CHEESY HASH BROWNS CASSEROLE
Another recipe from my famous gourmet chef mother, hence I'm "la petite" to follow in her fabulous footsteps! This side is AWESOME, we've had it with dinner or breakfast, it's so good anytime of the day! YUM!

Steps:
- Preheat oven to 350°F.
- In a large bowl, combine hash browns, 1/2 cup melted butter, cream of chicken soup, sour cream, chopped onion, cheddar cheese, salt-n-pep.
- Place mix in a 3 quart casserole dish.
- In a med. saucepan over med. heat, saute cornflakes in 1/4 cup melted butter, and sprinkle the mix over the top of the casserole.
- Back covered in preheated oven for 40 minutes.

FRENCH ONION CASSEROLE
I have had this recipe for years and don't remember where I got it. Some times I like to replace the sliced onions with pearl onions instead.

Steps:
- Cook onions in butter, just until tender.
- Blend in flour, salt, and pepper.
- Add bouillon and sherry.
- Cook and stir until thickened and bubbly.
- Turn into 1 quart casserole.
- Toss croutons with 2 tablespoons melted butter and spoon on the onion mixture, evenly.
- Sprinkle with Swiss cheese and Parmesan if desired.
- Put in oven under broiler and broil for about 1 minute until the cheese melts.
- Serve immediately.

VICTORIAN HOUSE BREAKFAST HASH BROWNS CASSEROLE
This casserole is served at the Victorian House Bed & Breakfast in Smiths Grove near where I went to college. One of my professors and her husband were friends of the owners and passed this recipe on to us when she made it in class. It was delicious.

Steps:
- Heat oil in large skillet.
- Add hash browns, onion, and bell peppers.
- Cook until potatoes begin to brown.
- Spray 9" x 13" baking dish with Pam.
- Spread potato mixture in pan.
- Top with ham.
- Pour beaten eggs over all and season to taste with salt and pepper.
- Gently stir to coat all ingredients with eggs.
- Sprinkle with cheese.
- Refrigerate overnight.
- Bake uncovered at 375 degrees for 35 minutes.

This recipe is a friend's grandma's recipe and is absolutely the best hash brown casserole I've ever had. Kentucky grandmas sure know how to cook!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.
- Bake in the preheated oven until the sauce is bubbly and the top is golden brown, 1 to 1 1/2 hours.

CC'S FRENCH ONION CASSEROLE
Put this together in the morning so can have a wonderfully different side dish that evening. Delicious companion with any beef, particularly steaks or roasts.

Steps:
- Cut onion in half from top to bottom, then with cut side down, slice moderately thinly.
- Melt butter in a large skillet over medium-high heat, cook onions and mushrooms, stirring constantly until tender.
- Spoon onion/mushroom mixture into lightly greased 2 quart baking dish.
- Sprinkle with 1 cup of cheese.
- Combine soup, milk and worcestershire sauce and pour over cheese.
- Top with bread slices and sprinkle with remaining cheese.
- Cover and refrigerate for 4 to 8 hours.
- Remove baking dish from refrigerator and let stand at room temperature for 30 minutes.
- Bake covered at 375º for 30 minutes.
- Uncover and bake 15 to 20 additional minutes or until thoroughly heated.
- Let stand 5 minutes before serving.
NO ONION HASH BROWNS CASSEROLE
I never liked hash brown casserole until I tried this recipe at my neighbors house. This comes out great every time and I can eat on it for a week by itself! I'm sure you could add in things like bacon, sausage, etc as well, but I never have. This makes a large casserole. I hope you enjoy this as much as I if you try it!

Steps:
- Preheat oven to 350°F.
- Grease a large casserole dish (I usually just spray with Pam).
- Combine hash browns, 1/2 of the butter, soup, sour cream, and cheese. (I usually do this right in the cassarole dish). Note: I only use 1/2 the amount of butter the recipe calls for & use margarine with no ill effects.
- In a separate bowl combine Corn Flakes and remaining 1/2 of butter.
- Spread on top of casserole.
- Bake at 350°F covered for 45 minutes and then uncovered for 15 minutes.
- Let sit for 5 minutes after removing from oven.
- Enjoy!
- Note 2: I usually use reduced fat sour cream and soup in this with no ill effects. (Just to make it a little more "hip" friendly" -- lol).
- Note 3: When reheating doing so in the oven maintains the crisp topping & makes it taste almost-freshly made :).
