These noodles are wonderful if you need a quick side dish. They use ingredients you may already have in your pantry making them a great last minute dinner addition. The recipe comes from Canadian Living's Make It Tonight.

8 ounces egg noodles
1 tablespoon extra virgin olive oil
2 garlic cloves, minced
1 pinch hot pepper flakes

Steps:

  • Cook noodles in a large pot of boiling salted water until tender but still firm (about 8 min).
  • Drain noodles, reserving 1/4 cup of cooking liquid.
  • Return noodles to pot.
  • You may moisten the noodles with reserved water if desired.
  • Toss with remaining ingredients and serve.

3-1/4 to 3-1/2 cups all-purpose flour
3/4 teaspoon salt
6 eggs, beaten

Steps:

  • In a small bowl, combine 3-1/4 cups flour and salt. Make a well in the center. Pour eggs into well. Stir together, forming a dough. Turn dough onto a floured surface; knead for 3-4 minutes or until smooth, adding remaining flour if necessary. , Divide into nine portions; cover and let rest for 15 minutes. Roll each portion into a 12-in. x 5-in. rectangle. Roll up jelly-roll style, starting with a short side; cut into 1/4-in.-thick strips. Unroll noodles and allow to dry on kitchen towels for 1 hour before cooking. , To cook, fill a Dutch oven three-fourths full with water. Bring to a boil. Add noodles; cook for 9-12 minutes or until tender. Drain.

3/4 pound medium-size noodles
Salt and freshly ground pepper to taste
1 tablespoon olive oil
1 green pepper, cored and deveined, cut into 1 1/4-inch cubes
1 tablespoon butter
4 tablespoons grated Parmesan

Steps:

  • Cook the noodles in boiling salted water until tender. Do not overcook. Drain and reserve 1/4 cup cooking liquid.
  • Meanwhile, in a small skillet, add the olive oil and the green pepper. Salt and pepper to taste. Cook briefly until tender. Set aside.
  • Return the noodles to the pan; add the reserved liquid, green pepper and the butter. Salt and pepper to taste; add Parmesan. Toss well and serve immediately.

"We'd plan an entire menu from the books, prepare the meal together and serve it to her family. This soup recipe was a favorite."

3/4 pound boneless skinless chicken breasts, cubed
2 medium carrots, sliced
1 small onion, chopped
2 celery ribs, sliced
1 garlic clove, minced
5 cups water
1/4 teaspoon pepper
2 packages (3 ounces each) chicken ramen noodles

Steps:

  • In a large saucepan coated with cooking spray, saute the chicken, carrots, onion, celery and garlic until chicken is no longer pink. Add water, pepper and contents of seasoning packets from the noodles. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until carrots are tender., Break noodles into pieces and add to soup; cover and cook for 3 minutes or until tender.
