ORIENTAL RAMEN COLE SLAW SALAD
This is an excellent recipe I got from my grandmother who has been making this for years. It's always a hit, especially at potlucks. Even my husband likes it and he isnt a cole slaw eater! Instead of sunflower seeds cashews can be added as a variation.

Steps:
- For the dressing, combine vinegar, vegetable oil, sugar and the two flavor packets from the ramen noodles, set aside.
- In a large bowl, combine cole slaw mix, crushed ramen noodles and sunflower seeds.
- Pour dressing mixture over salad and toss well to coat.
- Cover and let it sit for 2 to 3 hours in the fridge.
- Enjoy!

- I have had this with the noodles cooked and with them raw. Raw noodles gives the slaw more crunch, but I prefer them cooked. You can still have crunch with the seeds and nuts.
- Either way, mix together the slaw ingredients in a large container. Whisk together the dressing ingredients and pour over the slaw mixture. Toss together. Cover and refrigerate for an hour.
- If you're impatient you can eat it right away. Keeps for a few days, but it's never around long enough in my house to really find out it's shelf life.

ORIENTAL RAMEN BROCCOLI SLAW
This recipe originally called for regular prepacked coleslaw, but I really like broccoli, so I adapted it. It also called for 2 packages of noodles (any flavor), but I wanted something more veggie-intensive. And, it used 3/4 cup of oil and real sugar each, which I found to be overpowering and too oily. You may use any flavor ramen noodle you like (though probably not creamy varieties). This makes a nice, light salad that is great for picnics.

- Combine dressing ingredients in a jar and shake until combined.
- Cook and drain the ramen noodles, then run under cold water to cool.

ORIENTAL CABBAGE SLAW
Great recipe that my mom passed on to me from her bridge club. I've taken it to many pot luck events and I've learned to take copies of the recipe with me because there's always someone who asks for it! It's especially terrific on these hot Texas summer days. I also love the fact that I can make it in advance if necessary and then mix it all together just before serving.

- For the slaw, mix the ingredients together and store in an airtight container in the refrigerator.
- For the noodles, crumble the Ramen Noodles into melted margarine in a skillet and brown with the almonds and sesame seeds for approximately 3 minutes. Store in a container in the refrigerator.
- For the dressing, mix the ingredients together and store in the refrigerator.
- Just before serving, mix all of the ingredients together. If the noodles have been stored in the refrigerator for a while, you may need to let them sit out a few minutes or zap for about 15 seconds in the microwave for the margarine to soften up.

This is a very good side dish to go with most any meal. It is very flavorful and has a nice crunch. It's even good on a sandwich. It's very easy to half the recipe if you don't need this large amount, but it is very good left over.

- 1. Melt butter in fry pan, add almonds, sunflower seeds and ramen noodles and toast all until slightly browned. Cool. Mix oil, brown sugar, vinegar, seasoning packet, and salt/pepper in small bowl. Mix well with whisk. In a mixing bowl add broccoli slaw and cooled toasted mix. Pour dressing over, mix well. Garnish with chopped green onion/s. Refrigerate for a few hours before serving.
