ORANGE SCENTED MASHED SWEET POTATOES



Orange Scented Mashed Sweet Potatoes image

2 1/2 pounds sweet potatoes, peeled and cut into small chunks or thin slices
Salt
1 tablespoon oil, extra-virgin olive oil or vegetable oil
2 slices smoky bacon, finely chopped
1 orange, zested and juiced
Chicken stock, as needed
1 teaspoon coriander, 1/3 palmful
1/2 teaspoon ground cumin, 1/3 palmful
1/4 teaspoon ground cinnamon
A few dashes hot sauce, to taste

Steps:

  • Put the potatoes in a medium pot, cover with water, salt the water and bring to boil over medium heat. Cook until tender, then drain and return the potatoes to the pot. Heat a little oil over medium heat, in a medium saute pan and add the bacon and cook until it begins to crisp. Stir in the orange zest and juice and the potatoes. Mash to desired consistency with some chicken stock to thin the potatoes, if desired. Stir in the coriander, cumin, cinnamon and hot sauce. Transfer to a serving bowl and serve.

PAPRIKA AND ORANGE SCENTED MASHED SWEET POTATOES



Paprika and Orange Scented Mashed Sweet Potatoes image

3 1/2 to 4 pounds sweet potatoes (about 4 large)
Salt
1 cup chicken stock
1/2 stick butter
2 blood oranges or navel oranges, juiced and zested
3 tablespoons finely chopped fresh thyme
1 1/2 to 2 tablespoons smoked sweet paprika
1/2 teaspoon ground cinnamon
Freshly ground black pepper

Steps:

  • Peel and coarsely chop the sweet potatoes. Cover with water and bring to a boil in a large pot. Salt the water and cook the sweet potatoes until tender, 8 to 10 minutes. Drain and return the sweet potatoes to the hot pot. Mash the potatoes with the stock and butter. Add in the orange juice and 2 tablespoons of the orange zest. Then add in the thyme, paprika, cinnamon and some pepper. Taste and adjust the seasoning. Cover and remove from the heat and serve immediately. To keep warm, create a water bath by placing the pot of mashed potatoes in 1 inch gently simmering water in larger pot or deep skillet.

Roasted Orange Scented Mashed Sweet Potatoes image

Delicious side dish to accompany your holiday meal. Roasting the sweet potatoes caramelizes the natural sugars and makes it extra sweet without adding sugar. The orange zest just takes it to the next level.

6 large sweet potatoes
1 Tbsp salt
2 Tbsp oil
1 stick butter
1 large navel orange

Steps:

  • 1. Preheat oven to 400 degrees
  • 2. Wash sweet potatoes Cut sweet potatoes in half length wise Lay sweet potatoes on rimmed baking sheet
  • 3. Drizzle oil over sweet potatoes Sprinkle salt over sweet potatoes Rub sweet potatoes all over with oil and salt
  • 4. Lay sweet potatoes flesh side down on baking sheet Roast in preheated oven 30-45 min. til tender
  • 5. Remove from oven and let cool until you can handle them Remove skin from sweet potatoes Place sweet potatoes in bowl Add stick of butter Add all of zest from one orange Squeeze juice from same orange into bowl Mash sweet potatoes Add salt to taste.

ORANGE-SCENTED SWEET POTATOES

2 lbs. sweet potatoes, peeled and sliced 1/4" thick
2 tart apples, peeld, cored and sliced
1 large ripe, firm pear, peeled, cored and sliced
salt to taste
2 T mild honey
2 T walnut oil
2 t. grated orange zest
2 1/2 C fresh orange juice

Steps:

  • Heat oven to 400. Oil a 9 x 13 baking dish. Toss together the sweet potatoes, apples, and pear in a large bowl. Season with salt to taste. Heat honey in a small saucepan just until warm; add walnut oil, stir, and add to sweet potato mixture. Add orange zest and toss until all is well coated. Scrape into baking dish, being sure to scrape out all honey and oil. Pour orange juice over all. Set the baking dish on a sheet pan and place in oven. Bake 1 hour, stirring every 15 min. Cover with foil and bake another 1/2 hour, or until sweet potatoes are tender and liquid is syrupy. Allow to sit 10 min or so before serving.
