Stir orange pieces into waffle batter, where they'll caramelize during cooking. Top the waffles with orange segments, and serve with a syrup infused with orange juice and cinnamon.

Number Of Ingredients 13

1 1/2 cups all-purpose flour
2 teaspoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg
1/2 cup buttermilk
1/2 cup freshly squeezed orange juice
1/3 cup sour cream
5 tablespoons unsalted butter, melted
3 oranges, peeled, seeded, and separated into segments, each segment cut into thirds
Orange Spiced Syrup
Vegetable-oil cooking spray

Steps:

  • In a medium bowl, whisk flour, sugar, baking powder and soda, and salt. In another bowl, whisk egg, buttermilk, juice, sour cream, and butter. Stir mixture into dry ingredients. Fold in half the oranges.
  • Coat a waffle iron with cooking spray. Cook waffles according to manufacturer's directions, coating iron with cooking spray between batches, as the oranges tend to stick. Keep warm; serve waffles with remaining oranges and orange syrup.

  • HEAT waffle iron; grease if necessary. Beat all ingredients except Maple-Orange Syrup with wire whisk or hand beater until well blended. POUR batter by scant 1 cupfuls onto center of hot waffle iron. BAKE until steaming stops and waffle is golden brown. Carefully remove waffle. Twelve 4-inch squares. 1-1/4 cups all-purpose flour
1/4 cup whole wheat flour
4-1/2 teaspoons sugar
4 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 large egg
1 large egg white
1 cup fat-free evaporated milk
1/2 cup orange juice
2 tablespoons canola oil
1 teaspoon grated orange zest
1/3 cup dried cranberries
3 tablespoons chopped pecans
CRAN-ORANGE SYRUP:
1 cup fresh or frozen cranberries
1/4 cup sugar
1/2 cup orange juice
2 tablespoons water
2 tablespoons maple syrup

Steps:

  • In a large bowl, combine the flours, sugar, baking powder, salt and baking soda. In another bowl, whisk the egg, egg white, milk, orange juice, oil and orange zest; stir into dry ingredients just until blended. Fold in cranberries and pecans. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown. , For syrup, in a small saucepan, combine the cranberries, sugar and orange juice. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Remove from the heat; cool slightly., Remove 1/2 cup cranberries with a slotted spoon; set aside. In a blender, combine the water, syrup and remaining cranberry mixture; cover and process until smooth. Pour into a serving dish; stir in reserved cranberries. Serve with waffles.

This comes from the Red Lion B&B website. These can be made OAMC. Just make the waffles then flash freeze them (individually) before putting them in ziplock bags. Label and date. To reheat, put in the toaster or microwave.

I haven't tried these waffles yet but am planning on trying this very soon. When I make them I will be omitting the liquor in the syrup, replacing with juice.

3 tablespoons sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
2 eggs, separated
1/2 cup milk

1 cup sugar

Steps:

  • Preheat waffle iron.
  • Sift flour, sugar, baking powder and salt into small bowl.
  • Beat egg yolks in medium bowl until thickened.
  • Add milk, orange juice and orange peel and mix thoroughly.
  • Gradually add flour mixture, blending well.
  • Stir in walnuts and butter.
  • Beat egg whites in small bowl until stiff.
  • Fold into walnut mixture.
  • Bake waffles in waffle iron, according to manufacturer's instructions.
  • Serve immediately with Orange Syrup.
  • Orange Syrup (makes 1 2/3 cups).
  • Combine sugar and orange juice in small saucepan and bring to bowl over low heat, stirring constantly.
  • Remove from heat.
  • Blend in remaining ingredients.
  • Let cool completely.
  • Strain into jar with tight-fitting lid.
  • Refrigerate.
  • Reheat syrup before serving.
