Steps:
- Beat egg white until foamy.
- Add salt, cinnamon and orange juice.
- Fold in sugar and mix well.
- Add pecans.
- Bake on a well greased cookie sheet at 250 F degrees for 45 to 60 minutes.
- Turn pecans every 15 minutes.
- Store in airtight container.

- Place orange juice, cranberry juice, molasses, and sugar in a small nonreactive sauce pan over high heat and cook until reduced to 1 1/2 cups. Add the reduced chicken stock and cook another 15 minutes. Season with salt and pepper to taste. Let cool.;
- Spicy Orange Vinaigrette: Place orange juice in a small nonreactive pan over high heat and cook until reduced to 1/4-cup. Place reduced orange juice, vinegar, onion, jalapeno and ancho powder in a blender and blend until smooth. With the motor running, slowly add the olive oil until emulsified. Add the honey and salt and pepper to taste.
- Spicy Pecans: Preheat grill or grill pan. Brush each quail on both sides with the glaze and season with salt and pepper to taste. Grill for 2 to 3 minutes on each side until cooked through.
- Assembly: 3 cups mustard greens Spicy Orange Vinaigrette Grilled Quail Spicy Pecans Pomegranate Seeds
- Place the greens in a bowl and drizzle with some of the Spicy Orange Vinaigrette. Divide the greens among 4 plates.
- Place 2 grilled quail on each plate. Garnish with Spicy Pecans and pomegranate seeds.
ORANGE GLAZED SWEET POTATOES WITH PECANS
Here is a great holiday side dish! Of course it can be made and enjoyed any time. My mom makes this. I prefer to mash the potatoes somewhat coursely or lumpy rather than as smoothly as typical mashed potatoes.

- Preheat oven to 375. Bake potatoes until very tender -- about 1 hour and 20 minutes. Let cool, and reduce oven heat to 350.
- Scoop potatoes out of peels and mash until desired texture. Stir in remaining ingredients and place in casserole dish (9 X 9).
- Combine topping ingredients and sprinkle over potatoes. Bake until done at 350 -- about 1/2 hours.
- Optional: stud with 9 pecan halves at even intervals before returning to oven, just to make it look pretty.

- 1. Prepare you brownie mix and pour into a greased 9X13 pan
- 2. Blend the cream cheese, marmalade, powdered sugar, orange juice, vanilla together. Whisk your eggs in a separate bowl and then add to the mix. Blend well. Should be a creamier easy spreadable consistancy. Now pour that over the brownies mix and gently spread over the top to cover. Next, take your fudge sauce and drizzle on top of cream cheese mixture. I used a knife and spreaded it out over the top. Bake as directed at 350 degrees but check on it. It may take more time due to the layering.
- 3. Prepare your frosting and set aside. The frosting was harder to give you amounts because I just kept putting more tang until I got my desired color and taste. Also, you may want to put more or less powdered sugar too.
- 4. The pecans are extremely tasty but I burnt them to blackness the first batch trying to roast them. lol Seriously though, they are expensive and I told myself you have to eat those. lol....I started eating them and couldn't eat anymore because they were too burnt. Well, you take this mixture (except for pecans) and cook in in a pan till it comes to a boil. I cooked mine for a few minutes and then took it off the burner. But, you want to cook it longer till a syrup type texture. Maybe 8 to 10 minutes. Then, pour your 2 cups of roasted pecans into the glaze and mix thoroughly. Then place them on parchment paper and spread them out to dry.
- 5. Once you remove your brownies from oven let cool and then ice. Top with your orange glazed pecans.

- Preheat oven to 350 degrees. On a rimmed baking pan, place pecans in a single layer. Bake pecans, stirring occasionally, for 10-15 minutes, or until fragrant and toasted. In a small heavy saucepan, bring juice concentrate, sugar, cinnamon, vanilla, and salt to a boil. Boil, stirring constantly, for 1 minute. Remove from heat; stir in toasted pecans. Line baking pan with aluminum foil. Drop pecans 1/2 inch apart onto prepared baking pan. Let stand for 15 minutes or until firm. Store in an airtight container for up to 1 week.

My nephew Dan taught me this recipe, simple and so very tasty! He is a missionary serving in Taiwan and I am very proud of him and his wife and kids. They are also helping with the efforts in restoring the Philippians'. I am very proud of them.

- 1. In a small Teflon coated frying pan, heat water and bring to a low boil.
- 2. add 1/2 package of orange jello stir until it makes a simple syrup maybe 1-2 minutes.
- 3. add the pecan and coat, immediately remove from heat, you must work very quickly!
- 4. Have an already prepared plate lined with foil or parchment paper and spread the pecan mixture on this paper. Allow to cool and break up into bit size pieces.
- 5. Repeat the procedure for another pan with the remaining 1/2 package orange jello and water. Clean pan immediately after use as it could harden and do damage to your pan.
- 6. Dan said that you can use different flavors of jello for this candy nut treat. My favorite is the orange, once you try it. You be the judge. Store remainder in airtight containers, if they last this long! Enjoy!
