The trick that gives you incredible flavor is to cook fresh sweet potatoes in their skin just until tender.

2 ½ pounds sweet potatoes
cooking spray
2 tablespoons white sugar
2 teaspoons cornstarch
½ teaspoon salt
½ teaspoon ground ginger
½ cup orange juice
3 tablespoons butter

Steps:

  • Pierce skin of sweet potatoes in several spots with a fork.
  • Cook sweet potatoes in microwave oven until just tender, 12 to 15 minutes. Refrigerate sweet potatoes until cooled completely, at least 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Prepare a shallow 1 1/2-quart baking dish with cooking spray.
  • Peel sweet potatoes and cut into cubes; spread into prepared baking dish.
  • Mix sugar, cornstarch, salt, and ginger together in a glass measuring cup; pour orange juice into the cup while stirring with a whisk.
  • Heat orange juice mixture in microwave oven for 1 minute, stir, and continue to heat until thickened and smooth, 30 to 60 seconds more; add butter and stir until melted. Pour the liquid over the sweet potatoes.
  • Bake in preheated oven until sweet potatoes are heated through, 15 to 20 minutes.

Ginger Orange Sweet Potatoes are a wonderful and colorful side dish. Sweet potatoes are baked and mashed with fresh ginger, orange juice, and butter.

3 pounds sweet potatoes (about 4 medium-sized)
1 naval orange
1/4 cup unsalted butter
1 heaping tablespoon fresh grated ginger or ginger paste
1/4 teaspoon salt
1/8 teaspoon ground white pepper

Steps:

  • Preheat oven to 400°F.
  • Pierce sweet potatoes several times with a fork. Place sweet potatoes on a rimmed baking sheet lined with foil. Bake until tender, about 1 hour.
  • While the potatoes are baking, grate the zest and squeeze the juice from the orange. Place 1 heaping teaspoon of the grated zest and 1/3 cup strained juice in a large bowl. Save any remaining zest and juice for a separate use or discard.
  • Carefully remove and discard the skins from the baked sweet potatoes (don't burn yourself with the hot potatoes!).
  • Place sweet potato flesh in the bowl with the orange zest and juice. Add butter, ginger, salt and pepper.
  • Mash or beat to combine.

3 pounds sweet potatoes, peeled and cut into 1-inch chunks
1/2 cup half-and-half
1 1/2 teaspoons grated orange zest
1/2 cup freshly squeezed orange juice
1/4 teaspoon ground cayenne pepper
Kosher salt and freshly ground black pepper
12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature

Steps:

  • Place a steamer insert or a mesh colander in a large pot and add enough water to reach the bottom of the steamer. Place the sweet potatoes in the steamer and bring the water to a boil. Cover the pot, lower the heat, and cook over simmering water for about 25 minutes, until very tender. Check occasionally to be sure the water doesn't boil away.
  • Transfer the sweet potatoes to the bowl of an electric mixer fitted with the paddle attachment. With the mixer on low, slowly add the half-and-half, orange zest, orange juice, cayenne pepper, 1 tablespoon salt, and 1 teaspoon black pepper. With the mixer still on low, add the butter, 1 tablespoon at a time, until incorporated. Taste for seasonings and mix until smooth. Serve hot.

1 cup cream
2 tablespoons grated ginger
Zest from one orange
2 pounds sweet potatoes, peeled and grated, about 4 cups
1/2 cup chopped hazelnuts or walnuts (optional)
Salt and black pepper

Steps:

  • Preheat oven to 400 degrees. Grease a 6- to 8-cup gratin dish with butter. In a small pan, gently heat remaining butter with cream, ginger and orange zest, stirring once or twice, until butter has melted and mixture is just steaming. Remove from heat.
  • Spread potatoes and nuts evenly into baking dish and sprinkle with plenty of salt and pepper. Drizzle cream mixture over all and press down on potatoes with a fork to settle them into dish and at least partly submerge them. Bake until potatoes are tender and cream thickens, about 45 minutes. Serve hot or warm.

3 large sweet potatoes, peeled and cut into 2-inch chunks
Maple-butter, orange-ginger, or lime-cayenne flavoring (optional, see below)
Kosher salt and freshly ground pepper

Steps:

  • In a large saucepan, cover potatoes with water. Bring to a boil; cook until tender when pierced with the tip of a paring knife, 15 to 20 minutes. Drain; puree in food processor.
  • Add flavorings, if desired; puree. Maple-Butter: Add 2 tablespoons each melted butter and maple syrup. Serve puree with more butter and syrup. Orange-Ginger: Add 1/4 cup each milk and orange juice, 2 tablespoons melted butter, and 2 teaspoons minced fresh ginger. Lime-Cayenne: Add 1 tablespoon lime juice and a pinch of cayenne. I saw this recipe posted in a local newspaper for the upcoming Thanksgiving. I haven't made this yet, but wanted to post it for others who are looking for a nice side dish for the holidays. Prep time includes the time needed to bake the potatoes.

10 large sweet potatoes (approx. 5 lbs)
3/4 cup butter
1/3 cup dark brown sugar (packed)
1/4 cup honey
1/4 cup orange marmalade
2 tablespoons candied ginger (minced)
1 1/2 teaspoons salt
1 teaspoon black pepper
1/4 cup dark rum (optional)

Steps:

  • Preheat oven to 375F.
  • Bake potatoes on a cookie sheet until soft (approx. 1.5 hrs).
  • When cool enough to handle, peel and chunk potatoes into a large bowl.
  • Add butter and other ingredients and toss to mix.
  • Mash potatoes thoroughly or puree in a blender. A hand mixer works well also.
  • Lower oven temperature to 350F.
  • Turn mashed potatoes into a casserole dish and dot the top with a bit of additional butter.
  • Bake 30-40 minutes until hot.
  • NOTE: This can be made ahead of time. Bring the mashed potato mixture to room temperature before dotting with butter and baking until hot.

  • Place potatoes in large pot; add enough water to cover by 2 inches. Bring to boil over high heat. Reduce heat to medium-low; simmer until potatoes are very tender, about 40 minutes. Drain; cool. Peel; cut into large chunks. Transfer to processor.
  • Bring cider to boil in heavy medium saucepan over high heat. Reduce heat to medium-low; simmer until cider is reduced to 1 cup, about 30 minutes.
