ORIENTAL RAMEN BROCCOLI COLESLAW
This recipe comes from my Aunt. Someone from their church had sent over this dish while I was in visiting my family. We all had a fit over it. Wanted to share and have for my own reference too. NOTE: Can use Splenda in place of sugar

Steps:
- Before opening noodles, crush into 1 inch pieces. Open packages and set aside flavor packets.
- Place noodles in bottom of large serving bowl. Top noodles with broccoli slaw, then sprinkle with almonds and sunflower kernels, and green onions.
- In a separate bowl combine sugar, oil, vinegar, and flavor packets from noodles. Pour over slaw, cover and chill up to 24 hours.
- Toss before serving.

- 1. Chop up your 2 different cabbages
- 2. Mix the ingredients of your salad dressing and pour into a glass jar w/lid and shake till it is combined or use a wire whisk to combine.
- 3. Add all your ingredients for your salad except for sesame seeds and toss together in a bowl.
- 4. Pour some of your dressing over salad and toss and then decide if you need more or not. Just before serving add your sesame seeds to the top for garnish.
- 5. If I am taking this salad to serve at a picnic I wait about an hour before serving to add the ramen noodles and sesame seeds on top. Here is the finished salad we served today for the 4th of July at my parents camp in Cooks Forest. It is such a colorful and crunchy salad.

- 1. In a container with a tight lid, combine the oil, sugar, and vinegar with the contents of the seasoning pack(s).
- 2. Place slaw in large bowl. Crush the ramen noodles add the almonds and sunflower seeds. Cover the container and shake well to blend the dressing
- 3. Pour the dressing over the salad, add the sunflower seeds and almonds, and toss to combine.
- 4. Let Oriental Coleslaw set in fridge for about 30 minutes before serving (just as good the next day too).

- Add to cabbage onions and broken noodles.
- Pour dressing over cabbage mixture.

- Put ramen noodles in large ziplock bag and pound with mallet until broken into small pieces. Add sunflower seeds and almonds to same ziplock bag.

HOLIDAY ORIENTAL COLESLAW
Something a little different to serve at the holidays. All dressing ingredients can be adjusted to taste. You can decrease the vegetable oil to 1/4 cup and increase sesame oil by 1 tablespoon. Also you can just use one package of store-bought pre-shredded coleslaw mix in place all other coleslaw ingredients, purchasing the ready-made coleslaw mix will decrease prep time. adding in chopped green onions and cranberries. Of coarse this can be made anytime of the year omitting the cranberries!

- In a small bowl wisk together oil, rice vinegar, soy sauce, brown sugar, garlic, ginger, sesame oil and black pepper; whisk until the sugar has dissolved.
- Steam or cook the snow peas if using for 2 minutes or until crisp-tender; drain and plunge into ice water, or very cold water, then drain and pat dry with a paper towel.

- Preheat oven to 350 degrees F. On a large baking sheet with edges, combine almonds, sunflower seeds, crushed Ramen noodles. Lightly spritz with vegetable oil spray. Roast for 10 minutes. Let cool. In a large bowl, combine coleslaw and green onions. Add almond mixture and combine. In a jar or small bowl, combine oil, sugar, vinegar, black pepper, soy sauce and seasoning packet from the ramen noodle mix. Whisk until thoroughly blended. Just before serving, pour dressing over salad; toss to coat evenly. Serve immediately.
