Steps:

  • Cook 3 minced garlic cloves and 1/2 teaspoon each minced rosemary and kosher salt in 2 tablespoons olive oil in a saucepan over medium heat, 1 minute. Add 1 cup orzo; toast, stirring, 2 minutes. Add one 14-ounce can cherry tomatoes and 2 cups chicken broth. Bring to a boil, then reduce the heat to low. Cover and cook, stirring, until the orzo is tender, 7 minutes. Stir in 2 tablespoons pecorino.

I had some heirloom cherry tomatoes and shrimp that I needed to use so looked around to see what else I had on hand. This is what I came up with. I hope you enjoy it as much as we did.

1 lb whole wheat orzo
1 lb large shrimp, peeled and deveined.
1 tsp hot smoked spanish paprika, (do not use hungarian).
1/2 tsp salt, or to taste
3 Tbsp fresh lemon juice and the zest from 1 lemon.
1/4 c extra-virgin olive oil, plus extra for sautéing the shrimp.
8 kalamata (greek) olives, quartered
1 c baby spinach, chopped
8 oz cherry tomatoes, sliced in half
6 oz greek feta, crumbled

Steps:

  • 1. Shrimp: Mix the 1 tsp. Spanish hot smoked paprika and the 1/2 tsp. salt in a small bowl. Pat the shrimp dry and put them into a small bowl. With your fingers, evenly distribute the spice mixture onto the shrimp. Heat a small amount of olive oil in a skillet over medium-high heat. Pour in the shrimp and saute until pink and cooked through. Remove from the pan and set aside.
  • 2. Bring a large pot of water to boiling: Add 2 tbsp. salt and the Orzo and cook until just al dent, 8-10 minutes.
  • 3. Meanwhile: Zest the lemon and measure about 3 tbsp. of juice into a large bowl. Whisk in the 1/4 cup of olive oil and salt and freshly ground pepper to taste.
  • 4. When the orzo is done: Drain it into a fine mesh colander, shake out the excess water and dump it into the bowl with the dressing. Mix very thoroughly and add chopped spinach mixing well until spinach begins to wilt. Let cool.
  • 5. When cool: mix in shrimp with accumulated juices, kalamata olives, cherry tomatoes and feta. Adjust seasoning with salt and freshly ground pepper and serve. Can be refrigerated and served later.

1 cup orzo pasta
1 (5 ounce) bag baby spinach leaves
2 garlic cloves
1 cup cherry tomatoes
1 tablespoon lemon zest
3 tablespoons lemon juice
2 tablespoons extra virgin olive oil
1/8 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook Orzo according to package directions, until just al dente.
  • Mince garlic, add to lemon juice, salt and pepper in small bowl.
  • Whisk olive oil into lemon juice mixture.
  • Drain orzo, place in large bowl.
  • Add spinach leaves and cherry tomaotes to orzo, toss.
  • Add olive oil/lemon juice dressing and toss to coat.
  • Serve immediately or chill for later.

1 whole garlic bulb
1 teaspoon plus 1 tablespoon olive oil, divided
1-3/4 cups uncooked whole wheat orzo pasta
2-1/2 cups chicken stock
3 ounces reduced-fat cream cheese, cubed
1 package (9 ounces) fresh spinach, trimmed and chopped
1/4 cup shredded Asiago cheese
1/4 cup fat-free milk
1 teaspoon salt-free garlic pepper seasoning blend
1/4 teaspoon salt
2 tablespoons minced fresh parsley

Steps:

  • Preheat oven to 425°. Remove papery outer skin from garlic bulb but do not peel or separate the cloves. Cut off top of garlic bulb, exposing individual cloves. Drizzle cut cloves with 1 teaspoon oil. Wrap in foil. Bake 30-35 minutes or until cloves are soft. Unwrap. When cool enough to handle, squeeze garlic from skins., In a Dutch oven, heat remaining oil over medium-high heat. Add pasta; cook and stir 2-3 minutes or until lightly browned. Add stock; bring to a boil. Reduce heat; simmer, covered, 10-12 minutes or until pasta is tender and liquid is absorbed., Stir in cream cheese until melted. Add spinach, Asiago cheese, milk, seasoning blend, salt and roasted garlic; cook and stir until spinach is wilted. Sprinkle with parsley.
