Ultimate Patty Melts with Special Sauce image

This patty melt recipe is phenomenal, but is nothing remotely close to a health food. I highly suggest this for an occasional treat or to accompany some beers, peers, and sports. I've developed this recipe from a combination of other recipes over time and out of practicality based on what was in my kitchen at the time of experiment. I purposely left out Worcestershire and other burger flavorings to keep it simple and not detract from the Thousand Island-like sauce. Serve with french fries or hash browns.

6 slices rye bread
6 tablespoons butter, softened
1 pound ground beef
¾ teaspoon ground black pepper
½ teaspoon sea salt
¼ teaspoon onion powder
3 tablespoons mayonnaise
2 tablespoons ketchup
1 tablespoon real bacon bits
1 teaspoon sweet relish
1 teaspoon white sugar
6 slices Cheddar cheese
6 slices provolone cheese

Steps:

  • Cover 1 side of each bread slice thoroughly and generously with butter; set aside.
  • Mix ground beef, pepper, salt, and onion powder together in a bowl until thoroughly combined, but do not overmix or meat will not have the proper consistency after it is cooked. Form 3 patties to fit the shape of the bread.
  • Heat a large nonstick skillet over medium-high heat. Add patties and cook for 2 to 3 minutes. Flip, making sure patties do not break, and cook for another 2 to 3 minutes. Reduce heat to low, and cook until no longer pink in the centers, about 5 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • While the burgers are cooking, combine mayonnaise, ketchup, bacon bits, relish, and sugar for sauce in a small bowl. Stir until mayonnaise and ketchup are well binded.
  • Heat another large skillet over medium-low heat. Place 1 slice bread in the skillet, buttered-side down. Top with 2 slices Cheddar cheese, a cooked patty, and 2 slices provolone cheese. Spread a thin layer of sauce on the unbuttered side of a second slice of bread, and place sauce-side down on top of provolone. Repeat to make remaining patty melts, working in batches if necessary.
  • Cook until bread is lightly toasted and cheese is melted, 2 to 3 minutes per side.

1 medium onion, thinly sliced
1 medium bell pepper, thinly sliced
1 pound lean ground turkey
1/4 cup chili sauce
1/2 teaspoon garlic powder
1/2 cup shredded Cheddar cheese (2 ounces)
4 teaspoons mayonnaise or salad dressing
4 slices whole-grain bread, toasted

Steps:

  • Spray 12-inch nonstick skillet with cooking spray; heat over medium heat. Cook onion and bell pepper in skillet 6 to 8 minutes, stirring frequently, until tender. Remove vegetables from skillet; keep warm.
  • Mix turkey, chili sauce and garlic powder. Shape mixture into 4 patties, each 5 inches in diameter. Cook patties in skillet over medium heat 4 to 5 minutes on each side or until turkey is no longer pink in center.
  • Top each patty with about 1/4 cup of the vegetables; sprinkle with 2 tablespoons of the cheese. Cover and cook 1 to 2 minutes or until cheese is melted. Spread 1 teaspoon mayonnaise on each slice toast. Top each with patty.

3/4 pound ground sirloin
3/4 pound ground chuck
Kosher salt and freshly ground black pepper
1/4 cup vegetable oil
2 medium yellow onions, thinly sliced
12 slices Swiss or American cheese (about 3 ounces)
12 slices rye bread
1/2 cup unsalted butter, at room temperature

Steps:

  • Place the meat on a parchment paper-lined baking sheet and, using your hands, break into small pieces and combine evenly. Arrange in a single layer and season the meat with salt and pepper.
  • Divide the meat into 6 portions (about 4 ounces each). Using your hands, form each portion into a ball-shape by gently tossing it from one hand to the other. Form each portion into a thin patty (about 1/4-inch). Each patty should be somewhat larger than a slice of the bread (the patty will shrink to the size of the bread when cooked).
  • Heat 1 tablespoon of the oil in a large cast-iron skillet over medium-heat. Add the onion, season with salt and pepper, and cook, stirring occasionally, until caramelized, about 7 minutes. Transfer the onion to a bowl.
  • Wipe out the skillet, return to the heat, and heat 1 tablespoon oil. Add 2 patties and saute, turning once, until well browned and cooked to medium, about 1 minute per side. Transfer to a plate and repeat with the remaining oil and patties.
  • Arrange 1/6 of the onion over 1 bread slice. Place 1 cheese slice over the onion and top with a patty. Top the patty with a slice of cheese and cover with a bread slice. Spread about 2 teaspoons of butter over the outside of each slice. Repeat with the remaining ingredients to make 6 sandwiches.
  • Heat the cast-iron skillet over medium heat. Add 2 sandwiches and cook, turning once, until lightly browned and the cheese has melted, about 5 minutes per side. Transfer to a cutting board and repeat with the remaining 4 sandwiches. Cut sandwiches in half crosswise and serve.

1 large egg
- cooking spray
4 slice(s) swiss cheese

Steps:

  • Heat oil in a large nonstick skillet over medium heat. Add onion to pan. Cook 5 minutes or until lightly browned; stir occasionally. Transfer onion to a bowl. Preheat broiler. Combine cheese and next 4 ingredients (through egg white). Divide turkey mixture into 4 equal portions, shaping each into a 1/2-inch-thick patty. Return pan to medium heat. Coat pan with cooking spray. Add patties to pan; cook 4 minutes or until brown. Turn patties over; cook 1 minute. Top each patty with 1 cheese slice; cook 3 minutes or until cheese melts and patties are done. Place bread slices in a single layer on a baking sheet; broil 2 minutes or until toasted. 2 tablespoons butter, softened, divided
1/2 pound lean ground beef (90% lean)

3 large yellow onions, thinly sliced
1 teaspoon salt

1 teaspoon garlic salt

4 slices Swiss cheese
8 slices rye bread
8 teaspoons butter

Steps:

  • Heat butter and oil in a Dutch oven. Add onions, season with salt and pepper, cook, stirring continually, for 3 minutes. Cover with a lid and allow onions to caramelize, stirring occasionally to prevent burning, about 20 minutes.
  • Meanwhile, combine ground beef, garlic salt, and pepper in a bowl and mix thoroughly. Shape ground beef into 4 rectangular patties.

2 tablespoons unsalted butter
1 yellow onion, thinly sliced
2 tablespoons dry sherry wine
Kosher salt and freshly ground black pepper
1 1/2 pounds ground chuck
2 teaspoons garlic salt
Freshly ground black pepper
8 slices marble rye
16 slices white American cheese
1 stick (8 tablespoons) unsalted butter, at room temperature
Yellow mustard, optional, for serving

Steps:

  • For the caramelized onions: Add the butter to a medium skillet over medium-low heat. Add the onions and cook, undisturbed, until the bottoms of the onions begin to caramelize, 10 to 15 minutes. Stir once, then cook for another 5 minutes, undisturbed, until golden. Deglaze with the sherry. Season with salt and pepper and set aside.
  • For the patty melts: Heat a large cast-iron skillet over medium-high heat. Form the meat into 4 balls with your hands. Season both sides with the garlic salt and some pepper. Smash to the desired size (matching up with the size of your bread). Griddle each side until crusty, very seared and about medium/medium rare in the interior (about 130 degrees F), 5 to 6 minutes a side. Thoroughly wipe clean the skillet and reduce the heat to medium low.
  • On each of 4 slices of rye, place 2 slices of cheese, then a patty, then some onions, then 2 more slices of cheese and finally another slice of rye. Butter both sides of each sandwich (crust to crust is a must) and griddle until the bread is slightly golden and the cheese is gooey, 2 to 3 minutes per side (dome with a metal bowl if necessary to ensure the cheese melts). Serve with your favorite yellow mustard if desired.

Steps:

  • Heat 1 tablespoon of the oil in a large cast iron skillet over medium heat. Add the onion, season with some salt and pepper, and cook until golden, about 7 minutes. Put in a bowl and set aside. Wipe out the skillet and add another tablespoon of oil. Season the turkey patties with salt and pepper, and cook in the remaining oil until well browned, about 3 minutes per side. Remove from the skillet. Wipe out the pan.
  • Divide the onions among 4 bread slices, and top with a slice of cheese, a patty, another slice of cheese, and a slice of bread. Spread the top and bottom of the sandwiches with some butter. Heat the cast iron skillet over medium heat. Cook the sandwiches, in batches if needed, turning once, until lightly browned and the cheese melts, about 2 minutes per side. Halve the sandwiches and serve with cranberry sauce, if desired.
