5 medium sweet potatoes
1/2 cup orange juice concentrate
1/4 cup water
1/2 cup butter
3/4 cup light brown sugar, packed
1/4 teaspoon nutmeg, freshly ground
1/4 teaspoon ginger, ground
1/2 teaspoon cinnamon, ground

Steps:

  • Bake sweet potatoes in a 400 degree oven until they can be pierced with a fork.
  • Cool, peel, and cut into 1-inch pieces.
  • Place cooked potatoes in a 2-qt covered baking dish.
  • Combine orange juice concentr ate, butter, brown sugar, and spices in a small saucepan.
  • Cook over medium-low heat until sugar and butter are melted; pour over potatoes.
  • Bake covered at 350 F for about 30 minutes.
  • Remove cover and bake another 10 minutes.

Spicy Roasted Sweet Potatoes With Orange & Honey image

By Karen and Ben Barker, from Fine Cooking, issue #47. I have slightly adapted this recipe as I wanted a bit more spice to these sweet potatoes. This is a great addition to any holiday spread.

3 tablespoons unsalted butter, more for the pan
3 tablespoons honey
1/4 cup orange juice
1/4 teaspoon cayenne
1/4 teaspoon cumin
1/4 teaspoon smoked paprika (regular is fine if you don't have smoked)
4 medium sweet potatoes, preferably the same size and shape, peeled, halved crosswise, and quartered lengthwise (2 lb. total)
kosher salt
fresh ground black pepper

Steps:

  • Heat the oven to 400°F Lightly butter a large Pyrex or ceramic baking dish that can hold the sweet potato wedges in one layer.
  • In a small saucepan, melt the butter. Whisk in the honey, orange juice, and spices. Put the sweet potatoes in the buttered baking dish, add the honey mixture, and toss the pieces well to coat them thoroughly. Arrange the sweet potatoes in a single layer; sprinkle with salt and pepper.
  • Roast until the potatoes are browned and tender and the juices are bubbly and thickened, 45 to 55 minutes. To ensure even roasting, stir and baste several times with the pan juices, doing so more frequently toward the end of roasting. Serve at once.

Orange Glazed Baked Sweet Potato Slices are bathed with a fresh ginger and orange glaze pepped up with orange marmalade, brandy, dijon mustard and thyme. Visually this dish looks impressive, and the best part, it's delicious and super easy to prepare.

1kg sweet potatoes with orange flesh (2 pounds)
1/2 cup fresh orange juice
2 tablespoons brandy
30g butter, melted (1 ounce)
2 tablespoons freshly grated ginger
1/2 cup orange marmalade
1 tablespoon Dijon mustard
1 tablespoon fresh thyme leaves
1 tablespoon vegetable oil

Steps:

  • preheat oven to 180c on bake, not fan (355f)
  • brush a 20cm cast iron frypan with oil (8 inch)
  • slice potatoes into thin even slices
  • in a bowl large enough to toss the potatoes add orange juice, brandy, butter, ginger, marmalade, mustard and thyme and whisk till blended
  • toss potatoes through the glaze making sure to coat each individual slice - a pair of rubber gloves comes in handy for this
  • make stacks of the slices and lay them around the outside of the frypan working your way to the centre - see video
  • cover frypan with foil and cook for 20 -25 minutes until the potatoes are starting to soften when tested
  • meanwhile put remaining glaze ingredients into a small saucepan and reduce over medium heat till glaze is a syrupy consistency (around 5 minutes) then remove from heat
  • remove potatoes from the oven and discard the foil (you may need to pour off any condensation juices that are in the pan) - see note below
  • brush potatoes generously with glaze and return to oven for 10 minutes - it helps to set a timer
  • repeat glazing and baking until the potatoes are tender and the glaze is glossy and starting to caramelize
  • serve and enjoy!

  • Preheat oven to 400 degrees F.
  • Wash and dry potatoes. Pierce potatoes in several places with a fork. Bake potatoes 1 hour or until tender. Cool. Peel potatoes, place in large bowl, and mash.
  • Stir in orange peel, orange juice, 2 tablespoons margarine or butter, 2 tablespoons brown sugar, cinnamon, cumin, and salt; mix well. Spoon into lightly greased 10x6-inch baking dish.
  • Combine pecans, flour, 1 tablespoon brown sugar, and 1 tablespoon margarine or butter; mix well. Sprinkle evenly over potatoes.
  • Bake 30 to 35 minutes or until hot. Let stand 5 minutes.

1/2 cup orange juice

Steps:

  • In a large saucepan over medium heat, cook sweet potatoes in boiling water until tender but still hold their shape, about 5 minutes; drain. Arrange in a buttered 2-qt. baking dish so slices overlap slightly. , In a saucepan, combine juice, butter, sugar, syrup, zest and spices; bring to a boil over high heat, stirring occasionally. Reduce heat to medium; cook until thickened, about 5 minutes. Drizzle over potatoes., In a small bowl, combine oats, sugar and cinnamon. Cut in butter until crumbly. Stir in pecans. These are wonderful with a pork roast. I serve it with my Crock pot Pork, Sauerkraut and Beer recipe.

2 lbs sweet potatoes, peeled and cubed
1/2 cup packed dark brown sugar
1/2 cup butter, cut into small pieces
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 medium orange, juice of
1/4 teaspoon salt
1 teaspoon vanilla
toasted chopped pecans

Steps:

  • Place sweet potatoes in bottom of slow cooker.
  • Mix spices and orange juice together.
  • Stir into sweet potatoes.
  • Cook on High for 2 hours or on Low for 4 hours.
  • Check for doneness because each crock pot cooks at a different heat setting.
  • Before serving, stir in toasted pecans.
