PROSCIUTTO AND PESTO PANINI



Prosciutto and Pesto Panini image

This prosciutto and pesto panini is an easy recipe to make for lunch or a light dinner.

Number Of Ingredients 8

One 10-ounce loaf ciabatta, halved horizontally and soft interior removed
1/3 cup Pesto for Prosciutto Panini
Extra-virgin olive oil
1/3 pound Prosciutto de Parma, thinly sliced
Tapenade for Prosciutto and Pesto Panini, optional
1/4 pound fontina cheese, thinly sliced
1/2 cup baby arugula or basil, optional
Coarse salt and freshly ground pepper

Steps:

  • Preheat a grill pan over medium-high heat or a panini press.
  • Spread one cut side of ciabatta with the pesto and the other with olive oil. Layer one side of ciabatta with prosciutto, tapenade, if desired, red pepper, and arugula or basil, if desired; top with cheese. Drizzle with olive oil and season with salt and pepper. Top with remaining bread.
  • Brush top and bottom of the sandwich with olive oil. Place on grill pan and weight top of sandwich with a heavy skillet or a foil-wrapped brick. If using a panini press, grill according to manufacturer's instructions. Grill 3 to 4 minutes on first side, turn, weight down, and continue cooking until sandwich is golden and cheese is melted, 3 to 4 minutes.
  • Cut sandwich into quarters. Serve immediately.

CLASSIC ITALIAN PRESSED BAGUETTE



Classic Italian Pressed Baguette image

1/3 baguette or 1 small baguette roll
1/2 teaspoon olive oil
Kosher salt and ground black pepper
1/2 roasted red pepper
3 slices finely sliced prosciutto
2 slices provolone
4 fresh basil leaves
1/2 teaspoon balsamic glaze
3 slices salami

Steps:

  • Split the baguette open and lightly brush with oil, then season lightly with salt and pepper. Thinly slice the roasted pepper. Layer on the prosciutto, provolone, basil, red pepper, balsamic glaze and salami. Top with the top half of the baguette. (Layering the meat on the bottom and top of the sandwich prevents the fillings from soaking through and making the bread soggy.)
  • Put a bowl or other heavy object (such as a large can or jar) on the sandwich to press it for 1 hour before serving. Or, pack it in the bottom of your lunchbox, under a glass container or drink.

1 thin baguette
3 tablespoons olive oil
Homemade Fig Marmalade, or 1 (8.5-ounce) jar store-bought fig jam
4 ounces Gorgonzola or Roquefort cheese, cut into 1/4-inch-thick slices

Steps:

  • Preheat broiler. Slice baguette in half lengthwise and place on a baking sheet cut-side up; drizzle cut sides with olive oil. Transfer baking sheet to broiler and broil until tops are toasted, 2 to 3 minutes. Turn and continue broiling until bottoms are toasted, 2 to 3 minutes. Let bread cool to room temperature.
  • Divide jam evenly between baguette halves and spread to cover. Top each half with cheese and serve.

5 cloves garlic
1/2 bunch fresh flat-leaf parsley leaves
1/2 cup (1 stick) unsalted butter, softened
1 teaspoon fresh thyme, leaves
1/4 teaspoon coarse salt

Steps:

  • Place garlic and parsley in the bowl of a small food processor; process until finely chopped. Transfer to a medium bowl and add butter; blend using a fork. Add thyme and salt; stir until well combined.

1/2 teaspoon fennel seeds, coarsely crushed
6 green figs, halved lengthwise
6 thin slices pancetta, halved

Steps:

  • Preheat broiler. Sprinkle fennel seeds onto cut sides of each fig. Wrap figs with pancetta, overlapping ends.
  • Place figs, cut sides down, on a baking sheet. Broil until sizzling and pancetta is lightly browned, about 3 minutes. Flip, and broil 2 minutes more. Serve warm.
