MANDARIN ORANGE SURPRISE

I got this recipe from a friend at my wedding shower. It is a very light dish. It can be used as a salad or a dessert.

60 Ritz crackers, rolled fine
1/3 cup butter, melted
1/4 cup sugar
1 (8 ounce) Cool Whip
1 (6 ounce) frozen orange juice, slightly thawed
2 (11 ounce) cans mandarin oranges, drained
1 (15 ounce) can eagle brand sweetened condensed milk

Steps:

  • Mix together crackers, butter and sugar.
  • Press in a 13x9-inch baking dish. (Save a little bit of the crumbs for top).
  • Refrigerate this while making rest of recipe so it becomes firm.
  • Fold the rest of ingredients together.
  • Spread over crumbs in dish.
  • Top with remaining crumbs.
  • Refrigerate until ready to serve.

1 plain buttermilk doughnut
1 scoop vanilla ice cream
1 tablespoon orange marmalade
½ fluid ounce orange liqueur
¼ cup whipped cream

  • Place doughnut in an attractive serving bowl. Top with a generous scoop of ice cream. Spoon marmalade over ice cream, and pour liqueur on top. Top with whipped cream and enjoy.

Number Of Ingredients 8

Blood orange sorbet
2 1/2 cups (625 ml) freshly squeezed blood orange juice (from about 4 pounds/2 kg oranges), juiced halves reserved
2/3 cup (130 g) sugar
2 teaspoons orange-flavored liqueur, such as Grand Marnier, Cointreau, or Triple Sec
Meringue
3 large egg whites, at room temperature
1/2 cup (100 g) sugar
1/2 teaspoon vanilla extract

Steps:

  • To make the sorbet, in a small saucepan, warm 1/2 cup (125 ml) of the orange juice and the 2/3 cup (130 g) sugar, stirring until the sugar completely dissolves. Pour the mixture into a medium bowl and add the remaining orange juice and the orange-flavored liqueur. Cover and refrigerate until thoroughly chilled.
  • Using a spoon, scrape out the membranes and any remnants of pulp from 8 of the most attractive juiced orange halves. Slice a small disk off the bottom of each half so it sits upright without wobbling.
  • Freeze the sorbet mixture in an ice cream machine according to the manufacturer's instructions.
  • To serve, spoon the just-churned sorbet into the orange halves, filling each to about 1/2 inch (1.5 cm) from the top. Place the filled orange halves on a baking sheet and freeze until firm.
  • Preheat the oven to 450°F (230°C).
  • To make the meringue, in a stand mixer fitted with the whip attachment (or in a bowl by hand), whisk the egg whites on low speed until frothy. Increase the speed to high and continue whisking until the whites just begin to hold their shape. Gradually sprinkle in the 1/2 cup (100 g) sugar and whisk until the whites are stiff and shiny. Whisk in the vanilla.
  • Spoon the meringue onto the sorbet-filled orange halves, dividing it evenly, and bake until the meringue is nicely browned, about 5 minutes. Serve right away.
  • Storage
  • Before baking, the meringue-topped oranges can be kept in the freezer for up to 8 hours.
  • Variation
  • You can make this dessert using tangerines or regular oranges instead.

1 8-piece ice pop mold
1 (12 ounce) package frozen unsweetened raspberries
5 cups orange juice

Steps:

  • Cut the bananas in half crosswise then lengthwise. Insert 1 ice pop stick into the end of each banana. Roll the bananas in the frozen berries, and place the sticks into the mold. Fill each mold with the orange juice and freeze until solid, about 2 to 3 hours.

3/4 cup boiling water
2 cups yoghurt
1/2 cup cream

  • Dissolve jelly in hot water and cool to room temperature, stir in orange juice and then yoghurt until smooth.
  • Refrigerate until mixture begins to set.

1 Tbsp approximately, vegetable shortening
2 Tbsp approximately, corn flake crumbs (sold with the breadcrumbs)
1 medium orange
1/4 c orange juice
3/4 c granulated sugar
1/2 c unsalted butter, softened to room temperature
1 large egg
1/4 c milk
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 c all-purpose flour
1/2 c golden raisins

Steps:

  • 1. 1. Heat oven to 350 degrees. Generously grease a 9x5 loaf pan with shortening. Dust to coat with corn flake crumbs. Set aside
  • 2. Cut off a sliver of the rind at the nub and the blossom end of the orange. Cut the orange into 8 pieces, removing any seeds. Place in a food processor fitted with the steel blade. Add the orange juice and pulse until the orange is finely chopped.
  • 3. In a mixing bowl, cream the sugar and butter.
  • 4. Beat in the orange puree, egg, milk, baking soda, baking powder and salt.
  • 5. Stir in the flour.
  • 6. Fold in the raisins.
  • 7. Scoop the batter by the spoonful into the prepared pan. Use the back of the spoon to level the batter.
  • 8. Bake for 1 hour or until baked through.
  • 9. Cool in the pan until the sides shrink away. Remove to a wire rack and continue cooling to room temperature.
  • 10. Serve slices just as they are or with a smear of cream cheese or butter.

1/3 cup diced fresh strawberries
2 tablespoons low sugar orange marmalade
1 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda

3/4 cup buttermilk
1/2 cup sugar (or Splenda For Baking or Sun Crystals Granulated Blend)
1/4 cup canola oil or 1/4 cup style extra-light vegetable oil spread, melted
1/4 cup frozen fat-free liquid egg product, thawed or 1 egg
1 teaspoon vanilla
1/2 teaspoon finely shredded orange peel
4 ounces softened neufchatel cheese
1/2 cup fat free plain Greek yogurt
1/3 cup low sugar marmalade
3 drops red food coloring
orange strip
fresh strawberry slices

Steps:

  • Cupcakes: Preheat oven to 350. Line tweleve 2 1/2-inch muffin cups with paper bake cups. Coat cups with nonstick cooking spray. Set aside.
  • In a bowl, gently stir together diced strawberries and orange marmalade; set aside.
  • In a medium bowl, combine flour, baking powder, baking soda, and salt; set aside.
  • In a small bowl, whisk together buttermilk, sugar, oil, egg, and vanilla. Add buttermilk mixture to flour mixture. Whisk just until combined. Add finely shredded orange peel and gently stir.
  • Spoon 1/2 of the batter into prepared muffin cups. Evenly spoon strawberry mixture over batter in muffin cups. Bake 14-16 minutes or until a toothpick inserted near centers comes out clean. Cool in muffin cups on a wire rack.
  • Frost cooled cupcakes with frosting. Store frosted cupcakes in refrigerator. Garnish with orange peel strips and fresh strawberry slices before serving.
  • Orange Cream Cheese Frosting: In a medium bowl, beat Neufchatel with an electric mixer on medium speed until smooth. Beat in greek yogurt. Stir in marmalade (frosting will thin slightly). If desired, tint frosting pink with a few drops red food coloring. Cover and chill frosting 4-24 hours before piping on cakes.

2 cups boiling water
1 (8 ounce) can crushed pineapple
2 (2 ounce) packages Dream Whip
1 (8 ounce) package cream cheese

  • Boil 2 cups of water and add to Jello till dissolved.
  • In blender add Jello mixture to cream cheese, (let cream cheese soften 10-15 minutes). Blend Jello mixture and cream cheese together till combined.

OKRA ORANGE SURPRISE

I created this stir-fry recipe because I love okra and was tired of making the same old recipes. I used baby whole okra, but cut okra would work, too. I am on a very low sodium diet, so use a special salt-less Shoyu, which may be hard to find. Other soy sauce can be substituted, but will greatly increase the amount of sodium. I freeze extra zest whenever I have lemons, and save it to use in recipes like this.

2 tablespoons vegetable oil (I use olive)
1 (16 ounce) package frozen okra
1 teaspoon prepared grated fresh ginger (bottled)
2 tablespoons japanese sodium-free shoyu (or soy sauce, if you're not on a low sodium diet)
1 teaspoon lemon zest
1/2 cup orange juice
2 tablespoons honey

Steps:

  • Heat the oil in a frying pan and add the frozen okra. Reduce heat to medium, cover and cook until the okra is thawed. (The thawing okra will add about half a cup of liquid to the pan. If it doesn't, then add some water, if needed.).
  • Add ginger, lemon zest and Shoyu, stir and cook uncovered until almost dry.
  • Add orange juice and honey. Stir frequently, turning okra to coat it well. Cook until sauce is reduced and has become sticky. Remove from heat and serve.
