favorite way to eat oven-baked Buffalo chicken wings. Tons of flavor! Serve with blue cheese dressing on the side.

2 pounds chicken wings
½ teaspoon salt, or more to taste
⅓ cup all-purpose flour
6 tablespoons unsalted butter
½ cup hot sauce
½ tablespoon red wine vinegar
½ tablespoon Worcestershire sauce
½ tablespoon honey
½ teaspoon garlic powder
¼ teaspoon cayenne pepper
2 stalks celery, sliced, or to taste
2 carrots, sliced, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and coat with nonstick cooking spray.
  • Pat chicken wings dry using paper towels. Season with salt. Place flour in a shallow dish and dredge chicken to lightly coat. Place wings on the prepared baking sheet.
  • Bake in the preheated oven until golden and no longer pink in the centers, 40 to 45 minutes.
  • While wings are baking, melt butter over medium heat in a medium saucepan. Add hot sauce, red wine vinegar, Worcestershire, honey, garlic powder, and cayenne. Let sauce simmer on low heat until wings are done baking, about 40 minutes.
  • Remove wings from the oven and place in a large mixing bowl. Pour sauce over wings; toss until evenly coated. Serve with celery and carrots.

Baking chicken wings is an easy way to save a few calories while not sacrificing flavor. The sauce on these baked wings definitely has a kick. But, it's not too spicy to enjoy. The skin turns nice and crispy (you won't miss the deep frying in this recipe). Grab some blue cheese or ranch for dipping and enjoy!

about 20 chicken wings
1 c all-purpose flour
1/2 tsp paprika
1/2 tsp cayenne pepper
1/2 tsp salt
1/2 c Franks Hot Sauce
1 stick butter (1/2 cup)
dash(es) garlic powder

Steps:

  • 1. In a small bowl mix together the flour, paprika, cayenne pepper, and salt.
  • 2. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated.
  • 3. Cover dish or bowl and refrigerate for 60 to 90 minutes. (I just make it and leave in the fridge until dinner.)
  • 4. Bake on a rack set over a jelly roll pan. I use my cooling cookie racks. That way they are not sitting in their own grease. Spray your rack so the chicken does not stick.
  • 5. Place chicken wings on the wire rack.
  • 6. Preheat oven to 375 degrees and bake for 45 min.
  • 7. Combine the butter, hot sauce, and garlic powder in a small saucepan over low heat.
  • 8. Stir together and heat until butter is melted and the mixture is well blended.
  • 9. Remove from heat and reserve for serving.
  • 10. Place wings in the serving bowl. Add hot sauce mixture and stir together.

PANKO CRUSTED OVEN BAKED CHICKEN WINGS



Panko Crusted Oven Baked Chicken Wings image

I have been playing around with recipes for chicken wings at home and I came up with this. Panko crumbs (found in the Asian aisle or sometimes with the bread crumbs) are very crunchy. Baking the wings is better than frying if you are trying to cut down on fat. These turn out so crunchy, then you can 'spin' or coat them with your favorite sauce. Absorbs into the panko, but still keeps the crispy texture. Reminds me a little of Hooter's breading. Also, try to find Amish wings, they are tastier and usually larger than typical wings. Enjoy!

6 amish chicken wings (tips cut off and cut into wing dings)
1 1/2 cups panko breadcrumbs (Japanese Bread Crumbs)
2 eggs
1/2 cup flour
salt

Steps:

  • Heat the oven to 425.
  • Pour the flour into a shallow bowl or dish and season with salt.
  • Beat the eggs until foamy in a medium sized bowl.
  • Pour the Panko Breading into a shallow bowl or dish. You may need to add more as you go on, use best judgement.
  • Take the wings, rinse and dry well with paper towel.
  • One by one, Dredge in the flour, then dip in the egg. Shake off excess.
  • Place each wing into the Panko crumbs, pressing the crumbs onto the chicken on all sides, coat well. Gently shake off excess.
  • Place breaded wings on a non-stick baking sheet. Bake for 25-30 minutes.
  • When done, flip over and put the broiler on Low for 2 minutes each side. You may want to drizzle a little butter before broiling. Keep a close eye, the breading does not need to be brown like typical bread crumbs, it will be crispy even if it looks white still.
  • While the wings are still hot, put a few good shakes of your chosen sauce into a bowl and coat the wings one by one with the sauce. Let sit for about 5 minutes before serving. Wings are great with no sauce as well.
  • First time trying I used Spicy Szechuan Peanut Sauce Recipe #72983 and loved it as well as some generic Honey BBQ sauce and also some Frank's Red Hot Buffalo Wing sauce and all were great!

2 pounds Chicken wings (tips removed, separated into wingettes and drumettes)
1 tablespoon BAKING POWDER (whatever you do, do NOT use baking soda)
1 teaspoon kosher salt (plus more to taste)
1 tablespoon butter (melted)
1/3 cup hot wing sauce (e.g. Duff's hot sauce)

Steps:

  • Preheat oven to 450F.
  • Dry chicken with a paper towel really well.
  • Place the wings in a large bowl.
  • Sprinkle baking powder over the wings. Toss until all wings are evenly covered in baking powder. Better yet, mix by hand to ensure even coverage.
  • Line a large baking sheet with aluminum foil.
  • Lay parchment on top. Lay the chicken wings on paper leaving space between the wings. Place the baking sheet in the oven. Turn the heat down to 425F and set the mode to convection. Bake for 30-40 minutes, until the wings are nicely browned and crisp. Let the wings rest for 5 minutes. This will preserve crispiness of the skin.
  • Meanwhile, prepare the Buffalo wing sauce by combining the butter and the hot wing sauce in a small bowl. Season the wings with salt and whatever other seasonings you like. Toss with the Buffalo sauce or serve with the sauce on the side.

Found on Pinterest and traced back to Half Baked Harvest. I don't eat meat, but would serve this to my meateaters! I'm going to try the sauce with tempeh or tofu! These are great because you can totally make them in advance (even freeze them in the sauce and let thaw about 30 minutes before popping them back in the oven) and just pop them back in the oven for a few minutes before you are ready to serve. So easy and so perfect.

1 lb boneless chicken tenderloins, cut into nugget-sized pieces (or breasts)
3/4 cup buttermilk
1 1/2 cups panko breadcrumbs
2 tablespoons whole wheat flour (or conrmeal)
1 cup sweet Thai sweet chili sauce
1/3 cup soy sauce
1/4 cup dark brown sugar
1 tablespoon peanut butter
1 tablespoon tomato paste
1/2 cup apple juice
1/4 cup rice vinegar
1 lime, juiced
1 teaspoon fish sauce (optional, but it adds great flavor)
2 coves garlic, minced (or grated)
1 tablespoon fresh ginger, grated
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
1/4 cup fresh cilantro, chopped, plus more for garnish
cashews, chopped, for garnish

Steps:

  • Preheat the oven to 475°F Line a baking sheet with foil and spray or brush it with the olive oil.
  • Add the chicken to a large bowl and pour the buttermilk overtop. Mix well and set aside.
  • In a shallow pie dish or large bowl add the panko, whole wheat flour and a pinch of salt and pepper. Mix well.
  • Remove each piece of chicken from the buttermilk, and dredge through the crumbs, pressing gently to adhere. Place on the prepared baking sheet. Repeat until all the chicken has been used. Make sure not to crowd your pan, if necessary use two baking sheets. Spray each chicken "wing" with non-stick spray or a mist of olive oil.
  • Bake for 10-12 minutes, then gently flip using kitchen tongs and spray the other side. Bake for 10-12 minutes more, then remove from oven. Reduce the oven to 400 degrees F.
  • While the chicken is baking combine the sweet thai chili sauce, soy sauce, dark brown sugar, peanut butter, tomato paste, apple juice, rice vinegar, lime juice, fish sauce, garlic, ginger, crushed red pepper and pepper in a medium sauce pot. Bring the sauce to a boil, reduce heat and simmer 5 minutes or until sauce has thickened slightly. Remove from the heat and stir in the cilantro.
  • Gently toss each piece of chicken in the sauce, draining the excess sauce back in to the pot. Place the chicken back on the pan and repeat until all the chicken is coated in the sauce. When ready to serve place the pan of chicken back in the oven for 5 minutes to warm through and to help the sauce coat the chicken.
  • Serve with fresh cilantro, chopped cashews and any extra sauce for dipping.
  • The chicken "wings" can be made ahead and coated in the sauce. To reheat the "wings" preheat the oven to 350 degrees F. Cook for 10 to 15 minutes or until hot. Serve as directed.

Did I mention I LOVE wings!!??? Probably as I have posted several of my huge collection of wing recipes. This is very good and not as fattening as some of my others although I bake my wings... never deep fry.

1 c dry bread crumbs
1/2 c freshly grated parmesan cheese
1/3 c sesame seeds
1 tsp dried oregano
1/2 tsp each salt and pepper
1/4 tsp cayenne pepper

  • 1. Separate wings into 3 if desired...discard tips. Combine all ingredients except butter. Dip wings in melted butter ; roll in bread crumb mixture. Coat completely. Arrange meaty side down on a a well greased cookie sheet in a single layer. Bake at 375 for 20 minutes, turn and bake 20 - 25 minutes or until golden.
  • 2. Serve with tomato salsa or sour cream. I really like the 3 cheese Ranch dressing with ALL my wings!!! NOTE: You can substitute 1/2 cup of buttermilk for the butter for fewer calories

There is a secret to crispy oven-baked wings, and it isn't baking soda, or any other ingredient. The secret is time... time for the wings to air dry in the fridge. If you have the time, you will not regret the results. So, you ready... Let's get into the kitchen.

THE WINGS
3 tablespoon(s) salt, kosher variety
1 quart(s) water
6 - chicken wings, separated, with the tips frozen and reserved for making stock
3 tablespoon(s) grapeseed oil
- salt, kosher variety, to taste
- black pepper, freshly ground, to taste
THE SAUCE
1/4 cup(s) water
1/4 cup(s) fresh clover honey
2 tablespoon(s) tamari sauce, or liquid aminos
2 clove(s) garlic, minced
1 ounce(s) fresh ginger, peeled, and thinly sliced

Steps:

  • PREP/PREPARE
  • Gather your Ingredients (mise en place).
  • Add the salt to the water, and brine the chicken wings for 3 - 4 hours.
  • Remove from the brine rinse, and place on a wire rack, fitted into a baking sheet.
  • Place in the refrigerator overnight to air dry.
  • Place a rack in the middle position, and preheat the oven to 400f (205c).
  • Toss the air-dried wings in a bowl with the grapeseed oil, salt and pepper.
  • Place the wings on a parchment-lined baking sheet, fitted with a wire rack.
  • Place the wings in the preheated oven, and bake until beginning to brown, about 35 - 40 minutes.
  • While the wings are baking, add all the sauce ingredients to a small saucepan, over medium-low heat.
  • Cover and allow to simmer for 20 minutes.
  • Remove from heat, and strain, to separate the solids from the sauce.
  • Return the strained liquid to the pan, and place over medium heat.
  • Allow to simmer until it begins to thicken, about 5 - 8 minutes.
  • Chef's Note: The consistency of the sauce should be like maple syrup.
  • Remove the wings, and toss with the sauce.
  • Place the wings back on the baking sheet, and return to the oven for 5 - 7 minutes.
  • Chef's Note: Halfway through the baking process open the oven, and brush with the remaining sauce.
  • Bake until the wings are a golden brown.
  • PLATE/PRESENT
  • Serve while still nice and warm. Enjoy.
  • Keep the faith, and keep cooking.

ZESTY OVEN-BAKED CHICKEN WINGS WITH ALABAMA WHITE SAUCE

3 pounds chicken wings/drummettes
1 tablespoon baking powder
1 tablespoon kosher salt
2 teaspoons smoked paprika
2 teaspoons cumin
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 teaspoon chili powder
1 teaspoon light brown sugar
1 teaspoon lemon zest
1 teaspoon mustard powder
1 cups mayonnaise
3/8 cup apple cider vinegar
1 1/2 teaspoons horseradish
1 teaspoon black pepper
1/2 teaspoon kosher salt
1/4 teaspoon mustard powder
1/4 teaspoon cayenne pepper
1 tablespoon lemon juice

Steps:

  • Line a rimmed baking sheet with aluminum foil and set a wire rack inside. Dry chicken wings as much as possible by blotting with paper towels. Place wings in a large bowl and set aside.
  • In a small bowl, whisk together baking powder, salt, smoked paprika, cumin, garlic powder, onion powder, chili powder, brown sugar, lemon zest, and mustard powder. Sprinkle the spice mixture all over the wings, tossing to coat evenly. Place wings on the prepared wire rack, leaving a bit of space between each piece for the air to circulate.
  • Refrigerate wings, uncovered, at least 8 and up to 24 hours.
  • Meanwhile, for the Alabama White Sauce: In a large bowl, whisk together mayonnaise, cider vinegar, horseradish, black pepper, salt, mustard powder, and cayenne pepper. Whisk in lemon juice to taste. Cover and refrigerate at least 1 hour.
  • Adjust oven rack to upper-middle position and preheat oven to 450°F (230°C). Bake the chicken wings for 20 minutes, flip, then continue to cook until crisp and golden brown, about 30 minutes longer, flipping a few more times towards the end.
  • Serve the wings with the Alabama white sauce

1/3 cup fresh lime juice
1/3 cup vegetable oil
1 1/2 tsp Tabasco
3/4 tsp cayenne
3/4 tsp dried oregano
3/4 tsp ground cumin
3 garlic cloves minced
1/2 onion minced
18 chicken wings about 3lbs, split if desired
1 cup yellow cornmeal
1/2 cup parmesan cheese finely grated, dry
1/2 tsp paprika
1/2 tsp salt
1/4 tsp black pepper freshly ground
1 tbsp fresh parsley leaves minced
2 large eggs
2 tbsp fresh lemon juice

Steps:

  • In a large bowl whisk together the lime juice, the oil, the Tabasco, the cayenne, the oregano, the cumin, the garlic, and the onion. Add the chicken wings, stir to coat them with the marinade, and let them sit chilled for three hours. Create an egg wash by beating the two eggs with 2 tbsp of cold water and the 2 tbsp of fresh lemon juice. In a large bowl, combine the cornmeal, the Parmesan, the paprika, the salt, the black pepper, and the parsley. Remove the wings from the marinade, allow excess liquid to drip off, then dip them briefly in the egg wash before coating them with the cornmeal mixture (one at a time). Arrange the wings in one layer on a rack and let them rest for 30 minutes. Place the wings, skin side up, on a rack on a baking sheet or else directly on a lightly oiled baking sheet. Preheat oven to 425 degrees F and bake wings for 35-45 minutes or until golden and crispy. Transfer wings to paper towels to drain (if you didn't use a rack to drain grease while baking). Serve the wings warm or at room temperature.

  • To prepare the sauce, place all the ingredients listed above into a small bowl and mix until well incorporated. Cover with plastic wrap and refrigerate for 8 hours, or overnight. To prepare the wings, place the wings, pepper, celery salt, and ranch seasoning in a large plastic bag. Close the bag and shake it really well until all the wings are evenly coated. Refrigerate and marinate overnight, or at least 8 hours. Place the oven rack in the middle and preheat to 400°F. Line a baking sheet with aluminum foil and lightly grease with oil spray. Remove the wings from the plastic bag and place them on the prepared baking sheet in a single layer. Bake until cooked through, and the skin is crispy, 40-45 minutes. Let them rest 3-4 minutes. Place the wings into a large bowl and add half the sauce. Toss until evenly coated. Serve with the remaining sauce on the side for dipping.
