Orange Cappuccino Cappuccino gets its name from the robes of Capuchin monks which are the same color as this Italian coffee-milk drink. It is usually made from espresso coffee but by using strong coffee, it´s possible to enjoy even without an espresso machine.

1/2 cup whipping cream
1 tablespoon powdered sugar
2 cups milk
2 cups double strength hot coffee
1 teaspoon grated orange peel
1 tablespoon frozen orange juice concentrate, thawed
1/4 teaspoon cinnamon
nutmeg

Steps:

  • 1. In small bowl, whip cream with powdered sugar until stiff peaks form; refrigerate until ready to serve. In medium saucepan over medium heat, heat milk to serving temperature. Add coffee, orange peel, orange juice concentrate and cinnamon. Strain into serving pot. To serve, pour into small cups, filling half full. Top each with a spoonful of whipped cream and a sprinkle of nutmeg. Enjoy!
  • 2. MICROWAVE DIRECTIONS: Prepare whipping cream as directed above. In 4-cup microwave-safe measuring cup, heat milk to serving temperature. Add coffee, orange peel, orange juice concentrate and cinnamon. Serve as directed above

2 oz sweet baking chocolate
1/2 cup water
1/4 cup orange cappuccino-flavored instant coffee mix
1 tablespoon grated orange peel
2 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup butter or margarine, softened
2 cups granulated sugar
4 eggs, separated
1 teaspoon vanilla
1 cup buttermilk
2 oz sweet baking chocolate
1/2 cup butter or margarine
2 tablespoons orange cappuccino-flavored instant coffee mix
8 cups powdered sugar
1/4 cup milk
1/4 cup orange juice

Steps:

  • Heat oven to 350°F. Grease and flour 13x9-inch pan. In small saucepan, heat 2 ounces chocolate and the water over low heat, stirring frequently, until chocolate is melted. Stir in 1/4 cup coffee mix (dry) and orange peel; cool slightly. In medium bowl, mix flour, baking soda and salt; set aside.
  • In large bowl, beat 1 cup butter and the granulated sugar with electric mixer on medium speed until fluffy. Beat in egg yolks, 1 at a time, beating well after each addition. Beat in chocolate mixture and vanilla. Beat in flour mixture alternately with buttermilk, beating until smooth after each addition.
  • In medium bowl, beat egg whites with electric mixer on high speed until stiff peaks form. Fold into batter. Pour into pan.
  • Bake 42 to 45 minutes or until top springs back when touched lightly. Cool completely, about 1 hour.
  • In medium saucepan, heat 2 ounces chocolate and 1/2 cup butter over low heat, stirring frequently, until melted and smooth. Stir in 2 tablespoons coffee mix (dry). In large bowl, beat powdered sugar, milk, orange juice and melted chocolate mixture on medium speed until light and fluffy. Spread frosting evenly over cake.

1/4 cup margarine or butter, melted
2 tablespoons water
1/3 cup powdered sugar
1/2 teaspoon frozen (thawed) orange juice concentrate or orange juice
1/2 teaspoon grated orange peel
1 ounce fat-free cream cheese, softened

Steps:

  • Heat oven to 350°F. Spray square pan, 9x9x2 inches, with cooking spray. Mix flour, granulated sugar, cocoa, espresso and baking powder in medium bowl. Stir in egg product, margarine and water. Spread in pan.
  • Bake 18 to 20 minutes or until center is set and brownies begin to pull away from sides of pan. Cool 15 minutes.
  • Mix all glaze ingredients until smooth. Drizzle glaze over brownies. Sprinkle with additional grated orange peel if desired. For brownies, cut into 4 rows by 4 rows.

I created this recipe from another candy recipe that didn't turn out quite like I wanted it to. As it turns out...this fudge creation turned out a LOT better than the original candy recipe I was attempting.

1 1/2 tsp instant coffee granules
1 Tbsp heavy whipping cream
2 oz semi-sweet baking chocolate (1 oz. squares)
1/4 c butter, softened (1 1/2 tsp. extra needed for buttering pan)
2 c granulated sugar
1/2 c sour cream
12 oz white baking chocolate (baker's 1 oz. squares)
1 jar(s) marshmallow cream (7 oz.)
1 1/2 tsp orange zest (from an orange...not the dried peel)
1/2 tsp orange extract

Steps:

  • 1. Line a 9" square pan with non-stick foil with edges hanging over sides. Grease with 1 1/2 teaspoons butter. Set aside. In a small saucepan over low heat combine whipping cream, coffee granules 2 oz. semisweet chocolate squares. Stir gently until chocolate is melted. Remove from heat and set aside until cool. In a large heavy saucepan combine remaining butter (1/4 cup) with sour cream and sugar. Cook and stir over medium heat until sugar is completely dissolved. Bring mixture to a rapid boil and cook until candy thermometer reaches 234^ (soft ball stage), approximately 5 minutes. Remove from heat; stir in white chocolate squares and marshmallow cream (open jar and place in microwave for 10-15 seconds makes for much easier removal) until completely melted. Stir in orange zest and extract. Pour into prepared pan. Drop dollops of the coffee/chocolate mixture over orange mixture in pan. Swirl with a butter knife to blend coffee/chocolate mixture throughout fudge. Chill until firm. Remove foil (using extended handles) and cut into 1" squares. Yield: 2 lbs.

Steps:

  • Mix milk, coffee and dry pudding mix in a medium bowl with a wire whisk for 2 minutes or until blended.
