Roasted Green Beans With Garlic and Pine Nuts image

I really LOVE green beans, and this recipe is yet another tasty way to serve them. I belive the recipe called for whole garlic cloves, but I like to smash them with the back of my knife to 1) get the peels off and 2) release some of that wonderful garlic flavor. I enjoy these beans right out the oven as is, but if you're like my husband, go ahead and add the couple tbsp of the vinegar of your choice before serving. These taste great right from the oven, or at room temp.

2 tablespoons olive oil
1 lb fresh green beans, trimmed
1 cup thinly sliced onion
10 -12 cloves garlic, peeled
salt & freshly ground black pepper
seasoning salt, like mrs. dash,optional
1 cup pine nuts, toasted
1 -2 tablespoon balsamic vinegar or 1 -2 tablespoon red wine vinegar, optional

Steps:

  • Preheat oven to 400 degrees.
  • Line baking sheet with foil.
  • Place the beans, onions and garlic onto the sheet.
  • Drizzle with the olive oil and toss together with your hands to coat evenly.
  • Season GENEROUSLY with salt and pepper.
  • I like to use some kosher salt, as well as a few shakes of seasoned salt too.
  • Bake in oven for 25 minutes.
  • Give the beans a quick toss halfway through cook time.
  • At the end of 25 minutes, tsate a bean to see if it's tender to your liking.
  • If not, put sheet back in for another 5-10 minutes.
  • Remove from oven and place in serving bowl.
  • Drizzle with vinegar, if using, and check seasonings.
  • Top beans with the pine nuts, and serve.

2 tablespoons unsalted butter
1 tablespoon olive oil
3 shallots, minced
1 tablespoon minced garlic
1 cup Meyer's dark rum
5 cups chicken stock
2 tablespoons ancho puree
2 tablespoons molasses
Salt and pepper, to taste
1 (5 pound) beef tenderloin
Salt and pepper, to taste
4 tablespoons unsalted butter
4 tablespoons unsalted butter
3 tablespoons olive oil
1/2 pound shiitake mushrooms, stems removed and caps cut 1/4-inch thick
2 large portobello mushrooms, stems removed and caps cut 1/4-inch thick
1/2 pound oyster mushrooms, stems removed and caps cut 1/4-inch thick
Salt and pepper, to taste
1 Spanish onion, finely chopped
3 cups converted rice
7 cups chicken stock
1 teaspoon salt
1/4 cup porcini mushroom powder

Steps:

  • Melt the butter and olive oil in a medium saucepan over medium high heat. Add the shallot and garlic and cook until soft. Add the rum and reduce to 1/4 cup. Add the stock, bring to a boil and reduce the heat. Whisk in the remaining ingredients and simmer until reduced to 2 cups.;
  • Preheat oven to 450 degrees F. Season tenderloin with salt and pepper on both sides. Place a large ovenproof skillet over high heat, melt the butter and sear tenderloin on all sides. Place in oven and cook to desired doneness or for about 10 to 15 minutes or until a thermometer inserted registers 125 degrees for medium rare.;
  • Heat 3 tablespoons butter and 2 tablespoons oil in a large saute pan over high heat. Add the mushrooms, season with salt and pepper to taste and saute until golden brown. In a medium saucepan heat remaining oil and butter over medium heat, add the onions and cook until soft. Add the rice and stir to coat with the butter and oil. Add 6 cups of the stock, 1 teaspoon of salt and the porcini powder, bring to a boil, cover, lower the heat and cook until all the liquid is absorbed. Fold in the mushroom mixture, more stock if needed and season with salt and pepper to taste, cook to heat through, 5 minutes.;

3/4 cup pine nuts, toasted and finely chopped

  • Cook beans in a large pot of boiling salted water until crisp tender. Drain and rinse with cold water. Heat oil in a large saute pan over medium heat. Add the green beans and cook until just heated through, stir in pine nuts and season with salt and pepper to taste.

1 1/2 lbs green beans, trimmed
2 tablespoons olive oil
2 large garlic cloves, thinly sliced
1/3 cup pine nuts
kosher salt
pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the green beans and cook until just tender, 3 to 5 minutes.
  • Meanwhile, heat the oil in a large skillet over medium heat. Add the garlic and cook, stirring for 1 minute. Add the pine nuts and cook until golden brown, about 3 minutes.
  • Drain the green beans and transfer to the skillet add ½ teaspoon salt and ¼ teaspoon pepper and toss to coat. Transfer to a serving bowl.
  • Make-ahead note: This dish can be prepared up to 2 days in advance. Blanch the green beans by boiling until tender. Plunge them into an ice bath to stop the cooking. Drain and refrigerate, covered until ready to sauté with the garlic and pine nuts. Cook the green beans until heated through.

1 1/4 lbs fresh green beans, rinsed well, stem ends trimmed
1 small head of garlic
1/4 cup extra virgin olive oil, plus
2 tablespoons extra virgin olive oil
1 1/2 tablespoons finely grated lemon zest
2 tablespoons fresh lemon juice
kosher salt
freshly cracked black pepper
1/3 cup pine nuts
1 tablespoon coarsely chopped fresh flat leaf parsley
1/4 cup grated parmesan cheese

Steps:

  • Position oven racks in the top and bottom third of the oven.
  • Heat oven to 450°F.
  • Put the beans in a large bowl.
  • Peel the garlic, quarter each clove lengthwise and add them to the green beans.
  • Toss the beans and garlic with 1/4 cup of the olive oil, 1 Tbs lemon zest, 1 tsp salt, and 1/2 tsp pepper.
  • Spread the beans on a rimmed baking sheet and roast in the top third of the oven for 10 minutes. Stir the beans and garlic with a spatula for more even cooking and coloring.
  • Continue roasting until the beans and garlic pieces are lightly browned and tender throughout, another 10 - 15 minutes.
  • Meanwhile, spread the pine nuts on a rimmed baking sheet and toast in the bottom third of the oven until just golden, about 5 minutes.
  • Transfer the beans to a small serving platter or shallow bowl and dress with the lemon juice and the remaining 2 T. olive oil.
  • Toss gently to coat and season to taste with salt and pepper.
  • Sprinkle on the toasted pine nuts, remaining 1/2 Tbs lemon zest, the parmesan cheese and the parsley.
  • Serve hot or at room temperature.

1 medium purple onion, chopped
