2 cups water
5 to 6 tablespoons fresh orange juice, divided
1 tablespoon olive oil
1 teaspoon finely grated orange peel
1 10-ounce box (1 1/2 cups) plain couscous

Steps:

  • Mix 2 cups water, 2 tablespoons juice, oil, and peel in medium saucepan; bring to boil. Stir in couscous; cover and remove from heat. Let stand until liquid is absorbed and couscous is tender, about 12 minutes. Fluff with fork, adding orange juice by tablespoonfuls to taste. Season with salt and pepper.

1 (10 ounce) box couscous

Steps:

  • Mix the the water, 2 tablespoons of the juice and the next two ingredients in a saucepan and bring to a boil. Stir in couscous; cover and remove from heat. Let stand until water is absorbed (10-15 minutes).
  • Fluff with a fork, adding more juice by tablespoons to taste.

Ingredients:
2 cups water
1 cup couscous
1 tablespoon finely grated orange zest
1 tablespoon fresh orange juice
1 tablespoon extra-virgin olive oil
2 tablespoons chopped fresh cilantro leaves
Salt and freshly ground black pepper, to taste

Steps:

  • Method: Bring the water to a boil over high heat in a medium-size saucepan. Remove the pan from the heat, stir in the couscous, cover, and let rest for 5 minutes. Uncover and fluff the grains with a fork. Stir in the orange zest and juice, the olive oil, and cilantro. Season with salt and pepper. Remove to a serving bowl and serve immediately.
