24 dried longan
24 goji berries
4 pieces sea bass (6 ounces each)
1/2 red bell pepper, seeded, ribs and stems removed, and julienned
1/2 green bell pepper, seeded, ribs and stems removed, and julienned
8 shittake mushrooms, cleaned, stems removed, and julienned
1-inch piece ginger, peeled and julienned
Freshly ground white pepper
Origami Sauce
2 teaspoons sesame oil

Steps:

  • Preheat oven to 375 degrees.
  • In a small bowl mix together dried longan with 1 cup water; set aside until plump. In another small bowl, mix together goji berries with 1 cup water; set aside until plump.
  • Place one half of each of the parchment paper boxes on a baking sheet; set aside. Place fish pieces on a cutting board with a long end facing you. Cut fish horizontally stopping about 1/2 inch before reaching the opposite side. Open cut fish like a book.
  • Place one piece of fish in the center of each box. Divide peppers, mushrooms, ginger, dried longan, and wolfberries evenly between each box; season with pepper. Top each with 2 tablespoons of Origami Sauce. Drizzle 1/2 teaspoon around each piece of sea bass.
  • Cover boxes with remaining half of parchment paper boxes. Transfer baking sheet to oven and roast until fish is cooked through, 10 to 12 minutes. Serve sea bass immediately in their boxes.

SIMPLE OVEN-BAKED SEA BASS

If you're looking for a simple recipe that really preserves the delicate flavor of sea bass, then I highly recommend you try this one. You can try this with other types of fish but my version used a Chilean sea bass. The original recipe came from SparkRecipes and this is my simplified version of it. Enjoy!

1 lb sea bass (cleaned and scaled)
3 garlic cloves, minced or crushed
1 tablespoon extra virgin olive oil
1 tablespoon italian seasoning or 1 tablespoon fresh parsley leaves
2 teaspoons fresh coarse ground black pepper
1 teaspoon salt
2 lemon wedges
1/3 cup white wine vinegar (optional) or 1/3 cup white wine (optional)

Steps:

  • Preheat oven to 450F°.
  • In a cup, mix garlic, olive oil, salt, and black pepper.
  • Place fish in a shallow glass or ceramic baking dish.
  • Rub fish with oil mixture.
  • (Optional) Pour wine over fish.
  • Bake fish, uncovered, for 15 minutes; then sprinkle with parsley or Italian seasoning and continue to bake for 5 more minutes (or until the thickest part of the fish flakes easily).
  • Drizzle remaining pan juices over fish and garnish with lemon wedges.
  • Enjoy!

3 tablespoons extra-virgin olive oil
4 (6-ounce) fillets black sea bass or striped bass (1/2 to 1 1/4 inches thick) with skin
3/4 teaspoon salt
1/4 teaspoon black pepper
8 thin lemon slices (less than 3/4 inch thick; from 1 large lemon)
8 sprigs fresh thyme
2 garlic cloves, very thinly sliced
12 cherry or grape tomatoes, halved
1 1/2 tablespoons drained bottled capers

Steps:

  • Put oven rack in middle position and preheat oven to 400°F. Line a large baking sheet with foil, then drizzle with 1 tablespoon oil.
  • Pat fish dry and sprinkle both sides with salt and pepper. Arrange fillets, skin sides down, in 1 layer in center of foil on baking sheet and slide 2 lemon slices under each fillet. Arrange 2 thyme sprigs on top of each fillet.
  • Heat remaining 2 tablespoons oil in a 10-inch heavy skillet over moderately high heat until hot but not smoking, then sauté garlic, stirring occasionally, until pale golden, about 30 seconds. Add tomatoes and a pinch of salt and sauté, stirring occasionally, until tomatoes are softened, about 1 minute. Stir in capers.
  • Spoon hot tomato mixture over fish, then cover with another sheet of foil, tenting it slightly over fish, and crimp edges together tightly to seal.
  • Bake until fish is just cooked through, 12 to 15 minutes (depending on thickness of fish); check by removing from oven and carefully lifting up a corner of top sheet of foil, pulling up sides of bottom sheet to keep liquid from running out. If fish is not cooked through, reseal foil and continue to bake, checking every 3 minutes.
  • Transfer fillets with lemon slices to plates using a spatula (be careful not to tear foil underneath) and spoon tomatoes and juices over top. Serve immediately, discarding thyme before eating.
