Orecchiette with Slow-Cooked Garlic, Capers, and Bread Crumbs image

Orecchiette is tossed with a sweet and spicy garlic olive oil and topped with toasted breadcrumbs.

1 head garlic, separated into cloves and peeled
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 cup cubed crusty Italian bread
1 anchovy fillet
1/4 cup drained and chopped capers
1/2 teaspoon crushed red pepper flakes
1 pound orecchiette
1/2 cup grated Parmesan
1/2 cup fresh flat-leaf parsley leaves

Steps:

  • Bring a large pot of salted water to a boil.
  • Combine the garlic, oil, and 1/4 teaspoon salt in a medium skillet over medium-low heat and cook, stirring frequently, until the garlic is golden and tender, about 25 minutes. Transfer the garlic to a bowl using a slotted spoon and smash with a fork.
  • Add the cubed bread to the skillet and cook, stirring occasionally, until golden, about 5 minutes. Transfer to a bowl using a slotted spoon, and when cool, crush into crumbs with your hands.
  • Stir the anchovy into the skillet until dissolved. Remove the skillet from the heat and stir in the capers, red pepper flakes, mashed garlic, and a few grinds of pepper.
  • Add the orecchiette to the boiling water and cook according to package directions. Reserve 1 cup of the cooking water, then drain the pasta. Add the pasta to the skillet with the cooking water and cheese. Toss to coat. Sprinkle the parsley and bread crumbs over the top and serve.

Vegetable oil cooking spray
2 small bulbs fennel, trimmed and cut into 3/4-inch pieces
2 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
8 ounces (2 1/2 cups) orecchiette pasta
One 4-ounce spicy Italian sausage link, casing removed
1 small onion, chopped
2 cloves garlic, minced or smashed
2 tablespoons white wine, such as pinot grigio
8 oil-packed sun-dried tomatoes, drained and chopped
2 tablespoons chopped fresh flat-leaf Italian parsley
1 teaspoon capers, rinsed and drained
1/2 cup grated Parmesan

Steps:

  • For the fennel: Place an oven rack in the center of the oven and preheat to 400 degrees F. Spray a small baking sheet with vegetable oil cooking spray.
  • Toss the fennel, oil, salt and pepper in a medium bowl. Arrange the fennel in a single layer on the baking sheet. Roast until golden and tender, about 30 minutes. Set aside to cool.
  • For the pasta: Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain and reserve about 1 cup of the pasta water.
  • Heat the oil over medium-high heat in a large skillet. Add the sausage and break into 1/2-inch pieces using a wooden spoon. Cook until golden and cooked through, about 6 minutes. Add the onion, salt and pepper. Cook, stirring occasionally, until soft, about 5 minutes. Add the garlic and wine and scrape up the brown bits that cling to the bottom of the pan with a wooden spoon. Cook until all of the wine has evaporated, about 1 minute. Add the tomatoes, parsley and capers. Cook for 30 seconds. Add the pasta, fennel and cheese. Toss until all ingredients are coated, adding the reserved pasta water as needed, to loosen the pasta.

This is a recipe for pasta (any kind you like) angel hair or other small shaped pasta. It is served with already prepared & seasoned bread crumbs. Very simple & satisfying dish. Hope you like it. This recipe has been tweaked but I found it on the Foodnetwork Channel with Giada de Laurentis.

1 lb dried orecchiette or 1 lb angel hair pasta
3/4 cup extra virgin olive oil or 3/4 cup butter
2/3 cup Italian seasoned breadcrumbs
1 cup chopped prosciutto
sea salt
fresh ground pepper
1/4 cup grated parmesan cheese
2 tablespoons chopped fresh parsley leaves

Steps:

  • In a large pot, bring to a boil 6 qts of salted water. Cook pasta until al dente; about 8 minutes.
  • Meanwhile in med-sized saute pan heat oil until warm. Since the bread crumbs will cook quickly, you don't want to add them into a hot pan.
  • Add the breadcrumbs & stir constantly you may want to season lightly with salt & pepper, since flavored bread crumbs already have seasoning.
  • Saute for about 2 minutes; remove from heat and set aside.
  • Drain pasta in colander. Working quickly; add pasta to saute pan & stir to combine.
  • Add Parmesan & prosciutto & mix thoroughly.
  • Pour into large serving bowl & garnish with chopped parsley.

Orecchiette with beans, greens, garlic, and chili is one of my standby suppers. The pasta itself is fun to eat. The name translates to "little ears", but to me the pasta shells resemble little belly buttons, the central dimple of which is ideal for trapping the beans. Sometimes I use bitter broccoli rabe or Romanesco broccoli florets. Toasted Bread Crumbs may or may not go into the mix. Grated pecorino may garnish the dish. I've even been known to add crabmeat, steamed clams, shrimp, meatballs, or sausage to the basic mixture of beans, greens, and pasta. Simply put, this dish offers versatility in a bowl, satisfying in its simplest form and hospitable to other flavors.

1 1/4 cups canned chickpeas, drained
2 tablespoons extra-virgin olive oil, plus more for drizzling
2 teaspoons salt, plus more to taste
1 generous cup broccoli florets or broccoli rabe
3 to 4 ounces orecchiette
4 tablespoons minced red onion, optional
1 tablespoon minced garlic
1/2 teaspoon red pepper flakes, optional
1 cup diced canned plum tomatoes, optional
Freshly ground black pepper
2 tablespoons Toasted Bread Crumbs, recipe follows, optional
Grated pecorino, for serving, optional

Steps:

  • Put the chickpeas in a bowl and drizzle with a bit of olive oil.
  • Bring a large pot of water to a boil. Add the salt and then drop in the broccoli and cook until tender but not too soft, 4 to 5 minutes. Remove with a slotted spoon and refresh in cold water to set the color. Drain and set aside. If using broccoli rabe, chop coarsely. Then drop the orecchiette into the same boiling salted water.
  • While the pasta cooks, heat the 2 tablespoons olive oil in a saute pan over medium heat. Add the onion, if using, and cook until tender, about 8 minutes. Add the garlic, red pepper flakes, if using, and chickpeas and cook for 2 minutes. Add the tomatoes, if using, and broccoli and cook until hot. Season, to taste, with salt and pepper.
  • Drain the pasta when it is al dente and add it to the broccoli sauce, along with the toasted bread crumbs, if using. Warm through. Transfer to a warmed bowl and sprinkle with pecorino, if desired.
  • Toasted Bread Crumbs: Heat the oven to 350 degrees F. In a food processor, pulse 2 cups diced country-style bread, crusts removed, until you have coarse crumbs. Toss the crumbs in a bowl with 4 tablespoons (1/2 stick) unsalted butter, melted, or olive oil; 1 teaspoon salt; and 1/2 teaspoon freshly ground black pepper. Spread the crumbs on a baking sheet. Bake, stirring occasionally, until golden, about 20 minutes. The crumbs can be stored in the pantry in a covered container for up to a month.

2/3 cup Italian-style dried bread crumbs
1/4 teaspoon sea salt, plus more to taste
1/4 teaspoon freshly ground black pepper, plus more to taste
1 cup finely chopped prosciutto
1/4 cup freshly grated Parmesan cheese
2 tablespoons fresh flat-leaf parsley, chopped

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook, stirring occasionally, until tender but still firm to the bite, about 8 minutes. Meanwhile, in a large saute pan, heat the oil over a medium-high flame. Add the read crumbs and 1/4 teaspoon each of sea salt and pepper. Stirring constantly, cook the bread crumbs until golden brown, about 2 minutes. Working quickly, drain the pasta and stir it into the toasted bread-crumb mixture in the pan. Remove the pan from the heat and stir in the prosciutto and Parmesan cheese. Season the pasta with more salt and pepper to taste. Transfer the pasta to a large serving bowl, garnish with the parsley, and serve.
