I had this jello salad at my sister-in-laws house and had to have the recipe. We have been making this for Thanksgiving for quite a few years now and everyone loves it. It is so colorful, juicy and delicious! Try it and I know you'll love it too!

1 large orange jello
1 3/4 cup(s) boiling water
2 cup(s) crushed pineapple, not drained
1 small can mandarin oranges, drained
1/2 cup(s) orange juice
TOPPING:
1 small lemon pudding, cook and serve type, not instant
2 - eggs, slightly beaten
1/3 cup(s) sugar
1 3/4 cup(s) cold water
1 cup(s) sour cream

Steps:

  • Dissolve orange jello with boiling water.
  • Add the crushed pineapple, mandarin oranges and orange juice. Stir.
  • Pour into a 9 x 13 pan. Refrigerate until set.
  • Mix lemon pudding, eggs and sugar together with 1/2 cup of the cold water in a saucepan. Blend well. Add remaining 1 1/4 cup water and cook over medium heat until thick.
  • Cool and then add sour cream. Spread over the jello and chill. Can be made 1-2 days before needed.

Number Of Ingredients 12

3 ounces orange gelatin
3 ounces lemon gelatin
2 cups boiling water
12 ice cubes
20 ounces crushed pineapple
3 bananas, sliced
1 teaspoon lemon juice
1 egg yolk
2 tablespoons flour
1/4 cup sugar
2 cups Cool Whip
grated cheese

Steps:

  • Drain pineapple and save juice.
  • Dissolve both gelatins in the boiling water.
  • Add ice and stir to melt.
  • Add drained pineapple, bananas, and lemon juice.
  • Pour into a 9"x13" dish and refrigerate while making topping.
  • Measure reserved pineapple juice in a 1 cup measuring cup & add water to make 1 cup.
  • Mix juice, water, egg yolk, flour & sugar in a saucepan.
  • Boil, stirring constantly, until thickened.
  • Cool.
  • Make Dream Whip as directed on package.
  • Add to cooked mixture.
  • Spread on top of gelatin mixture.
  • Top with some grated cheese.
  • NOTE: 1 pkg. prepared Dream Whip could be used instead of the Cool Whip.
