- Preheat the oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish with aluminum foil and lightly grease the foil.
- Combine butter and chocolate in a medium saucepan over low heat. Cook, stirring occasionally, until melted, about 5 minutes. Whisk in white sugar, vanilla extract, and salt. Turn off the heat.
- Whisk in eggs, 1 at a time. Stir in flour and cocoa powder until mixture is well combined. Fold in chopped cookies. Pour batter into the prepared baking dish and sprinkle with crushed cookies.

The fudgiest chocolate brownies topped with oreo biscuits

- Preheat the oven to 160C and line a square baking tray with greaseproof paper
- Whisk the oil, eggs and caster sugar until pale and frothy
- Melt the chocolate in a separate bowl over a saucepan of simmering water (don't let the bottom of the bowl touch the water or it will burn the chocolate). Once melted, set aside and cool
- Fold the cocoa and flour into the egg mixture and then mix in the cooled melted chocolate
- Pour the mixture into the prepared tray and bake for 15 mins, then remove the tray from the oven and add the crushed Oreos. Then place the tray back in the oven for a further 25 mins. You want the middle to still be soft but the outer parts to be cooked.
- Remove from the oven and let the brownie cool in it's tray. It's easier to cut into squares if fridge cold. Enjoy!

OREO PEANUT BUTTER BROWNIES
I saw this on a few sites with minimal directions. I decided to rewrite it to make it easier & better. I used Betty Crocker's Ultimate Fudge Brownie mix & regular Oreos. Feel free to use any brownie mix.

- 1. Prepare brownie mix according to the directions on the box. Use a large spoon to mix the batter, not a whisk or a wooden spoon. (I use a large metal spoon from my silverware). Set bowl aside.
- 2. Lightly spray a 24 count cupcake tray with Pam Baking Spray. Holding one Oreo in your hand, lightly cover the top cookie with peanut butter. Top with another Oreo. Lightly cover top cookie with peanut butter. Place stack into the cupcake tin. Continue making stacks & filling the tin with Oreos.
- 3. Spoon the brownie batter over the Oreos, one spoonful is enough. It will slowly cascade over the Oreo stack.
- 4. Bake for 25 minutes. Check with a toothpick along the edge of the brownie to avoid the Oreo & peanut butter. Toothpick must be clean for the brownies to be done.
- 5. Allow brownies to cool in the pan for about 15 minutes on a wire rack. Using a butter knife, gently loosen brownies from the cupcake tray. Eat & enjoy with a glass of milk.
- 6. For an even better dessert, place the brownie in a dessert bowl. Add a scoop of ice cream. Add Hershey's chocolate or Caramel syrup, sprinkles, Cool Whip or RediWhip.
OUTRAGEOUS MINT OREO BROWNIES
Steps:
- 1. Preheat the oven to 350F degrees (180 C). Line a 13X9 inch metal pan with foil that extends beyond the pans edges on at least two sides and spray the foil with cooking spray. 2. In a large heavy duty pan over very low heat, melt the butter, chocolate chips, and unsweetened chocolate, stirring constantly. Remove pan from the heat before the chocolate is fully melted and continue to stir until it is melted and smooth. Allow to cool slightly. 3. In a large mixing bowl stir (do not beat) together the eggs, coffee granules, vanilla, and sugar. Stir the warm chocolate mixture into the egg mixture and cool to room temperature. 4. Whisk 1/2 cup of flour, the baking powder, and salt together in a small bowl until it is well blended then add it to the cooled chocolate mixture. 5. In a medium bowl toss the chopped Oreos with the remaining 2 tablespoon of flour. (This is supposed to help prevent the Oreos from sinking to the bottom of the pan.) 6. Scrape the brownie batter into the prepared pan, spreading it evenly. 7. Bake for 35 minutes, or until a toothpick inserted about 3 inches from the center comes out clean. Do not overbake! Remove from the oven and place the pan on a wire rack to cool, then cover the brownies and chill them in the refrigerator. 8. Lift slab of brownies from the pan and cut into desired size and shape. (Since these Outrageous Oreo brownies are rich, I like them cut into small squares.)

- Preheat oven to 350 degrees F. Create a parchment paper sling to line the bottom of a 9x9-inch square baking pan.
- In a large bowl, beat the butter, brown sugar, and granulated sugar together for 2 minutes until light. Add the egg and vanilla, mixing well and scraping down the sides of the bowl as needed.
- Add the flour, baking soda, and salt, stirring just until combined. Stir in chocolate chips, then set press into the prepared pan.

- Heat oven to 180C/160C fan/gas 4. Chop 4 of the Oreos into small pieces and set aside. With the rest of the Oreos separate the filling from the biscuits, don't worry if the biscuits snap when you do this - they're going to get blitzed up anyway. Reserve the filling and whizz the biscuits to a fine crumb in a food processor. Pour the melted butter over the biscuit crumbs and pulse briefly just to mix. Tip into a 20cm x 30cm tin and press the mixture down with the back of a spoon to cover the base of the tin in an even layer. Bake in the oven for 10 mins to firm up.
- Put the dark chocolate in a bowl set over a pan of barely simmering water until melted, or melt in the microwave, checking after each 30 second blast. Leave to cool to room temperature.
- Meanwhile put the butter and sugar in a bowl and beat until light and fluffy. Add 4 of the eggs, one at a time, beating well between each addition, then sift in the flour, cocoa, and a pinch of salt. Now stir in the melted chocolate and the chopped milk chocolate. Scrape the mixture into your prepared tin and smooth the surface.
- Mix the reserved Oreo fillings with the remaining egg until smooth then stir in the cream cheese until it's a lump-free as you can get it - try not to overmix. Put teaspoonfuls of the cream cheese mixture on top of the brownie layer, then scatter over the chopped Oreo pieces from earlier. Bake for 30 mins then add the Oreo eggs, cut side up, and pop it back in the oven for 5 more mins or until just set - it should still have a little wobble when it comes out of the oven, and a skewer inserted into the centre should come out with sticky crumbs. Cool completely in the tin before cutting into squares to serve.
