This is my low calorie version of certain fast food chains Orange Chicken. Most of the ingredients are "to taste", but this will give you the basic idea.

Number Of Ingredients 9

1/3 cup orange juice concentrate
1/3 cup soy sauce
1/4 teaspoon ground ginger
2 -3 minced fresh garlic cloves
1 tablespoon sesame oil
1/8 teaspoon chili flakes
3 -4 chicken pieces (I prefer breast meat)
1/2 tablespoon sesame seeds (for garnish)
1/2 tablespoon orange zest (for garnish)

Steps:

  • Combine orange juice concentrate, soy sauce, ginger, garlic, sesame oil and chili flakes in a bowl.
  • Add chicken pieces (either cut or whole).
  • Marinate 4-6 hours minimum (you get more orange flavor the longer it marinates).
  • *For whole chicken pieces, it can be grilled on a BBQ or in a skillet.
  • *For cut chicken pieces, it works great as a stir-fry over rice. (NOTE: for cut/smaller pieces of chicken, marinate for for closer to 2-3 hours).
  • Sprinkle chicken with sesame seeds and orange zest, serve and enjoy.

200 gram(s) chicken breast cut in cubes
1 medium egg white
1 tablespoon(s) all purpose flour
1 tablespoon(s) corn starch
- salt to taste
- black pepper
FOR THE SAUCE
1 tablespoon(s) soy sauce, low sodium
- juice of 1 orange
1 cup(s) water
1 tablespoon(s) sugar
2 clove(s) garlic minced
1/2 teaspoon(s) ginger minced
FOR THE STARCH
1 tablespoon(s) corn starch
4 tablespoon(s) water

Steps:

  • Mix chicken with egg white, flour, corn starch, salt, and black pepper. Keep aside.
  • Mix the sauce ingredients together and keep aside.
  • Mix the starch ingredients together and keep aside.
  • Add two teaspoons oil in a medium pan, when hot add the chicken, and fry for 3 minutes on high. Turn off heat and immediately cover tightly with a lid and keep a side. The chicken will continue cooking and will stay tender.
  • In a pan add the sauce mixture and let it come to a boil, and then add the green onion.
  • Stir in the cornstarch mixture, when thick add the chicken, and let it cook on medium low heat for two minutes.
  • Serve immediately.
