From Bon Appetite March 2000 - but this recipe is in my 2001 book. I usually have all the ingredients for this in the house. Yum!

1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/8 teaspoon salt
3/4 cup packed golden brown sugar
1/2 cup unsalted butter, room temperature
4 teaspoons grated orange peel
1 teaspoon vanilla extract
1 large egg
9 ounces bars bittersweet chocolate, cut into chunks
1 1/2 cups hazelnuts, toasted, husked, chopped (about 6 ounces)

Steps:

  • Preheat oven to 375°F Combine flour, baking soda and 1/8 teaspoon salt in medium bowl; whisk to blend.
  • Using electric mixer, beat brown sugar, unsalted butter, grated orange peel and vanilla extract in large bowl until light and fluffy.
  • Beat in egg. Add flour mixture and mix just until combined. Mix in chocolate chunks and toasted hazelnuts.
  • Drop batter by heaping tablespoonfuls onto 2 ungreased baking sheets, spacing 2 inches apart.
  • Bake cookies until just firm to touch and beginning to brown, about 13 minutes. Transfer to racks; cool. (Can be made 2 days ahead. Store airtight at room temperature.).

Oh man, I love this cake. I don't even bother to frost it...it is really moist and delicious on its own. The recipe is from the Moosewood Book of Desserts, a book I definitely recommend. The pound cake chapter alone is worth the price of the book.

2 cups butter, at room temperature
2 1/2 cups sugar
6 eggs, lightly beaten
2 teaspoons vanilla extract
1 grated orange, rind of
4 cups unbleached white flour
2 teaspoons baking powder
1/2 cup orange juice
1/2 cup milk
1 cup ground toasted hazelnuts
1 cup coarsely chopped semisweet chocolate

Steps:

  • Preheat the oven to 350°F Lightly butter a 10-inch bundt pan and dust it with flour.
  • In a large bowl, cream the butter and sugar until fluffy. Thoroughly beat in the eggs, vanilla, and orange peel.
  • In a separate bowl, combine the flour and baking powder. Add the flour mixture by thirds, alternating first with the orange juice and then with the milk, and beat well after each addition. Stir in the nuts and chocolate by hand.
  • Pour the batter into the prepared pan and bake for 1 1/4 to 1 1/2 hours, until a knife inserted in the center comes out clean.
  • Cool the cake in the pan for 10 minutes; then turn it out and transfer to a wire rack to cool completely.

1 cup chocolate-hazelnut spread
2/3 cup cake flour
1 tablespoon orange zest and 1 tablespoon orange juice (from 1 orange)
1 large egg
1/4 teaspoon kosher salt
1/2 cup hazelnuts, roughly chopped

Steps:

  • Preheat the oven to 350 degrees F and line 2 rimmed baking sheets with parchment paper.
  • Add the chocolate-hazelnut spread, flour, orange zest, orange juice, egg and salt to a large bowl. Using a hand-mixer, beat on medium-high until thoroughly combined. Fold in the hazelnuts by hand.
  • Use a 1 tablespoon size ice cream scoop to scoop balls of the cookie dough straight onto the prepared baking sheets, keeping them 2-inches apart. Bake until the edges are set but the tops are still slightly soft, 13 to 15 minutes
  • Let the cookies cool for 10 minutes on the baking sheets before transferring them to a wire rack to cool completely.

2 large eggs
1/4 cup frozen orange juice concentrate, thawed
2 1/2 tablespoons grated orange peel
2 cups all purpose flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/2 cup (1 stick) chilled unsalted butter or margarine, cut into small pieces
1 1/3 cups sugar
1 3/4 cups hazelnuts, toasted, husked
6 ounces bittersweet (not unsweetened) or semisweet chocolate, coarsely chopped
14 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped

Steps:

  • Line 12x18x1-inch baking sheet with heavy-duty foil. Whisk eggs, juice and orange peel in large bowl. Mix flour, baking powder, salt, ginger and cinnamon in processor. Add butter and cut in using on/off turns until mixture forms coarse meal. Add sugar and just blend in. Add nuts and chop coarsely using 6 on/off turns. Add nut mixture to egg mixture. Stir until moist dough forms. Mix in 6 ounces chocolate. Drop half of dough by heaping tablespoons in line down length of left half of prepared baking sheet. Repeat with remaining dough down right half of sheet. Chill until dough is firm, about 30 minutes.
  • Position rack in center of oven and preheat to 375°F. Using moistened fingertips, shape dough into 2-inch-wide 1-inch-high logs. Bake until logs are golden brown and beginning to crack on top, about 25 minutes (each log will spread to about 4-inch width). Reduce oven temperature to 300°F.
  • Cool logs in pan on rack 10 minutes. Pull foil with logs onto work surface. Score logs crosswise into 3/4-inch-wide slices. Cool until cookies begin to firm, about 15 minutes. Using serrated knife, cut through scored lines. Arrange cookies cut side up on 2 heavy cookie sheets. Bake 15 minutes. Turn cookies over. Bake until crisp, about 15 minutes. Cool on sheets on racks. (Can be made 1 day ahead. Store airtight.)
  • Line large cookie sheet with heavy-duty foil. Stir 14 ounces chocolate in top of double boiler over barely simmering water until melted. Dip 1 long side of each cookie into chocolate and set chocolate side down on prepared sheet. Chill until chocolate is set. Peel cookies off foil. (Can be made 1 week ahead. Cover and chill in airtight container.) Serve cold.
