4 sourdough bread rounds (such as Brown 'N Serve®)
1 cup butter, divided
¼ cup crushed garlic, divided
1 sweet onion, diced
2 (14 ounce) cans beef broth
2 (14 ounce) cans chicken broth
½ cup red wine
2 tablespoons Worcestershire sauce
½ pound Gruyere cheese, sliced

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Butter a baking sheet.
  • Cut a hole in the top of each bread round, leaving the sides and bottoms untouched, to make the opening of the bread bowl. Pull apart the cut-out section.
  • Place 1/2 cup butter and 2 tablespoons crushed garlic in a microwave-safe bowl. Heat until butter is melted, 2 to 4 minutes. Brush the insides of the bread bowls and the cut-out pieces with butter; place on the prepared baking sheet.
  • Bake in the preheated oven for 3 to 5 minutes. Leave oven on.
  • Melt the remaining butter in a large saucepan over medium heat. Add sweet onion. Cook and stir until onion has softened and turned translucent, about 5 minutes. Reduce heat to low and continue cooking and stirring until onion is very tender and dark brown, about 20 minutes more.
  • Stir the remaining garlic, beef broth, chicken broth, wine, and Worcestershire sauce into the onions. Bring to a boil. Reduce heat to low; cook until flavors intensify, 5 to 10 minutes. Spoon soup into each bread bowl. Cover soup with Gruyere cheese.
  • Bake in the preheated oven until cheese is bubbling and melted along the sides of the bread bowl, about 5 minutes.

1 cup dry white wine

Steps:

  • In large Dutch oven over medium heat, melt butter.
  • Add onions and sugar.
  • Cover and cook, stirring occasionally, 30 minutes or until onions are tender but not colored.
  • Uncover pan, increase heat slightly and continue to cook, stirring regularly until onions are rich caramel colour (10 to 15 minutes) DO NOT LET ONIONS BURN.
  • Stir in flour until well blended.
  • Gradually add wine; cook, stirring constantly, until mixture boils and thickens.
  • Stir in beef broth and pepper; bring to boil.
  • Reduce heat to low.
  • Cover and simmer 15 minutes.
  • Ladle soup into 6, 1-1/2 cup oven proof bowls.
  • Top each with bread slice; sprinkle with swiss cheese and parmesan cheeses and paprika.
  • Place bowls on jelly roll pan.
  • Broil until cheese melts and bubbles.

4 cups heavy cream
1/4 teaspoon kosher salt
2 eggs
2 day-old everything bagels, cut into 1-inch cubes
1/4 cup olive oil
12 large Spanish onions, sliced
1/2 teaspoon kosher salt
2 ounces butter
2 cups sherry
1 bay leaf
10 cups veal or beef stock
Kosher salt
1/2 to 3/4 cup grated gruyere cheese

Steps:

  • For the bread pudding: In a bowl whisk together the heavy cream, salt and eggs. Place the bagels in a 9-by-13-inch baking pan. Pour the cream mixture over the top and set aside to soak for 2 hours.
  • Preheat the oven to 375 degrees F. Cover the baking pan with foil and bake for 30 minutes. Remove the foil from the pan and continue cooking for 15 minutes. Cool the bread pudding completely.
  • Preheat the oven to 450 degrees F. Separate the bagel pieces and place on a baking sheet. Toast until the edges turn golden brown, 5 minutes.
  • For the onions: In a 14-inch skillet or a medium high-sided saute pan, heat the oil over high heat and pour in the sliced onions. Do NOT stir the onions or shake the pan. When the pan gets hot again and the onions begin to sizzle, add the salt and stir. The onions at the bottom of the pan should be brown. Reduce the heat to medium and continue stirring. The onions will begin to soften and release their juices (the natural sugars in the juices will caramelize the onions). Cook for 15 minutes, and then reduce the heat to low. Continue cooking, stirring the onions periodically to make sure they don't stick to the pan, until completely soft and a rich dark brown color, 30 minutes.
  • For the soup: In a large saucepot set over medium heat, melt the butter until it starts to bubble. Add in the caramelized onions, then add the sherry and cook at a low simmer until the alcohol cooks out, 5 minutes. Add the bay leaf and stock, and cook for 30 minutes. Season with salt as the soup cooks. Portion the soup into serving bowls and top with some toasted bagel bread pudding croutons. Garnish each serving with 2 tablespoons gruyere if using, and serve.

1 tablespoon olive oil
2 1/4 lb Spanish onions, finely sliced
1 garlic clove, finely chopped
1 teaspoon soft thyme leaves
1 bay leaf
Salt and freshly ground black pepper
2/3 cup red wine
2 pintes beef stock
1 teaspoon superfine sugar
8 X 1 inch slices of toasted baguette or French stick
1 1/2 cups Gruyère cheese, grated

Steps:

  • Heat 4 tablespoons of butter and the oil in a heavy-based saucepan, add the onions, garlic, thyme and bay leaf, cover with wet baking (parchment) paper and a lid and cook over a very low heat for 1 hour, until the onions have turned golden and are meltingly soft. During the cooking, stir the onions from time to time, to prevent them burning. Season to taste. Add the wine, stock and sugar, then bring to the boil and simmer for 15 minutes. Preheat the oven to 400ºF. If the saucepan is ovenproof (if not, transfer to an earthenware soup tureen), place the bread slices on top, sprinkle with Gruyère and then drizzle the remaining butter, melted, over the cheese. Bake in a hot oven for 15 minutes or until bubbling and golden. To make this in a slow cooker: Heat the butter and oil in a heavy-based saucepan, add the onions, garlic, thyme and bay leaf and cook over a medium heat for 10 to 12 minutes, until the onions have started to soften and colour. Transfer to your slow cooker, cover with wet baking (parchment) paper and a lid and cook on low for 5 to 6 hours. Turn the slow cooker to high and cook, uncovered, for 20 minutes to darken the onions, stirring from time to time. Add the wine, stock, sugar and seasoning, cover and cook for 40 minutes. Then continue with step 4 above.

1 stick (8 tablespoons) butter
1 teaspoon dried thyme
6 large yellow onions, very thinly sliced
2 fresh bay leaves
Kosher salt and freshly ground pepper
1/3 cup dry sherry
Two 10-ounce cans beef consomme
1 large or 2 medium loaves French bread, split horizontally and then halved crosswise to make 4 pieces
2 cups shredded gruyere
12 ounces ripe Camembert, sliced
2 tablespoons white wine vinegar or white balsamic vinegar
1 tablespoon honey or 1 teaspoon superfine sugar
2 teaspoons fresh lemon juice
1 small shallot, grated
1 tablespoon Dijon mustard
1/3 cup EVOO
Kosher salt and freshly ground pepper
6 to 8 cups chopped earthy or crisp greens, such as spinach, escarole and romaine hearts

Steps:

  • For the pizzas: Heat the butter in a large high-sided skillet over medium heat. Add the thyme, onions and bay leaves and season with salt and pepper. Cook low and slow until deep caramel in color and very sweet, 35 to 40 minutes. Deglaze with the sherry, stirring and scraping up any browned bits from the bottom of the skillet with a wooden spoon. Stir in the consomme.
  • Preheat the oven to 400 degrees F.
  • Toast the bread in the oven. Top with the onion mixture and the cheeses. Return to the oven and bake until the cheese is melted and lightly browned.
  • For the salad: Combine the vinegar, honey, lemon juice and shallost in a large bowl and let sit for 5 to 10 minutes. Whisk in the mustard and then the EVOO; season with salt and pepper. Add the greens and toss to coat with the dressing.
  • Serve the pizzas with the salad.
  • Cook's Note: The onion topping can be covered and refrigerated for a make-ahead meal. Reheat with a splash of water to loosen.

1/4 cup butter

2 1/2 cups chopped leeks (white and pale green parts only; about 3 medium)

1 large shallot, chopped
2 tablespoons all purpose flour
1 1/4 cups dry Sherry
7 cups chicken stock or canned low-salt chicken broth
1 1/2 teaspoons minced fresh thyme
1 1/2 teaspoons minced fresh rosemary
1/2 cup whipping cream

Steps:

  • Preheat oven to 350°F. Cut 1/2 inch to 3/4 inch off top of bread loaves. Scoop out bread, leaving 1/2-inch-thick shell. Generously brush inside of bread bowls and lids with melted butter. Place bread bowls and lids, buttered side up, directly on oven rack; bake until crisp, about 20 minutes. Remove from oven; set aside.
  • Melt 1/4 cup butter in heavy large pot over medium-high heat. Add white onions, leeks, red onions, garlic and shallot to pot. Cook until vegetables are dark brown, stirring occasionally, about 25 minutes. Add flour and stir 1 minute. Gradually mix in Sherry. Boil mixture until very thick, scraping up browned bits, about 5 minutes. Gradually mix in stock; add thyme and rosemary and bring to boil. Reduce heat to medium-low and simmer 30 minutes. Add cream; simmer until slightly thickened, about 15 minutes. Season with salt and pepper. Place 1 bread bowl on each plate. Place bread lid alongside. Ladle soup into bread bowls and serve.

3 tbsp very soft butter
6 onions , thinly sliced
4 garlic cloves , crushed
1.2l beef stock (made from 2 stock cubes is fine)
2 tbsp plain flour
2-3 heaped tbsp caramelised onion chutney
1 tbsp parsley , chopped
2 small sandwich baguettes
125g ball light mozzarella , chopped

Steps:

  • Melt 1 tbsp of the butter in a medium saucepan. Add the onions, stir well, then cover and gently cook, stirring occasionally, for about 15 mins - they should be really soft but not browned. Add half the garlic, increase the heat and cook for 5 mins more, adding a splash of stock if the onions start to stick - they should brown a little now.
  • Stir in the flour and chutney, and cook for 1-2 mins, then pour over most of the stock and simmer while you make the garlic bread. Mix the rest of the butter and garlic with half the parsley. Season.
  • Heat oven to 200C/180C fan/gas 6. Cut each baguette into about 6 slices, but don't go all the way through. Add a little of the butter mixture and some mozzarella into each cut, then push back together to seal. Wrap in a double layer of foil. Bake for 10-15 mins, until the butter is melted. Season the soup, adding remaining stock if required. Serve with garlic bread.

6 tablespoons chicken, goose or duck fat, or 4 tablespoons peanut oil and 2 tablespoons unsalted butter
2 pounds onions, peeled and sliced thin (8 cups)
10 to 12 cloves garlic, peeled, crushed and chopped fine (2 tablespoons)
1 teaspoon salt
1 teaspoon freshly ground black pepper
12 cups water
10 ounces French-style bread, preferably left over, cut into 1/4-inch slices
3 egg yolks (optional)

Steps:

  • Heat the fat in a large saucepan until hot but not smoking and add the onions. Saute the onions over medium to low heat for 30 minutes, stirring occasionally to release the dark, caramelized juices from the bottom of the pan.
  • When the onions are dark brown, stir in the garlic, salt and pepper and add the water. Mix well to release all the crusty particles in the bottom of the pan. Bring the mixture to a boil, and boil gently, uncovered, for 10 minutes. You should end up with 11 to 12 cups of broth.
  • Meanwhile, toast the bread slices until brown and crusty, break them into pieces, and divide the pieces among six soup bowls. The recipe can be prepared ahead to this point.
  • If forgoing the egg yolk enrichment, at serving time bring the soup to a boil, pour it over the toast pieces in each bowl and serve immediately.
  • If you are adding the egg yolks, at serving time place the yolks in a mixing bowl and whisk in one ladle of the hot soup. Then add another ladle of soup, whisk it in, and stir the yolk mixture into the remainder of the soup in the saucepan. Mix well and pour the hot soup over the toast in each bowl. Serve immediately.

Everyone knows that the best part of French onion soup is the crusty, cheesy top: these individual savory bread puddings are packed with all that gooey, bready goodness.

1 stick (8 tablespoons) unsalted butter, plus more for greasing
One 24-inch baguette
2 large yellow onions, thinly sliced (about 3 pounds),
1 tablespoon fresh thyme leaves
Kosher salt and freshly ground black pepper
1 cup dry white wine
1 beef bouillon cube, crumbled
1 cup heavy cream
1/4 cup chopped fresh chives
4 large eggs
6 cups grated Gruyere

Steps:

  • Preheat the oven to 350 degrees F. Grease six 8-ounce ramekins with butter and set aside on a rimmed baking sheet.
  • Cut six 1/2-inch thick slices from the baguette and place them on the baking sheet. Cut the remaining baguette into 1/2-inch cubes (you should have about 4 1/2 cups) and spread them out on the same baking sheet. Bake, tossing the cubes and flipping the slices halfway through, until lightly browned, about 15 minutes.
  • Meanwhile, melt the butter in a large skillet over medium-high heat. Add the onions, thyme, 1 teaspoon salt and a generous amount of black pepper and cook, stirring occasionally, until the onions begin to soften, about 6 minutes. Reduce the heat to medium-low and cook, stirring occasionally, until the onions are very soft and caramelized, 35 to 40 minutes. Add the wine, turn the heat to medium-high, bring to a boil and cook until the wine has evaporated, about 5 minutes. Add 2 cups water and the bouillon cube and stir until the cube dissolves. Bring the mixture to a boil and let cook until thickened slightly, about 5 minutes.
  • Whisk together the heavy cream, chives, eggs and 1/2 teaspoon salt in a medium bowl. Add 1/2 cup bread cubes to each ramekin, sprinkle each with 1/4 cup Gruyere and top each with 1/4 cup bread cubes. Pour the egg mixture over the top. Divide the onion mixture among the ramekins. Top each ramekin with a slice of bread and 3/4 cup Gruyere.
  • Set aside at room temperature for 15 minutes to allow the bread to absorb the egg mixture. Bake on the baking sheet until the custard is set and the bread pudding is puffed and golden, about 20 minutes. Let stand 5 minutes before serving.

4 TBLS extra virgin olive oil
5 Cups beef broth
1 Cup red wine
1 TBLS corn starch
1 large onion
1 garlic clove

Optional: 6 TBLS shredded Parmesan cheese
For the dumplings
1/2 loaf stale french bread
2 eggs
1/2 Cup milk
1/4 Cup Italian seasoned bread crumbs
1/2 tsp granulated garlic
2 TBLS chopped fresh parsley
2 TBLS extra virgin olive oil

Steps:

  • For the soup Pat the beef with a paper towel and season with salt and pepper In a heavy bottom pan heat half the olive oil over medium high heat and brown the beef on both sides Add the red wine and corn starch and cook just 2 minutes (or until it bubbles and thickens) Add 4 Cups of the beef broth (reserve 1 Cup) to the beef and wine and carefully transfer to a slow cooker set on low and cover Slice the onions 1/4 inch thick Heat skillet and remaining half of olive oil and saute the onions for about 5 minutes or until soft Grate the ginger and combine with the onions and stir Crush and chop the garlic clove and add to the onions and ginger and cook about 5 minutes longer De-glaze the pan with the remaining cup of beef broth and carefully transfer the onions to the slow cooker Cook on low 4 hours For the dumplings Break the french bread into pieces and add to food processor Pulse for a few seconds until the bread is chopped in to small pieces Pour in to a mixing bowl Add the egg, milk, Italian bread crumbs and granulated garlic and stir until combined Chop parsley fine and add to the dumpling mixture stirring until combined Heat oil in a pan over medium heat Roll mixture in to golf ball size dumplings (makes 12) Pan fry both sides until brown and crispy Serve with soup Optional: garnish with 1 TBLS Shredded Parmesan cheese
