Orange-Sugared Pecans image

I regularly cook up these candied pecans for Christmas gift-giving and family munching. The citrusy-sweet flavor is different and delicious.

1-1/2 cups sugar
1/4 cup water
3 tablespoons orange juice concentrate
2 cups pecan halves
1/2 teaspoon grated orange zest

Steps:

  • In a large heavy saucepan, combine the sugar, water and orange juice concentrate. Cook over medium-high heat, without stirring, until a candy thermometer reads 238° (soft-ball stage). Remove from the heat; stir in pecans and orange zest. , Beat until mixture thickens and loses its gloss, about 2 minutes. Drop by teaspoonfuls onto waxed paper to set. Store in an airtight container.

1 cup white sugar
1 teaspoon ground cinnamon
1 teaspoon salt
1 egg white
1 tablespoon water
1 pound pecan halves

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Mix sugar, cinnamon, and salt together in a bowl.
  • Whisk egg white and water together in a separate bowl until frothy. Toss pecans in the egg white mixture. Mix sugar mixture into pecan mixture until pecans are evenly coated. Spread coated pecans onto a baking sheet.
  • Bake in the preheated oven, stirring every 15 minutes, until pecans are evenly browned, 1 hour.

Fancy Schmancy BUT Easy Peasy... hehehe Use to dress up a cake, add to a filling between cake layers, top a sweet potato casserole or eat them as they are. These are beautiful and delicious. 1/4 cup brown sugar, packed
1/2 cup pecan halves
1 tablespoon orange juice

Steps:

  • In a small bowl combine brown sugar and orange juice. Add pecans and stir to coat.
  • Spread in an 8x8 sprayed or greased pan.
  • Bake for 12 minutes at 350°F or until nuts are browned and syrup is bubbly, stirring once.
  • Pour out on a greased baking sheet and separate nuts.

My ex-mother-in-law lives in the South and has lots of pecan trees. She sends me bags of shelled pecans every year for Christmas. I found out how they make the roasted pecans at the fair. Even though they use big roasters, these turn out just as great.

1 egg white
1 tablespoon water
2 ¼ cups pecan halves
½ cup white sugar
¼ teaspoon salt
1 ½ teaspoons ground cinnamon

Steps:

  • Preheat oven to 225 degrees F (105 degrees C). Lightly grease a rimmed baking pan.
  • Combine the egg white and water in a mixing bowl; beat until fluffy. Fold in the pecans to coat evenly. Combine the sugar, salt, and ground cinnamon in a shaker or cup with a lid. Dust the pecans evenly with the sugar mixture. Spread the nuts over the prepared pan.
  • Bake in preheated oven until toasted and fragrant, stirring every 15 minutes, about 1 hour. Cool on pan, and store in an airtight container.

Orange Cream with a hint of spice to make it special. Came up with this recipe when I wanted to make something special for my sister for her birthday. :) Easy, tasty treat, great for gifting. We like to save the extra crumbs for sprinkling on ice cream (if we don't eat it all first.)

1 egg white
1 tsp vanilla extract
1 tsp orange extract
1 tsp cinnamon
1 tsp ground coriander seed
1/2 tsp ground cardamom
1/2 c sugar
1 1/2 c pecans
sprinkle salt

Steps:

  • 1. Preheat oven to 300 degrees F.
  • 2. Beat egg white & extracts until frothy and foamy. Beat in spices and sugar. Stir in pecans.
  • 3. Spread mixture on a baking sheet. Sprinkle with salt. Bake 25-30 minutes. About halfway through baking time, stir with fork, and add more salt, to taste (the egg should be cooked enough to taste at this point, if you are careful not to burn yourself.) The nuts are done once they have developed a nice toasted flavor. Cool. They will have a crisp, delightful flavored coating.

Number Of Ingredients 4

1 cup sugar
1/4 cup orange juice
1 tablespoon grated orange peel
4 cups pecan halves (about 1 pound)

Steps:

  • Line cookie sheet with waxed paper. Bring first 3 ingredients to boil in heavy large saucepan over medium heat, stirring constantly. Boil 30 seconds. Stir in pecans. Spread pecans on waxed paper. Cool completely. Separate pecans if necessary. (Can be prepared up to 1 week ahead. Store in airtight container.)
