I created this sauce to go with some frozen packaged Orange-Chicken Ravioli. I thought a white sauce would be too plain, and any other of the suaces in my cookbook would clash. I think it turned out pretty good - tell me what you think.

2 tablespoons flour
2 tablespoons butter
1 cup milk
2 teaspoons carrots (grated)
1/4 cup orange juice
1 teaspoon orange zest (grated peel)
1 teaspoon dried basil
1 ounce vodka
1/2 cup cheddar cheese (grated)
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Make a white sauce by adding flour to melted butter and stir with medium heat until smooth.
  • Gradually add milk stirring constantly until smooth and bubbling.
  • Add remaining ingredients and, again, stir until smooth and bubbling. Add more orange juice if sauce gets too thick.
  • Serve over pasta or poached salmon.

1/4 cup butter
2 large oranges, zest of, finely grated
20 Greek olives, pitted and chopped (kalamata)
2 cloves garlic, finely chopped
1/3 cup fresh orange juice
fresh ground black pepper (lots)
1/3 cup chopped fresh basil leaf
1/4 cup grated parmesan cheese
3/4 lb hot cooked spaghetti or 3/4 lb cooked linguine

Steps:

  • Melt butter in a medium skillet.
  • Add orange zest, olives, and garlic,and cook for 1 minute.
  • Add orange juice and pepper and cook for another minute.
  • Toss with hot pasta, add basil and parmesan cheese, and toss again.
  • Serve at once.
  • Pass extra grated cheese and the pepper mill for each person to add to taste.

After a mad search on the net for a recipe for this sauce I had to create my own. This can be reheated in the microwave without the usual cream sauce defects. I just love the light green color and how well it displays over tri color or regular pasta, salmon and grilled chicken. I have been putting this on everything.

2 cups fresh basil leaves
4 cloves garlic, minced
¼ cup olive oil
2 ounces pine nuts
½ cup grated Parmesan cheese
salt and pepper to taste
1 pint light cream

Steps:

  • In a food processor, combine basil and garlic. Begin processing, and pour in olive oil in a thin stream. Process for about 40 seconds, or until mixture begins to emulsify. Add pine nuts and Parmesan, then blend for 1 minute.
  • Heat cream in a saucepan over low heat until simmering. Pour 1/2 of the hot cream into the processor with basil pesto, and pulse for 20 seconds to incorporate. Pour mixture back into cream, and simmer for 5 minutes, or until thickened.

This dish is elegant enough for company and tastes like you spent all day in the kitchen. With five children to keep up with, I look for recipes that are easy to prepare. They love this chicken and pasta meal, with its honey orange sauce. I use citrus fruits and juices often in cooking since citrus is plentiful here in Southern California.

1 pound boneless skinless chicken breasts, cut into 1/2-inch strips
3 tablespoons butter, divided
1 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon pepper
1 medium onion, sliced
1 tablespoon cornstarch
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 cup orange juice
1/4 cup honey
1/2 cup pitted ripe olives, halved
Hot cooked linguine

Steps:

  • In a large skillet, saute chicken in 2 tablespoons butter until chicken is no longer pink. Sprinkle with the salt, paprika and pepper. Remove and keep warm. In the same pan, saute onion in remaining butter until tender. , In a small bowl, combine the cornstarch, ginger, nutmeg, orange juice and honey; gradually pour over onion. Bring to a boil; cook and stir for 2 minutes or until thickened. Add olives and chicken. Simmer, uncovered, for 5 minutes or until chicken is heated through. Serve with linguine.
