- Prepare rice and edamame according to package directions., In a large bowl, combine the salad greens, rice and edamame. Drizzle with salad dressing and toss to coat. Divide salad mixture between 2 plates; top with orange segments, radishes and almonds.

CHINESE LETTUCE SALAD
Steps:
- 1. Brown the Ramen noodles (broken up), sesame seeds and almonds in the butter. When done pour onto a cookie sheet covered with paper towels and let cool.
- 2. Cut up lettuce and onions into a big bowl.
- 3. Mix up the dressing ingredients and refrigerate. I use a Tupperware shaker container for the dressing. Just before serving, pour dressing over lettuce and onions. Then top with the noodle mixture.

- Combine almonds, chow mein noodles and sesame seeds in a baking pan. Bake, uncovered, at 350° for 8-10 minutes or until lightly toasted; set aside. , In a jar with tight-fitting lid, combine oil, sugar, vinegar, salt and pepper; shake well. In a large bowl, toss lettuce, onions and bacon. Just before serving, add almond mixture and dressing; toss.

- Wash and tear lettuce into a bowl, add carrots, peppers, celery to bowl and toss.

ORIENTAL THREE LETTUCE SALAD
I had to have this recipe after eating this at my uncle's birthday party on the 4th of July. It is really good! I was not sure of the size of the package of Ramen noodles, so I estimated. It is the standard small rectangle package.

Steps:
- Add vinegar, sugar, and soy sauce into a jar and shake until sugar is dissolved. Add oil and shake. Sometimes I cut back on the amount of oil and sugar and use 1/2 cup of each. Just a matter of taste.
- Saute ramen noodles and walnuts in margarine until slightly golden. Drain and cool.
- Combine lettuce, green onion, and topping in a large bowl. When ready to serve, shake dressing and pour on salad, then serve. Do not put dressing on until ready to serve. Dressing will being breaking down the lettuce.
