This cake, made with whipped cream instead of butter, is a deliciously plain, moist, coal-black chocolate loaf flavored with orange zest and steeped in orange juice after it is baked.

Number Of Ingredients 12

1 1/4 cups sifted all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsweetened cocoa powder (preferably Dutch-process)
1 cup sugar
1 cup heavy cream
1 teaspoon vanilla extract
2 large eggs
Finely grated zest of 1 large, deep-colored orange
For the glaze:
1/3 cup orange juice
3 tablespoons sugar

Steps:

  • Adjust rack one-third up from the bottom of the oven and preheat oven to 350 degrees. You will need a loaf pan measuring about 8½ x 4½ x 2¾ inches, or one with about a 6‑cup capacity. Butter the pan and dust it all over lightly with fine, dry bread crumbs, shake out excess crumbs, and set the pan aside.
  • Sift together the flour, baking powder, salt, cocoa, and sugar and set aside.
  • Beat the cream and vanilla in the small bowl of an electric mixer until the cream holds a definite shape. On low speed, add the eggs, one at a time, scraping the bowl with a rubber spatula and beating only until the egg is incorporated after each addition. (The eggs will thin the cream slightly.)
  • Transfer to the large bowl of the mixer and gradually, on low speed, add the sifted dry ingredients, scraping the bowl and beating only until smooth. Remove from the mixer and stir in the grated zest. That's all there is to it.
  • Turn the batter into the prepared pan and smooth the top. Bake for about 1 hour and 5 minutes, until the top springs back when lightly pressed with a fingertip.
  • For the glaze:
  • As soon as the cake goes into the oven, mix the orange juice with the sugar and let it stand while the cake is baking.
  • After you remove the cake from the oven, let it cool for 5 minutes. Then, a little at a time, brush the orange juice/sugar mixture all over the cake; encourage most of it to run down the sides between the cake and the pan, but thoroughly wet the top also. The cake will absorb it all.
  • Let the cake stand in the pan until it is completely cool. Then cover the pan loosely with a piece of wax paper. Invert the cake into the palm of your hand-easy does it-remove the pan, cover the cake with a rack, and invert again, leaving the cake right side up.

This yummy cake is my potluck specialty and everyone absolutely loves it. It comes from a recipe on the side of the Duncan Hines Orange Supreme cake mix. It is one of the most moist and tastiest cakes I've ever eaten. The orange cake mixes can sometimes be hard to find so another suggestion would be to use the Tropical cake mix. Either way, mmm-mmm good!!!

1 orange cake mix, divided
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1/2 cup pecans, finely chopped (optional)
1 tablespoon butter or 1 tablespoon margarine
1 (3 1/2 ounce) package instant vanilla flavor pudding and pie filling
4 eggs
1 cup sour cream
1/3 cup oil
1 cup confectioners' sugar
1 -2 tablespoon milk or 1 -2 tablespoon orange juice (I use 2)

Steps:

  • Preheat oven to 350°.
  • Grease and flour two 9x5x3-inch loaf pans.
  • For streusel topping, place 2 tablespoons cake mix, brown sugar, butter or margarine and cinnamon in medium bowl.
  • Mix well with fork until crumbly.
  • Stir in pecans, if using.
  • Set aside.
  • For cake, combine remaining cake mix, pudding mix, eggs, sour cream and oil in large bowl.
  • Beat at medium speed with electric mixer for 3 minutes (do the entire 3 minutes).
  • Pour batter into pans.
  • Sprinkle with streusel mixture.
  • Bake for 50-60 minutes or until toothpick inserted in center comes out clean.
  • Cool in pans 15 minutes.
  • Remove loaves from pans and let cool completely.
  • For glaze, combine confectioners' sugar and milk or orange juice in a small bowl.
  • Stir until smooth.
  • Drizzle over cooled loaves.

2 tablespoons golden syrup (such as Lytle's) or 2 tablespoons dark corn syrup

Steps:

  • Preheat oven to 325°.
  • Line a 9x5x3-inch loaf pan with parchment paper.

  • In a large bowl, with electric mixer, beat the butter, syrup and sugar until smooth.

  • Beat 1 tablespoon of the dry ingredients into the syrup mixture.

  • Add another couple of spoonfuls of dry ingredients.
  • Beat in the second egg.
  • Beat in remaining dry ingredients, and then add, while still beating, the orange zest.
  • Gradually add the orange juice. (The batter may look slightly curdled.).
  • Pour batter into the prepared pan.
  • Bake for 45 minutes (edges should look dry and center of cake may have dipped slightly).
  • Cool in pan on wire rack.

DAWN'S ORANGE LOAF CAKE

This is a definite cross between a light dessert or a breakfast quick bread treat. It has the texture of a cake but in loaf form. From a TOH booklet and submitted by Dawn C. from Florida. This uses cake flour which I find makes a really lighter texture to the loaves than standard flour. You can substitute all purpose flour but reduce the total by 3 1/2 tbls (for every cup of cake flour you need to reduce all purpose by 2 tbls) but remember that all purpose will probably give you a heavier texture of cake loaf.

1 1/4 sticks (10 tablespoons) soft unsalted butter, plus extra for greasing
dab flavorless vegetable oil, for greasing syrup spoon
2 tablespoons golden syrup (such as Lyle's), or dark corn syrup
1 cup (packed) dark brown sugar
1 cup all-purpose flour
1/2 teaspoon baking soda
3 tablespoons best-quality unsweetened cocoa powder, sifted
2 eggs
zest 2 regular oranges and juice of 1
1 x 2-pound loaf pan

Steps:

  • Preheat the oven to 325 degrees F and line your loaf pan with parchment paper and grease the sides, or line with a paper loaf-pan liner. Beat the already soft butter with the syrup - if you dab a little oil on your tablespoon measure with a sheet of paper towel, the syrup shouldn't stick to the spoon - and the sugar until you have a fairly smooth caffe Americano cream, though the sugar will have a bit of grit about it. Mix the flour, baking soda, and cocoa powder together, and beat into the syrup mixture 1 tablespoonful of these dry ingredients before beating in 1 egg. Then add another couple of spoonfuls of the dry ingredients before beating in the second egg. Carry on beating in the remaining dry ingredients and then add, still beating, the orange zest and finally, gradually, the juice. At this stage, the batter may suddenly look dimpled, as if slightly curdled. No need to panic! Pour and scrape into the prepared pan and bake for 45 minutes, though check 5 minutes before and be prepared to keep it in the oven 5 minutes longer if need be. A cake tester won't come out entirely clean, as the point of this cake, light though it may be, is to have just a hint of inner stickiness. Let cool a little in its pan on a wire rack, then turn out with care and leave on the rack to cool. Cuts into 10-12 slices Make Ahead Tip: The cake can be baked up to 3 days ahead. Wrap tightly in plastic wrap and store in airtight container. Will keep for 5 days total. Freeze Ahead Tip: The cake can be frozen, tightly wrapped in a double layer of plastic wrap and a layer of aluminum foil, for up to 3 months. Thaw overnight at room temperature.

  • Pre-heat the oven to Gas mark 3, 160°C, 140°C fan.
  • Cream the Butter, Sugar and Honey together until light and fluffy.
  • Beat the Eggs into the Butter and Sugar.
  • Use a food processor to blitz the Pistachio into a crumb. Try to maintain different sized pieces for texture and flavour. You can use a knife to obtain the same result.
  • Set aside about 15g of the pistachio crumb for topping. Add the Pistachio, Flour, Orange zest and half the Orange juice to the Eggs and Butter. Mix together to form the cake batter.
  • Put the batter into a lined 2lb loaf tin. Place on the middle shelf of the oven for 1 hour. Check every 5 minutes after the hour until a skewer comes out clean.
  • While the cake is in the oven make up a glaze. Weigh the second half of the orange juice and add the same amount of sugar, mixing together regularly to form the glaze. This should be approximately 30g sugar.
  • When the cake is out of the oven spike holes into the cake using a skewer and brush all of the glaze over the cake. Sprinkle the remaining Pistachio onto the glaze.

  • Adjust the rack 1/3 up from the bottom of the oven and preheat to 350°F. Butter a 8.5 x 4.5 x 2.75-inch loaf pan (about 6 cup capacity) and then dust it with fine, dry bread crumbs. Shake out the excess and set aside. Sift together the flour, baking powder, salt, cocoa and sugar and set aside. Beat the cream and vanilla in an electric mixer until it holds soft peaks, On low speed add the eggs one at a time, scraping down the bowl and only beating until the egg is incorporated. Gradually add the dry ingredients scraping down the bowl and beating only until just smooth. Remove from the mixer and stir in the grated rind. Pour the batter into the pan and smooth the top. Bake for about 65 minutes until the top springs back when lightly touched with a fingertip (not a cake tester this cake will be moist) As soon as the cake goes into the oven mix the OJ with the 3 tablespoons of sugar and let it stand while baking. After you remove the cake from the oven let it cool for 5 minutes. Then, a little at a time, brush the glaze all over the cake encouraging most to run down the sides between the cake and pan but make sure the top is soaked also. This cake is going to soak all this up if you go slowly enough. Let the cake stand in the pan until it is completely cool. Cover it with a piece of wax or parchment paper. Invert the cake into your hand (go slow here, if it's stuck loosen the side with a knife) take off the pan and turn right side up again. Serve warm!

175g unsalted butter , softened, plus extra for greasing
175g dried apricot , chopped
zest 2 large orange , juice of 1
175g golden caster sugar
3 medium eggs , beaten
280g self-raising flour
drop of milk (optional)
50g icing sugar

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line a 900g loaf tin with baking parchment. In a saucepan, heat the apricots with the orange zest and all but 1 tbsp of the juice. Simmer gently for 5 mins until the apricots have absorbed all the juice. Set aside to cool.
  • Beat the butter and sugar in a bowl until light and fluffy. Gradually beat in the eggs, then fold in the flour. Stir in the cooled apricots. If the mixture is dry at this stage, add a drop of milk.
  • Scrape the batter into the tin and smooth the top with a spatula. Bake for 50 mins-1 hr until a skewer inserted into the middle comes out clean. Cool in the tin for 10 mins before removing, then leave on a wire rack to cool completely.
  • Gradually add the reserved orange juice to the icing sugar, stirring until smooth and slightly runny. Drizzle the icing in a zigzag pattern over the top of the cake and leave to set.
