ASPARAGUS, SUNDRIED TOMATO, AND ORZO SALAD



Asparagus, Sundried Tomato, and Orzo Salad image

A yummy and simple way to use fresh asparagus. I was inspired to write this recipe after watching my almost-4-year-old picky eater gobble up a mixture of orzo and sundried tomatos at Trader Joe's. The asparagus can easily be changed to another vegetable; I have successfully used brussels sprouts with a very pleasing result.

1 bunch asparagus, aprox. 1 lb
1 tablespoon extra virgin olive oil
2 -3 garlic cloves, chopped
1 dash sea salt
6 ounces orzo pasta
6 sun-dried tomatoes packed in oil
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh parsley
1 tablespoon oil from tomatoes
1 tablespoon balsamic vinegar

Steps:

  • Preheat oven to 430 f. Wash asparagus, trim off woody ends, and then cut asparagus spears into 1 inch pieces. Combine in a baking dish with olive oil, garlic, and salt. Roast asparagus in oven for ~15 minutes, until just fork tender. Let cool slightly.
  • Cook orzo in salted water, according to package directions.
  • Cut tomatoes into small pieces or slices.
  • Combine all ingredients and mix well.

1 cup(s) orzo pasta, uncooked
1 bunch(es) asparagus, fresh
2 tablespoon(s) sun dried tomato pesto
1 tablespoon(s) butter
1 tablespoon(s) olive oil
3 - garlic cloves
1/2 cup(s) parmesan cheese

Steps:

  • cook orzo until al dente(firm to taste)...rinse and set aside
  • in a large pan add olive oil & butter on medium high..cut asparagus into bite size pieces and smash the garlic cloves..add to pan, saute about 5 mins.
  • add in the Orzo & Sun Dried tomato pesto, stir , then finish with parmesan cheese...garnish with parsley

1 small red onion, sliced
4 - garlic cloves, smashed
1 bunch(es) asparagus, fresh
4 tablespoon(s) butter
1 tablespoon(s) olive oil
1/4 cup(s) sun dried tomatoes, packed in oil
1/4 cup(s) feta cheese, crumbled
- salt/pepper to taste

Steps:

  • Boil pasta al dente ( firm to taste) rinse and set aside.
  • in a saute pan, put butter, olive oil on medium heat...add red onions, cut up asparagus, smashed garlic, & sun dried tomatoes, also chopped up
  • cook for about 5 mins...till dente
  • add to drained Orzo and combine...add salt & pepper to taste...add the crumbled feta and gently combine....can be served warm or cold...yum

8 ounces medium pasta shells
1 lb asparagus, trimmed
2 tablespoons olive oil
kosher salt & freshly ground black pepper, to taste
1/2 cup basil pesto
1/3 cup julienned sun-dried tomato packed in oil, drained
8 ounces fresh mozzarella cheese, in small cubes

Steps:

  • Preheat oven to 425 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
  • In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
  • Place asparagus in a single layer onto the prepared baking sheet. Drizzle with olive oil, salt and pepper, to taste; gently toss to combine. Place into oven and roast for 8-12 minutes, or until tender but crisp. Let cool before cutting into 1-inch pieces.
  • In a large bowl, combine pasta, asparagus, pesto, sun dried tomatoes and mozzarella.

  • Cook 1 cup orzo as the label directs. Drain, reserving 1/4 cup cooking water. Toss the orzo and cooking water with 2 cups baby arugula, 1/4 cup each chopped sun-dried tomatoes (not oil-packed) and parmesan, 2 tablespoons butter and 1 teaspoon lemon zest; season with salt and pepper.
