MANDARIN ORANGE BREAD
Steps:
- Pre-heat oven to 350F (180C). Grease and flour a 9 x 5 inch (22 x 14 cm) loaf pan.
- In a medium bowl whisk together the flour, baking powder, baking soda and salt, set aside.
- In the bowl of the mixer beat the eggs, yolk and sugar until light and fluffy about 3-4 minutes (on low speed or #2). Add the butter and beat to combine, then add the yogurt, oil, milk, vanilla and zest, beat to combine. Add the flour mixture and beat until smooth.
- Pour into the prepared loaf pan and bake for approximately 50-60 minutes or until a tooth pick comes out clean. Let cool completely before drizzling with the mandarin orange glaze or dusting with powdered sugar.

- In a large bowl, combine the first five ingredients. In another bowl, combine egg, orange juice, water, butter and orange zest. Add to dry ingredients just until combined. Fold in the blueberries. Pour into a greased and floured 8x4-in. loaf pan. , Bake at 350° for 65-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack.

Fold in the cranberries and apple., Pour into 2 greased 8x4-in. loaf pans. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Freeze option: Securely wrap cooled loaves in foil and freeze. To use, thaw at room temperature.
