1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 large eggs, at room temperature
2/3 cup granulated sugar
12 tablespoons (1 1/2 sticks) unsalted butter, melted
2 teaspoons finely grated orange zest
1 teaspoon vanilla extract
1/2 cup milk
3/4 cup fresh orange juice (from about
2 oranges)
1 8-ounce package cream cheese, at room temperature
10 tablespoons unsalted butter, cut into pieces, at room temperature
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
2 teaspoons finely grated orange zest
3 drops yellow food coloring (optional)
1 drop red food coloring (optional)
Store-bought candied orange zest, for topping

Steps:

  • Make the cupcakes: Preheat the oven to 350 degrees F and line a muffin pan with 12 cupcake liners. Whisk the flour, baking powder and salt in a medium bowl.
  • Beat the eggs and granulated sugar in a large bowl with a mixer on medium-high speed until pale and fluffy, about 2 minutes. Reduce the speed to medium low; slowly beat in the melted butter, then add the orange zest and vanilla.
  • Beat in the flour mixture in 2 additions, alternating with the milk, beginning and ending with the flour mixture; beat until just combined (do not overmix).
  • Divide the batter evenly among the muffin cups, filling each about two-thirds of the way. Bake until a toothpick inserted into the centers comes out clean, about 18 minutes. Let cool 5 minutes, then remove the cupcakes to a rack to cool completely.
  • Meanwhile, make the frosting: Bring the orange juice to a boil in a saucepan; reduce the heat to medium and simmer until reduced to1 1/2 tablespoons, about 8 minutes. Let cool.
  • Beat the cream cheese in a large bowl with a mixer on medium-high speed until smooth and fluffy. Beat in the butter, a little at a time, until smooth. Reduce the mixer speed to low; sift the confectioners' sugar into the bowl and beat until smooth. Add the vanilla, the cooled orange syrup, orange zest and food coloring and beat on medium speed until combined. Refrigerate until spreadable, about 15 minutes. Spread the frosting on the cupcakes; top with candied orange zest.

1/2 cup buttermilk
1/3 cup orange juice

FROSTING:

1 jar (7 ounces) marshmallow creme
2 cups vanilla ice cream
Orange peel strips

Steps:

  • In a large bowl, beat the first eight ingredients until well blended. Combine the flour, baking powder, baking soda and salt; gradually beat into egg mixture until blended., Fill paper-lined muffin cups three-fourths full. Bake at 350° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., In a large bowl, beat butter until fluffy; beat in confectioners' sugar and extracts until smooth. Add marshmallow creme; beat until light and fluffy. Using a melon scoop, remove a small amount of cake from tops of cupcakes. Top each with a small scoop of ice cream. Decorate with frosting and orange peel strips. Serve immediately.

3 3/4 cups old-fashioned rolled oats, divided
2 1/2 cups all-purpose flour
2/3 cup oat bran
1/2 teaspoon baking soda
1 1/2 teaspoons baking powder

2 teaspoons ground cinnamon
1 1/2 cups unsalted butter, room temperature
1 cup granulated sugar
1 cup packed light brown sugar
4 large eggs
2 teaspoons pure vanilla extract
1 cup sour cream
1 1/2 cup raisins
1 cup sweetened flaked coconut
Orange Cream Cheese Icing, recipe follows
4 ounces cream cheese, room temperature
1/2 cup unsalted butter, room temperature
Pinch salt
2 1/2 cups confectioners' sugar, sifted
2 teaspoons grated orange zest
2 teaspoons orange flavored liqueur or extract

Steps:

  • Preheat the oven to 375 degrees F. Line standard cupcake pans with 36 cupcake liners.
  • Whisk 2 cups oats with the flour, oat bran, baking soda, baking powder, salt, and cinnamon in a medium bowl. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and both sugars on medium-high speed until pale and fluffy. Add the eggs, 1 at a time, beating until each is smooth, scraping down the sides of the bowl if needed. Beat in the vanilla. Turn the speed to low, add the flour mixture, and beat until combined. Beat in the sour cream. Stir in the raisins by hand. Transfer 2 3/4 cups batter to a small bowl, and then stir the coconut and the remaining 1 3/4 cups oats. Turn the speed to low and beat in the confectioners' sugar, 1/2 cup at a time. Increase the speed to medium-high and beat until light and fluffy. The icing is an orange flavored butter cream, the cupcakes themselves lightly orange flavored and the cream filling, in this case is just ordinary whipped topping with part of the icing recipe used in this. Please see my vanilla frappuccino recipe if you would like home made cream filling. Enjoy! And I welcome criticism. Can't improve if no input!

2 1/2 cups all-purpose flour (start cupcake)
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk
1/2 cup sour cream
3 drops orange food coloring (optional)
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 tablespoon orange extract (end cupcake)
2 cups unsalted butter, softened (start icing)
4 cups confectioners' sugar
2 teaspoons vanilla extract
2 tablespoons water
1 teaspoon orange extract
3 drops orange food coloring (optional, end icing)
2 cups non-dairy whipped topping (start filling)
1 cup of left over orange buttercream frosting (from above. see instructions, end filling)

Steps:

  • Cupcakes: Preheat oven to 350°F Prepare baking pans with cupcake liners.
  • In a large bowl, whisk baking soda, flour and salt. In a small bowl, combine the buttermilk and sour cream; set aside.
  • In separate bowl, using an electric mixer at medium speed, beat butter until smooth. Slowly add sugar, beat until light and fluffy. Add eggs one at a time.
  • Add extract and 2 to 4 drops food coloring (optional), mixing well.
  • Add flour mixture alternating with buttermilk mixture. Mix until well combined.
  • Pour into baking cups to 3/4 full. Bake approximately 20 minutes, or until a toothpick inserted into the center of the cupcake comes out clean. Remove from oven, and allow to cool completely on wire rack before assembling.
  • Orange Buttercream Frosting: Blend butter until smooth; slowly add confectioners' sugar until combined. Add vanilla and water; mix at low speed 1 minute, then at high speed for 5 minutes. Set aside 1 cup frosting. Add extract and food coloring to remaining frosting, mixing well.
  • Vanilla Buttercream Filling: In a medium bowl, fold in non-dairy whipped topping, 1/2 cup at a time, into the 1 cup of reserved frosting. Whisk until smooth.
  • To assemble cupcakes: Fill a pastry bag fitted with a large open star tip with Vanilla Buttercream Filling. Insert the tip halfway into the center of the baked cupcake; press until the top of cupcake begins to rise slightly. After filling cupcakes, frost as desired.

4 large whole eggs
2 teaspoons orange extract that uses real orange oil
2 1/2 cups all-purpose flour

1/2 cup heavy cream
1/2 cup orange soda
1 teaspoon fresh orange zest
2 cups heavy cream
1/2 cup sugar
1 teaspoon orange extract that uses real orange oil
1 cup fresh crushed pineapple with juice
1 teaspoon orange zest

Steps:

  • For the cupcakes: Preheat the convection oven to 325 degrees F or a standard oven to 350 degrees F.
  • In large mixer bowl, cream together the sugar and butter until light and fluffy with a heavy duty mixer. Add the eggs, one at a time, and mix thoroughly after each addition. Add the orange extract and mix well. Combine the flour, baking soda and salt. Add half of the flour to the mixer bowl along with the cream. Mix until the flour is mixed in, scraping the sides of the bowl with a rubber spatula. Add the rest of the flour mixture, orange soda and orange zest. Mix until the batter is smooth and all of the flour lumps are gone.
  • Fill 24 cupcake liners half full and bake for 20 minutes in the convection oven or 28 minutes in the standard oven. The tops of the cupcakes should be lightly browned. Check the cupcakes to make sure no batter sticks to a wooden toothpick when inserted into the cupcake. Cool the cupcakes completely.
  • For the topping: In large mixer bowl, beat the cream, sugar and extract on medium speed until stiff peaks form using heavy duty mixer. Gently fold in the pineapple and zest using a plastic spatula.
  • To assemble: Top each cupcake with large dollop of topping. Serve immediately or chill until ready to serve.

cooking spray
2/3 cup granulated sugar
2/3 cup brown sugar
1/2 cup vegetable oil
2 large eggs
2 1/2 cups all-purpose flour
1 tablespoon cocoa powder, substitue for 1 t flour
2 teaspoons baking powder
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup 1% low-fat milk
2 teaspoons grated orange rind
1 teaspoon vanilla extract
1 (8 ounce) package reduced-fat cream cheese, chilled
3 cups powdered sugar
2 tablespoons finely chopped walnuts, toasted (optional)

Steps:

  • Preheat oven to 350.
  • Peel the beets with a vegetable peeler. Grate beets using lrg holes of grater (use gloves or beets will dye hands).
  • Spray muffin tins with cooking spray.
  • Combine sugars, oil, and eggs in lrg bowl, beat at med speed until well blended. Add beets and beat well.
  • In seperate lrg bowl add flour, and other dry ingredients and whisk together until mixed.
  • Add flour mixture to sugar mixture alternately with milk. Beginning and ending with flour mixture.
  • Pour batter into cupcake tins and tap on counter to remove air bubbles.
  • Bake at 350 for 20-30 min or until toothpick inserted comes out clean. Cool in pans 10 mins on wire racks, remove from pans and cool completely.
  • Frosting:.
  • Beat rind, vanilla, and cream cheese with mixer at high speed until fluffy. Add powdered sugar and beat at low speed until blended. (don not overbeat).
  • Frost cupcakes and sprinkle with walnuts if using.
  • Store in refrigerator.

Steps:

  • Preheat oven to 350 degrees. Paper line or grease 24 muffin cups. • Combine cake mix, orange juice, eggs, oil and orange zest in large mixing bowl. 1/2 cup boiling water
1 1/4 cups all-purpose flour

  • Put dates into a small bowl and pour boiling water over them. Set aside to cool to room tempature, about 10 minutes.
  • In a medium mixing bowl stir together flour, baking powder, baking soda, cinnamon, and salt, set aside.

Orange Buttercream Frosting
2 cups - unsalted butter, softened
4 cups - Domino® Confectioners Sugar
2 teaspoons - vanilla extract
2 tablespoons - water
1 teaspoon - orange extract
2 to 4 drops - orange food coloring (optional)
Vanilla Buttercream Filling
2 cups - non-dairy whipped topping

Steps:
