2 1/2 cups self-rising flour or 2 1/2 cups cake flour
1 cup instant Tang orange drink
1 1/4 cups orange juice
2 cups sugar
2 eggs
1/2 teaspoon orange
1/2 teaspoon vanilla extract
1/2 cup softened butter or 1/2 cup margarine
1/4 cup sour cream

Steps:

  • Preheat oven to 350.
  • In a large bowl, mix flour and sugar manually.
  • Add powder and orange juice to the mixture.
  • Using an electric blender, mix at low speed; fold in sour cream and oil.
  • Slowly increase speed and add both extracts; slowly add eggs.
  • Increase speed to medium and mix until smooth.
  • Oil and slightly flour two 8" or 9" baking pans; pour in batter.
  • Bake for at least 45 minutes.
  • When cake is done, cool at room temperature for 20 minutes.
  • Frost with Chocolate, Orange, or Vanilla frosting.

1/2 cup butter, softened
3/4 cup sugar
2 large eggs
1/2 cup orange juice
2 tablespoons water
1-1/2 teaspoons orange peel
1/8 teaspoon almond extract
1-1/4 cups cake flour
1-3/4 teaspoons baking powder
1/2 teaspoon salt
FROSTING:
1-1/4 cups confectioners' sugar
1 tablespoon butter, softened
1 to 2 tablespoons orange juice

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in the orange juice, water, orange peel and almond extract. Combine the flour, baking powder and salt; add to creamed mixture and mix well. , Pour into a greased 8-in. square baking dish. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Remove to a wire rack to cool completely. , For the frosting, combine the confectioners' sugar, butter and enough orange juice to achieve spreading consistency. Frost cake.

This is for a snack-type one layer cake. Easily doubled and cooked in two 8-inch cake pans if you want a layer cake. Cake flour gives a lighter cake, but all-purpose flour can be used.

1 1/4 c cake flour
1 1/2 tsp baking powder
1/2 tsp salt
3/4 c tang powder
3/4 c water
3/4 c granulated sugar
1 egg
1/2 tsp vanilla extract
1/4 c vegetable oil
1/8 c sour cream or plain yogurt

Steps:

  • 1. Preheat oven to 350F. Coat a 8-inch round cake pan with nonstick cooking spray.
  • 2. In a medium mixing bowl, mix the flour, bsking powder, salt, tang powder and sugar. Stir in water.
  • 3. With an electric mixer, mix in add remaining ingredients and mix until smooth.
  • 4. Pour into prepared pan and bake 30 minutes, or until wooden pick inserted in center comes out clean.
  • 5. Cool in pan on wire rack.
