MANDARIN ORANGE SALSA

4 mandarin oranges (peeled and segmented)
¼ cup diced red onion
¼ cup chopped cilantro
1 jalapeno (deseeded and finely diced)
2 tablespoons lime juice (from one lime)
¼ teaspoon kosher salt

Steps:

  • Once you've peeled and segmented the mandarin oranges, slice each segment into quarters.
  • In a small bowl, stir together the oranges, red onion, cilantro, jalapeno, lime juice, and salt.
  • Serve with tortilla chips or use as a topping on grilled seafood.

Yield 4 cups salsa.

SALSA:
2 medium tart apples, chopped
1 cup chopped strawberries
2 medium kiwifruit, peeled and chopped
1 small orange
2 tablespoons brown sugar
2 tablespoons apple jelly, melted
CHIPS:
8 flour tortillas (7 or 8 inches)
1 tablespoon water
1/4 cup sugar
2 teaspoons ground cinnamon

Steps:

  • In a bowl, combine apples, strawberries and kiwi. Grate orange peel to measure 1-1/2 teaspoons; squeeze juice from orange. Add peel and juice to apple mixture. Stir in brown sugar and jelly. , For chips, brush tortillas lightly with water. Combine sugar and cinnamon; sprinkle over tortillas. Cut each tortilla into eight wedges. Place in a single layer on ungreased baking sheets. , Bake at 400° for 6-8 minutes or until lightly browned. Cool. Serve with salsa.

2 large oranges, peeled and cut into chunks
1 tomato, seeded and diced
½ cup minced red onion
1 tablespoon apple juice
1 teaspoon grated orange zest
1 teaspoon minced garlic
¼ jalapeno pepper, minced
½ teaspoon minced fresh ginger root
1 pinch salt
1 tablespoon chopped fresh cilantro

Steps:

  • Combine oranges, tomato, onion, apple juice, orange zest, garlic, jalapeno pepper, ginger, and salt in a large bowl; toss to combine. Cover and refrigerate until chilled, about 30 minutes. Stir in cilantro before serving.

1/4 cup lime juice (from about 2 limes)
2 tart apples, peeled and cored
1 small onion, finely diced
A handful of cilantro, roughly chopped
1 red chili or jalapeño pepper, seeded and minced, seeds reserved
1 poblano pepper, seeded and minced
2 tablespoons minced ginger
1 tablespoon sugar or apple-cider syrup (see note)
Salt
1/2 cup chopped walnuts, toasted

Steps:

  • Pour the lime juice into a medium bowl. Finely dice the apples and toss with the onion in the juice. Add the cilantro, peppers, ginger and sugar and toss until well combined. Season with salt to taste. For more heat, add some of the reserved jalapeño seeds. Just before serving, add the walnuts.

3 oranges, segmented, plus 2 tablespoons juice
1 diced yellow bell pepper
1 jalapeno chile (seeds and ribs removed for less heat), minced
2 scallions, thinly sliced
1 tablespoon olive oil
1 tablespoon white-wine vinegar
Coarse salt and ground pepper

Steps:

  • Segment 3 oranges, reserving juice. Cut segments into 1/2-inch pieces.
  • In a medium bowl, combine orange pieces, reserved juice, yellow bell pepper, jalapeno chile, scallions, and olive oil and white-wine vinegar. Season with coarse salt and ground pepper; toss well to combine. Serve with tortilla chips or over meat, fish, or poultry.

Cranberry, Orange and Cilantro Salsa image

1 red bell pepper
1 fresh poblano chili
1/2 cup sugar
1/4 cup orange juice
2 cups cranberries, coarsely chopped
1/4 cup chopped toasted hazelnuts
2 tablespoons grated orange peel
1/3 cup chopped fresh cilantro

Steps:

  • Char red bell pepper and fresh poblano chili over gas flame or in broiler until blackened on all sides. Enclose pepper and chili in paper bag. Let stand 10 minutes to steam. Peel, seed and chop pepper and chili.
  • Mix sugar and orange juice in heavy large saucepan over medium heat, stirring until sugar dissolves. Remove from heat. Mix in chopped cranberries. Transfer mixture to large bowl. Cool to room temperature. Mix roasted pepper and chili, chopped hazelnuts and grated orange peel into salsa. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • Mix in cilantro into salsa. Season to taste with salt and pepper.
