CARROT JUICE

Steps:
- Wash and peel carrots. Cut carrots into small pieces. Add to blender with 2 cups of water. Blend (grate/chop mode) for 1 to 2 minutes. Pour into strainer and squeeze the juices from the carrots into bowl. Discard carrot pulp. Sweeten carrot juice with milk. Add the vanilla, nutmeg and rum (to taste). Chill and serve.
ORANGEADE
A refreshing change from lemonade. If you don't care for pulp in your drink, feel free to strain the juice before you add it to the water.

- Bring 2 cups water and sugar to a boil in a small saucepan; cook at a boil for 3 minutes, stirring to dissolve sugar, and creating a simple syrup.
- Combine simple syrup, 6 cups water, orange juice, and lemon juice in a large pitcher; refrigerate until cold.

CARROT-ORANGE MIMOSA
Steps:
- Combine the carrot, orange and lime juice in a pitcher. Fill chilled champagne flutes or glasses halfway with the juice and top with the Champagne. Garnish with the carrot greens.
