GARLICKY SAUTEED BROCCOLI AND CAULIFLOWER

Number Of Ingredients 7

2 tablespoons unsalted butter
3 tablespoons olive oil
3 cups 1-inch broccoli florets (about 1 medium broccoli crown)
3 cups 1-inch cauliflower florets (about 1/2 medium head)
Kosher salt
4 cloves garlic, finely chopped
1 lemon, optional

Steps:

  • Heat the butter and 2 tablespoons of the oil in a large skillet over medium-high heat.
  • Add the broccoli and cauliflower in a single layer, sprinkle with 1/2 teaspoon salt and cook, undisturbed, until the undersides are browned in spots, 3 to 4 minutes. Continue to cook, stirring every 1 to 2 minutes, until browned all over and crispy and tender, about 5 minutes more.
  • Reduce the heat to medium and push the vegetables to one side of the skillet. Add the garlic and remaining 1 tablespoon oil to the empty side and cook, stirring, about 30 seconds. Mix the garlic into the vegetables and add a large splash (about 3 tablespoons) of water. Squeeze in half a lemon, if using. Cook, stirring, until the juices have evaporated.

1 pound fresh or frozen broccoli spears
4-1/2 teaspoons sugar
2 teaspoons cornstarch
1/2 teaspoon chicken bouillon granules
1/4 cup water
1/4 cup orange juice
1 teaspoon grated orange zest
1 medium navel orange, thinly sliced

Steps:

  • Place broccoli and a small amount of water in a saucepan; bring to a boil. Reduce heat; cover and cook for 5-8 minutes or until crisp-tender. Meanwhile, in a small saucepan, combine the sugar, cornstarch and bouillon. Stir in water, orange juice and zest until blended. Bring to a boil; cook and stir for 2 minutes until thickened., Drain broccoli and place in a serving bowl. Garnish with orange slices and drizzle with sauce.

2 tablespoons unsalted butter
1/2 medium head cauliflower, cored and cut into florets
3 garlic cloves, thinly sliced
1/4 cup orange juice
2 tablespoons honey
Coarse salt and ground pepper
1 bunch broccoli rabe (about 1 pound), trimmed, cut into 1 1/2-inch pieces

Steps:

  • In a large pot, melt butter over medium-high. Add cauliflower and cook, stirring occasionally, until it begins to brown, 4 minutes. Addgarlic and cook until fragrant, 1 minute. Add orange juice and honey; season with salt and pepper and cook until liquid is reduced and syrupy, 3 minutes. Add broccoli rabe and cook, stirring occasionally, until crisp-tender, 3 minutes. Season to taste with salt and pepper and serve immediately.

1 head cauliflower, cut into florets (think soup!)
1 navel orange, rind removed and reserved
Salt
3 tablespoons extra-virgin olive oil, 3 turns of the pan
2 shallots, thinly sliced
1 orange, juiced
Pepper
2 scallions, sliced

Steps:

  • 1. Bring a couple inches of water to boil in a large skillet and add the florets, orange rind and salt. Cover and simmer until tender, about 6 minutes. 2. Drain broccoli and cauliflower, remove rind and transfer to a platter or bowl. 3. Return pan to heat, add extra-virgin olive oil and heat over medium heat. Add shallots and cook until soft, 3 to 4 minutes. 4. Add broccoli and cauliflower and turn to coat. Squeeze the orange juice over the pan and toss veggies again. Season the orange scented broccoli and cauliflower with salt and pepper, to your taste. 5. Garnish with sliced scallions.
