I had this recipe at a party and immediately loved it. Whenever I make it, it's always a hit. Sometimes I add a cooked chicken breast to the salad and make a meal out of it.

2 tablespoons soy sauce
1/4 cup cider vinegar
1/2 cup sugar
3/4 cup oil
1 head napa cabbage, clean and chop
1 bunch green onion, chop
1/3 cup sesame seeds
1/2 cup almonds
2 packages ramen noodles
1 tablespoon oil

Steps:

  • Combine soy sauce, vinegar, sugar and oil in a small saucepan and cook over medium heat until sugar dissolves.
  • Remove from heat and cool.
  • (Can be made a day in advance,) Refrigerate until ready to use.
  • Break up Ramen noodles (discard seasoning packets or save them for another use).
  • Saute noodles, almonds and sesame seeds in oil until they brown.
  • Stir often.
  • Remove from heat.
  • Combine cabbage, onions and noodle mixture.
  • Toss with the dressing about 20 minutes before serving (this allows the noodles to soften).

While sailing the Sea of Cortez, with not a leaf of lettuce in sight, I came up with this recipe one night. A welcomed change from tacos and burritos! Shrimp or chicken can be added to make a complete meal!

3 -4 cups finely sliced cabbage
1/2 cup shredded carrot
1/2 cup green onion, sliced
1/4 cup celery, diced
3/4 cup sliced almonds
2 tablespoons sesame seeds
2 tablespoons butter
1/4 cup sugar
1 teaspoon sesame oil
1/3 cup peanut oil (vegetable oil can be substituted)
1/3 cup rice wine vinegar
1 1/2 tablespoons soy sauce (adjust to taste)
2 tablespoons minced candied ginger
1 cup chow mein noodles

Steps:

  • In a large bowl, mix cabbage, onions, carrots, green onions and celery.
  • Melt butter in small sauce pan and saute almonds and sesame seeds until golden brown (watch carefully as they will quickly burn).
  • Remove from heat and add, sugar, oils, vinegar, soy sauce and minced ginger.
  • Cool slightly.
  • Pour dressing over vegetables.
  • Sprinkle noodles on top and serve.

1 cup canned unsalted chicken broth
1 1/2 pounds skinless boneless chicken breasts, well trimmed
4 ounces snow peas, trimmed
1/3 cup rice wine vinegar
1/4 cup chopped fresh cilantro
1/4 cup low-sodium soy sauce
3 tablespoons minced fresh ginger
4 large garlic cloves, minced
2 teaspoons minced jalapeño chili (with seeds)
1 teaspoon oriental sesame oil
1 1-gram packet low-calorie sugar substitute
5 1/4 cups sliced Napa or green cabbage
4 1/4 cups sliced red cabbage
2 cups sliced mushrooms
1 1/2 cups grated carrots
1 cup chopped green onions

Steps:

  • Bring broth to simmer in heavy large skillet over medium heat. Add chicken and simmer until just cooked through, about 7 minutes. Transfer to work surface to cool. Add snow peas to broth and cook until tender, about 3 minutes. Using slotted spoon, transfer peas to bowl of cold water. Drain. Set aside.
  • Boil broth until reduced to 1/3 cup, about 7 minutes. Transfer to bowl; cool.
  • Combine vinegar, cilantro, soy sauce, ginger, garlic, chili, sesame oil and sugar substitute in medium bowl. Whisk in reserved broth.
  • Place cabbages, mushrooms, carrots and onions in large bowl. Pour dressing over and toss to combine.(Can be made 6 hours ahead. Cover; chill.)

This is a low carb spin off of the Ramen Oriental Salad. I love this salad and have enjoyed it with grilled chicken and sauteed shrimp to make a meal out of it.

2 cups green cabbage (shredded or sliced thin)
1 cup red cabbage (shredded or sliced thin)
1/2 cup soy sauce
1/2 cup oil
1/8 cup white vinegar
1/8 cup sugar substitute (I use splenda, you can also use real sugar)
1/4 cup scallion (3 stalks green onions, white and green part sliced)
1/2 cup almonds (sliced)
1/4 cup sesame seeds
1 tablespoon sesame oil

Steps:

  • Place the green and red cabbage in a large bowl and set aside.
  • In a small sauce pan, heat the soy sauce, oil and vinegar on medium high heat just until the mixture comes to a light boil. Whisk in the splenda and set aside.
  • In a small saute pan, heat the sesame oil, almonds and sesame seeds on medium high. Toast the almonds and seeds stirring constantly until the sesame seeds start turning golden brown. Immediately pour the nuts and seeds into the soy sauce mix and stir.
  • Add in the scallions, and then pour the dressing over the salad. Toss the salad until the dressing is completely incorporated.
  • Allow the salad to sit at room temperature for at least 30 minutes before serving up to 4 hours.

1 (16 ounce) bag coleslaw mix (or 1 medium head cabbage, thinly sliced and chopped)
1 bunch scallion, thinly sliced
1 (3 ounce) package ramen noodles, broken up (Your favorite flavor!)
1 -2 cup diced cooked chicken breast
1/2 cup canola oil (or vegetable oil)
2 tablespoons sesame oil
3 tablespoons rice wine vinegar
3 tablespoons sugar
1 teaspoon salt
1/4 teaspoon white pepper
2 1/2 tablespoons toasted sesame seeds
1/2-1 cup toasted slivered almonds

Steps:

  • Combine cabbage, scallions, ramen noodles (reserve ramen flavor packet for dressing) and chicken; refrigerate for up to six hours.
  • Just before serving shake together canola oil, sesame oil, rice wine vinegar, sugar, salt, pepper, and ramen flavor packet; pour dressing over salad and toss; add sesame seeds and almonds; toss until evenly mixed.
  • NOTE: I like to make the salad and salad dressing seperately a few hours in advance of whatever party I'm going to ~ I just dress the salad at the last minute so that it stays nice and crunchy.

Texture and taste means so much to the visually impaired and visual appeal to the sighted. I have tried to accomplish all with this recipe. No almonds, onions or bok choy or napa cabbage--just green cabbage. Enjoy!

2 (3 ounce) packages oriental-flavor instant ramen noodles
1 1/2 cups unsalted Spanish peanuts, whole, with skins
1/2 teaspoon salt or 1/2 teaspoon salt substitute
1/4 cup margarine
3 cups green cabbage, coarsely shredded
3 cups fresh spinach, stemmed, chopped
5 -6 red radishes, sliced
2 stalks celery, thinly sliced, save leaves for garnish
3/4 cup evaporated milk
2/3 cup white vinegar
2/3 cup vegetable oil
2 tablespoons brown sugar or 2 tablespoons Splenda brown sugar blend
2 teaspoons kikomen soy sauce
1/2 teaspoon kraft creamy horseradish sauce (optional)

Steps:

  • In large frying pan melt margarine. Coarsely crush the ramen noodles in the package before opening. (Save the flavor packets).
  • Add the crushed noodles to the melted butter. Add the peanuts and sprinkle the salt and stir until lightly to dark brown.
  • Do not burn. Set aside.
  • Throw the shredded cabbage and spinach in large serving plates or bowl. Add radishes and celery. Lightly toss.
  • In blender add milk, vinegar, oil, brown sugar, soy sauce, seasoning packets and horseradish sauce if desired. Pulse a few times.
  • Spoon the peanut and noodles on the spinach/cabbage mixture and mix or leave on the top.
  • Drizzle or spoon the dressing on top.
  • Note: I wash all my fresh veges with ice cold water and a dab of bleach. Let them set for a few minutes. Drain the water, rinse the veges and put loose ones in a salad spinner. I have done this since 1963 when we were in another country and I have never stopped. It is safe.

1/2 head green cabbage, thinly sliced
2 green onions, chopped
2 tablespoons sesame seeds, toasted
2 tablespoons slivered almonds, toasted
1 package chicken-flavored ramen noodles, including the seasoning packet
1 tablespoon butter
1/2 cup vegetable oil
3 tablespoons white vinegar
2 tablespoons sugar
1 teaspoon salt
1/2 teaspoon white pepper
1 teaspoon msg (optional)

Steps:

  • Crumble the ramen noodles.
  • Heat butter in skillet over medium high heat until melted.
  • Add the crumbled ramen noodles and stir fry for 2 minutes.
  • Add the seasoning packet and mix well.
  • Set aside and let cool.
  • Mix cabbage and green onions together in large bowl.
  • Whisk dressing ingredients together in small bowl.
  • Pour dressing in the salad 15 minutes before serving.
  • Add the sesame seeds, slivered almonds and crumbled noodles right before serving.

1/2 head iceberg lettuce, shredded
1 head cabbage, chopped in small pieces
6 gren onion scallions, chopped
1 cup cucumber, quartered and sliced
1 cup sesame seeds, toasted
1/2 cup sliced almonds, toasted
2 (3 ounce) packages ramen noodles, broken in small pieces
1/4 cup vinegar
2 tablespoons water
1/2 cup canola oil
2 tablespoons sesame oil

  • In a large bowl, toss togehter vegetables.
  • In a jar with lid add all dressing ingredients.
  • Refrigerate.
  • When ready to serve mix all ingredients together and serve.
  • Ramen noodles will loose their crunch after awhile so it is always best to mix everything together right before you serve it.
